APPLE BARS
Apple Bars are reminiscent of a blondie with their chewy texture, an apple cake with bites of fresh apple throughout, and a snickerdoodle with a topping of sugar and apple pie spice! These bars are a delicious dessert or afternoon snack, but you'll probably want to sneak some for breakfast, too.

- Preheat oven to 350℉. Line a 9×13-inch baking pan with parchment and spray the parchment with nonstick cooking spray.
- Whisk together the flour, baking powder, salt, and 1 teaspoon of apple pie spice; set aside.
- In a large bowl, mix together melted butter and brown sugar until thoroughly incorporated. Add in the eggs and vanilla and stir to combine. Gradually add in the flour mixture and stir until just combined, then fold in the apples.
- Spread the mixture evenly into the prepared pan.
- In a cup or small bowl, stir together the 1 1/2 tablespoons granulated sugar and 1/2 teaspoon of apple pie spice; evenly sprinkle over the top of the bars.
- Bake for 30-35 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.
- Just before serving, top with whipped cream and salted caramel sauce.

APPLE CRUMBLE BARS

- For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
- Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
- Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
- Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
- For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

APPLE PIE BARS

- Preheat the oven to 375 degrees F.
- For the crust, place the butter, granulated sugar, brown sugar and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9-by-13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides (use a metal measuring cup to make the corners). Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees F.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
- To store the bars, cool them completely, wrap tightly and keep at room temperature for up to 2 days.
APPLETINI BARS

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In food processor, place flour, powdered sugar, salt and butter. Cover; process, using quick on-and-off motions, until dough is crumbly. Press in baking dish.
- In medium bowl, toss apple slices with granulated sugar until coated. Arrange apple slices in single layer, not overlapping, on crust. Bake 18 to 20 minutes or until edges of crust are lightly browned. Cool on cooling rack.
- Meanwhile, pour 1 cup of the sour apple drink mix into large heatproof bowl; sprinkle gelatin over drink mix. Let stand 1 minute. Heat remaining 1 cup sour apple drink mix to boiling. Pour over gelatin mixture and stir until gelatin is completely dissolved, about 5 minutes. Add vodka; stir until well blended.
- Pour mixture over apple layer. Refrigerate 2 to 3 hours or until firm. Cut into 8 rows by 3 rows.

- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
- Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.

APPLE PIE BARS
This delivers all the pleasure of apple pie - a buttery crust and topping sandwiching juicy spiced apples - without the need to roll out a dough. A simple dough is pressed into a bottom crust and squeezed into crumbles for the top. You can arrange the topping into a lattice, stripes, or other decorative pattern if you'd like. The whole pan easily serves 24 and can be cut into smaller bars if you want to serve an even-bigger crowd. These bars are best the day they are made, but they can be refrigerated for up to 2 days. Or, they can be frozen immediately after cooling and kept in the freezer for up to 1 month. Just make sure to thaw them before serving.

- Make the crust and topping: Heat oven to 350 degrees. Line a 9-by-13-inch cake pan with foil with overhang on all sides. Lightly grease pan with softened butter.
- Pulse flour, sugar and salt in a food processor with the blade attachment to mix. Add butter and pulse until mixture resembles coarse sand. Put 1 1/2 cups in a medium bowl and mix in walnuts, cinnamon and cardamom. Squeeze with your hands to form a solid mass of dough. It's O.K. if a few bits fall off. Cover and refrigerate.
- Pour remaining mixture into prepared pan and spread in an even layer, then press into bottom of pan and 1/2 inch up the sides.
- Bake until golden brown and dry to the touch, 20 to 25 minutes. Cool on a wire rack. Raise oven temperature to 375 degrees.
- While crust bakes, make the filling: Toss all of the apples with the lemon juice in a large bowl. Melt butter in a large sauté pan set over medium-high heat. Stir in cinnamon, nutmeg and cardamom and sizzle for 15 seconds. Add apples and cook, stirring often, until just starting to soften, about 5 minutes. Add sugar and stir well. Cook, stirring occasionally, until all liquid releases from the apples then evaporates, 10 to 15 minutes. The mixture should be quite dry and the apples tender, but not sticking to the pan. Remove from heat and cool. (Tip: If you want your apples to cool quickly, spread them on a parchment-lined sheet pan and pop in the freezer for 5 to 7 minutes.)
- Spread apple filling evenly over crust and press down gently to get rid of any gaps between the apple slices. Uncover the reserved walnut mixture and break off pebble-sized pieces. Arrange pieces in a lattice or striped pattern over filling or scatter evenly on top.
- Bake until the topping is golden brown, 45 to 50 minutes. Cool completely in pan on a rack. To serve, lift apple pie bars out of pan and onto a large cutting board. Slide bars off foil, then cut into 6 even strips crosswise and 4 even strips lengthwise.

- Mixe one cup flour and 1/3 cup sugar in mixing bowl.

Add the dates, simmer the mixture, uncovered, stirring it and mashing the dates, for 3 to 5 minutes, or until the dates are soft and the mixture is almost smooth, and let the purée cool. In a bowl combine the butter, the brown sugar, the salt, the flour, the pecans, and the cinnamon and blend the mixture well. Press half the flour mixture evenly into a buttered 13- by 9-inch baking pan, spread the purée over it, and crumble the remaining flour mixture over the purée, pressing it lightly to form an even layer. Bake the mixture in the middle of a preheated 375°F oven for 35 to 40 minutes, or until it is golden, let it cool completely in the pan on a rack, and cut it into 36 bars.
