PEAR APPLE CRISP
By using canned fruit, I eliminate time-consuming peeling and slicing. Usually, I slide it in the oven right next to the meat dish. The oven-fresh crisp is ready to eat when we're done with dinner.-Judy Foye, Freeport, Maine

APPLE PEAR CRISP
The fruit is tender and moist, and the crunchy topping is not overly sweet in this dish. While delicious alone, this apple pear crisp is even more delightful when served with vanilla ice cream. -Ron Slivon, Surprise, Arizona

APPLE CRISP
I don't know why anyone would make a pie instead of a crisp. A crisp, most often made with apples but accommodating of almost any fruit, is better textured, better flavored and easier to make. If you choose to use pears instead of apples, be aware that unripe pears are unlikely to become tender in the time it takes the topping to brown. You must begin with pears that have started to soften, or their texture will remain unpleasantly firm.

Steps:
- Heat oven to 375 degrees. Toss fruit with half the cinnamon and 2 tablespoons sugar, and spread it in a lightly buttered 8-inch square or 9-inch round baking pan.
- Combine remaining cinnamon and sugar in container of a food processor with butter, oats and nuts; pulse a few times, just until ingredients are combined. (Do not purée.) To mix ingredients by hand, soften butter slightly, toss together dry ingredients and work butter in with fingertips, a pastry blender or a fork.
- Spread topping over apples, and bake about 40 minutes, until topping is browned and apples are tender. Serve hot, warm or at room temperature.

Steps:
- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.
APPLE, CRANBERRY, AND PEAR CRISP
This is a variation of the traditional Apple Crisp that I dreamed up one day when I didn't have enough apples, and there were pears in the fruit bowl, and leftover toasted walnuts from something else. We love it. Cranberries can be substituted with raisins or dried cherries. Comice pears taste best with this recipe.

OATMEAL APPLE PEAR CRISP
I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.
