ROSY APPLESAUCE
I always end up with lots of rhubarb each summer, but many of the recipes use a lot of sugar. This one lets the fruit sweeten up the rhubarb instead. I refrigerate the sauce overnight to help the flavors blend. -Amy Nelson, Weston, Wisconsin

- In a Dutch oven, combine apples, rhubarb, strawberries, sugar and water; bring to a boil. Reduce heat; simmer, covered, 18-22 minutes or until fruit is tender, stirring occasionally., Remove from heat; stir in vanilla. If a smoother consistency is desired, cool slightly and, in batches, process in a blender. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

APPLE PIE WITH ROSE WATER

Steps:
- Preheat oven to 350 degrees F
- Slice apples into mixing bowl and add sugar, cream, and rose water, and mix thoroughly, so that rose water will be distributed evenly. Line a 9-inch pie dish with favorite pastry. Fill with apple mixture and cover with top crust in which a few small vents have been slashed for steam to escape. Flute the edges well to keep juice from escaping. Bake in a moderate oven for 50 minutes.
- In a bowl, rub the flour and lard together. Add enough water to make a dough (not too stiff).
- On work surface, roll the dough out and spread with some of the butter. Fold over evenly and butter. Make a second fold. Roll out again, being careful not to squeeze the butter out. The layers of dough and butter repeated provide the flakiness of the crust.
- Use a pinch of ginger in piecrust to eliminate the taste of lard in case it is not fresh.
FRESH APPLESAUCE
Just a plain and simple applesauce to serve with latkes.

- Place apples in a large saucepan and just barely cover with water. Simmer over medium-low heat until apples are tender, 15 to 20 minutes.
- Run cooked apples through a food mill or blender. Stir in the sugar and lemon juice. Cook over medium heat for about 3 to 5 minutes.

- Cut unpeeled but cored apples into chunks, place in large sauce pan.
- Add 1/2 inch of water.
- Stir in sugar, vanilla and cinnamon.
- Heat to boiling, reduce to low and simmer, covered, until apples soften (about 30 min.) Press through a fine sieve or the fine disc of a food mill.
- Taste and adjust seasoning.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
ROSEMARY APPLESAUCE
Steps:
- Heat the oven to 400 degrees. In a 9-by-13-inch baking dish, combine the apples, cider and rosemary. Roast uncovered until the apples are soft, 30 to 40 minutes, stirring once or twice. Remove from the oven.
- Add the sugar and mash the mixture roughly with a fork. Add more sugar if desired. Cool.

- Combine first 3 ingredients and large pinch of salt in large pot. Boil until juice is reduced by half, about 8 minutes. Mix in apples. Cover; cook over medium heat until apples are very tender, stirring occasionally, about 35 minutes. Uncover and, if necessary, cook until liquid evaporates. Discard rosemary and cinnamon.
- Transfer apples to food mill fitted with fine or medium plate and pass apples through mill (or press through coarse sieve) into medium bowl; discard skins. Melt butter in small skillet over medium-low heat. Cook until butter browns, stirring occasionally, about 4 minutes. Mix brown butter into applesauce. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature or rewarm before serving.
APPLESAUCE WITH ROSE WATER

- Place the apples along with the remaining ingredients *EXCEPT* for the honey and rosewater into a crock pot or large stock pot.
- CROCK POT: cook on LOW for 3-4 hours or until apples are soft enough to mash.
- STOVE TOP: Bring to a boil, reduce heat and simmer for 30-45 minutes or until apples are soft enough to mash.
- Remove cinnamon stick. Use a potato masher and strainer to mash the apples.
- Stir in 1 teaspoon rosewater. Taste. Add more rosewater if you think it needs it. If applesauce is not sweet enough to your liking, add the optional honey. Serve warm or chilled.
- Freezes well.
