1 2/3 cups cake flour (or 1 1/2 cups all purpose)
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
3/4 cup light brown sugar, packed
1/2 cup butter, melted
3/4 cup applesauce
1/4 cup sour cream
1 teaspoon vanilla
1 large egg
1/4 cup cake flour (or all purpose flour)
1/4 cup brown sugar
1/4 cup granulated sugar
1/4 teaspoon cinnamon
1 dash fresh nutmeg (1/8 tsp)
4 tablespoons cold butter
1/4 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees. Spray a 9 inch round springform pan or an 8 inch square metal pan with flour-added cooking spray.
  • In a medium mixing bowl, thoroughly stir together flour, soda, cinnamon, allspice and brown sugar; set aside.
  • In a large bowl, mix melted butter, applesauce, sour cream, vanilla and egg.
  • Add the dry ingredients to the liquid ingredients and stir until mixed. Pour into pan.
  • Make streusel. In a mixing bowl or food processor, mix together all dry ingredients then cut in butter.
  • Sprinkle over top of cake.
  • Sprinkle nuts over top of streusel.
  • Bake for 40-45 minutes or until golden brown around edges.
  • Cool slightly. Remove sides of pan and cut into triangles.

This is a traditional German dessert given to me by my German friend Nicola. It's some work, but absolutely delicious and worth it! The streusel amounts are approximate as you have to mix it together with your hands until you reach the perfect crumbly texture that make it streusel.

1 1/2 cups all-purpose flour or 1 1/2 cups cake flour
1 cup wheat flour (or you can add another cup of all purpose flour or cake flour)
8 ounces butter or 8 ounces margarine
1 cup sugar
1 tablespoon vanilla powder
1 tablespoon baking powder
3 eggs
1/2-3/4 cup almonds, grated
3 -4 apples, sliced
1 1/2-2 teaspoons cinnamon
1/8 teaspoon clove, ground
1/4 teaspoon nutmeg, ground
1/4 cup butter or 1/4 cup margarine, melted approximate
1 cup flour, approximate
2/3 cup sugar, approximate

Steps:

  • Mix ingredients for the dough in a large mixing bowl until completely mixed.
  • Spread out dough on a lightly oiled 13x9 inch baking dish. Flatten the dough in the pan until it reaches all the corners and equally distributed.
  • Place sliced apples on top in 2 to 3 rows slightly overlapping each other.
  • Sprinkle cinnamon, ground cloves, and ground nutmeg on top.
  • Sprinkle sliced almonds on top.
  • Preheat oven to 350°F or 180°C.
  • Make the streusel: in a separate bowl mix butter, flour, and sugar together with your hands until it forms small crumbles. You may need to add more flour to the mixture until you reach the desired crumbles.
  • Sprinkle streusel (butter, flour, and sugar crumbles) on top.
  • Bake for about 1 hour.

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 or 10-inch bundt pan.
  • Streusel: Combine brown sugar, almonds, flour and cinnamon.
  • Stir in melted butter; set aside.
  • In a separate medium bowl, combine flour, baking powder and baking soda.
  • Mix well.
  • In a large bowl, beat sugar and butter with electric mixer until fluffy.
  • Add eggs one at a time; beat after each addition; add vanilla.
  • Set mixer to low.

2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour

1 cup (2 sticks) plus 3 tablespoons unsalted butter, plus soft butter to coat pan
2 cups plus 1/4 cup superfine sugar
2 1/2 cups homemade Applesauce (recipe follows; store-bought applesauce can be substituted)
2 3/4 cups plus 3 tablespoons all-purpose flour
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch ground cloves
Pinch salt
1 3/4 teaspoons baking powder
1 cup chopped pecans, toasted (about 4 ounces)
1 teaspoon pure vanilla extract
2 tablespoons Calvados, a French apple brandy (regular brandy can be substituted)
1 large apple, peeled and very thinly sliced (1 cup)
1/4 cup light-brown sugar
1/4 teaspoon ground ginger

Steps:

  • Heat the oven to 325 degrees. Brush a 10-inch springform pan with soft butter. Coat the pan with 1/4 cup superfine sugar, lightly tap out excess sugar, and set pan aside.
  • Combine 1 cup butter and remaining 2 cups superfine sugar in bowl of an electric mixer fitted with a paddle attachment. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Carefully fold in the applesauce. Do not overmix.
  • Sift together 2 3/4 cups flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, cloves, salt, and baking powder. Fold the dry ingredients and pecans into the applesauce mixture. Add the vanilla, Calvados, and apple slices, and mix until just combined.
  • Transfer the batter to the prepared springform pan. Combine the remaining 3 tablespoons butter, 3 tablespoons flour, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, brown sugar, and ginger in a small mixing bowl. Mix with fingers until just combined, and sprinkle lightly over the batter. Place cake in oven, and bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour and 50 minutes. Let stand until completely cool.

2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground cardamom
1 cup (2 sticks) unsalted butter, room temperature
2 cups packed light-brown sugar
1/4 cup honey
2 large eggs
2 cups Basic Applesauce, or store-bought chunky applesauce
Nonstick cooking spray
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
  • In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
  • Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
  • Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.

1-1/4 cups crushed gingersnap cookies (about 25 cookies)
3 tablespoons butter, melted
FILLING:
2 packages (8 ounces each) reduced-fat cream cheese
1 package (8 ounces) fat-free cream cheese
1 cup sugar
1/4 cup fat-free milk
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
3 large eggs, lightly beaten, room temperature
2 medium tart apples, peeled and thinly sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 tablespoons butter, melted

Steps:

  • In a small bowl, combine crushed cookies and butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheeses and sugar until smooth. Beat in the milk, flour and vanilla. Add eggs; beat on low speed just until combined. Pour 2 cups filling over crust. In a large bowl, toss the apples, brown sugar and cinnamon until well coated; arrange over filling to within 1 in. of edges. Pour remaining filling over apple mixture. Bake at 325° for 30 minutes., In a small bowl, combine topping ingredients. Sprinkle over cheesecake. Bake 15-20 minutes longer or until center is almost set. Cool on a wire rack for 10 minutes., Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
