1 jar (12 ounces) apricot preserves
2 tablespoons lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon ground ginger

Steps:

  • In a large cast-iron or other heavy skillet, cook and stir sausage until browned. Remove from pan; discard drippings., Add remaining ingredients to skillet; cook and stir over low heat until heated through, 2-3 minutes. Stir in sausage; heat through.

Every once in a while we have a soup and sandwich night at church. Sometimes, appetizers end up on the buffet. I found this in an old TOH and plan to try them out on the church crowd.

1 lb kielbasa or 1 lb Polish sausage, cut into 1/4-inch slices
1 (12 ounce) jar apricot preserves
2 tablespoons lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon ground ginger

Steps:

  • In a large skillet, brown the sausage - drain and set aside.
  • Add the remaining ingredients to the skillet. Cook over low heat for 2-3 minutes or until heated through, stirring occasionally.
  • Return the sausage to the pan and cook for 5-6 minuted or heated through.

1/4 cup apricot preserves
1/4 cup barbecue sauce
1/8 teaspoon crushed red pepper flakes
5 drops hot pepper sauce

Steps:

  • In a large skillet, brown sausage slices on both sides; drain on paper towels. In the same skillet, combine the preserves, barbecue sauce, pepper flakes and hot pepper sauce. , Return sausage to the pan; cook and stir over medium heat for 3-5 minutes or until heated through. Serve with toothpicks.

  • Add the remaining ingredients to the skillet; cook over low heat for 2-3 minutes until heated through, stirring occasionally.
  • Return sausage to pan; cook for 5-6 minutes or until heated through. Serve warm.

My mum bought some of this slice from a local Country Women's Association CWA cake stall. She enjoyed it so much that she asked for the recipe. Posting this recipe for my Mum. I think it would be just as good if made with a gluten-free flour blend, though I haven't tried making it gluten-free yet.

1 cup sugar
120 g margarine (4 oz) or 120 g butter (4 oz)
2 eggs
1 teaspoon vanilla essence
1/2 cup milk
1 cup plain flour
1 cup dried apricot, chopped
3/4 cup desiccated coconut

Steps:

  • Preheat oven to 180°C ( 350 - 360°F ).
  • Soak the apricots in the milk and set aside for 30 minutes.
  • Using electric beaters, cream the margarine with the sugar.
  • To the cream margarine - add the eggs and beat well. Add the flour, vanilla and coconut. Then add the apricot and milk mixture.
  • Spread the mixture into a greased slice tin ( 18 x 7 inches).
  • Bake for 30 minutes
  • Slice can be topped with lemon icing if desired and more cocnut sprinkled over for decoration.
  • Cool slice in the tin and cut when cold.
