Vegan Cranberry Sauce (No Refined Sugar) image

Easy and healthy vegan cranberry sauce! Just 3 ingredients and great for so much more than Thanksgiving. No refined sugar and only 15 minutes of prep/cook time. *See the Notes section below for flavor variations.Yield: makes about 1 ½ cups cranberry sauce; double or triple the recipe if serving more than a few people.

1 large orange
12 ounces fresh or frozen cranberries, rinsed and sorted (discard soft or bruised ones)
⅓ cup maple syrup (see Notes for sweetener options depending on end use.)

Steps:

  • Slice a 2-inch piece of peel from the orange. Place in a small sauce pan along with the juice from the orange. Turn the stove eye to medium-high heat. Add the cranberries and maple syrup, and bring to a low boil.
  • Reduce heat to a simmer. Stirring occasionally, cook until cranberries burst and the liquid thickens, about 10 to 12 minutes (takes a little longer if using frozen cranberries).
  • Let the cranberry sauce cool, remove the orange peel, and refrigerate until chilled, 4 hours to overnight.

1/2 cup sugar
1/2 cup nuts
2 eggs
1 1/2 cups sugar
1 cup flour
3/4 cup melted margarine (11/2 sticks)
1 teaspoon almond extract

Steps:

  • Pour cranberries in a 10" type pie plate(deep dish).
  • Pour sugar(1/2c)over the cranberries, then the nuts.
  • Mix remaining ingredients
  • Pour over mixture in pan.
  • Bake at 350 until top is lightly brown (30-40 min).

3 (8 ounce) packages cream cheese, softened
2 (12 ounce) containers whipped topping
4 (16 ounce) cans jellied cranberry sauce
⅓ cup milk chocolate chips
1 (14.4 ounce) package graham crackers
1 (8 ounce) container whipped topping

Steps:

  • Combine cream cheese and 2 tubs whipped topping in a large bowl; mix thoroughly; set aside. Cut the cranberry sauce into 1/4-inch-thick slices; set aside.
  • Melt the chocolate chips in a large metal bowl placed atop a saucepan of water over medium heat.
  • Line the bottom of a 9x13 baking dish with graham crackers. Spread a 1-inch thick layer of the cream cheese mixture over the graham crackers. Top the cream cheese with cranberry sauce slices. Repeat layering until ingredients are used. Top entire dish with 1 tub whipped topping. Drizzle melted chocolate over the whipped topping. Chill in refrigerator at least 1 hour before serving.
