PAULA DEEN'S MEXICAN PIZZA
I haven't tried this yet, but it sounds so good I had to post it right away. These are individual pizzas you can assemble yourself on a prepared crust, or on an already prepared frozen cheese pizza. I can't decide which way I'll go first. I suspect you could make two large pizzas, also. (Edited to add: In fact, in her cookbook, Paula does indeed make this as 2 large pizzas for a party for teenagers.) See the note for possible variations. Recipe halves easily.

- Position the oven rack at the lowest level. If you have a pizza stone, place it in the oven on the rack. Preheat the oven to 425 degrees.
- Heat the oil in a small saucepan and cook the green pepper and mushrooms over medium heat until crisp-tender, about 2 minutes. Cut the crusts into biscuit sized pieces using a biscuit cutter. Distribute the vegetables evenly over the crusts. Reserve 1 cup of the salsa and spoon the remaining salsa evenly over the pizzas. If you don't have a pizza stone, place the pizzas on a baking sheet. They won't be as crisp this way, but this is a lot less messy than placing them directly on the rack.
- Bake the pizzas for 10 to 12 minutes in the preheated oven, then sprinkle with the cheese. Bake 7 minutes more. Serve the pizza slices topped with the reserved salsa, olives, cooked ham, shredded lettuce and sour cream.
- Note: For variety, you can make a Greek style pizza, using olives, tapenade, spinach and feta cheese. An Italian style pizza uses tomato sauce and provolone cheese. A vegetarian style pizza simply omits the meat.

APRIL FOOLS' DAY MEXICAN PIZZA RECIPE BY TASTY
Perfectly seasoned ground beef and cheese between two crispy flour tortillas, with a fresh pico de gallo salsa, is what this dish appears to be...until you take a closer look. Chopped walnuts and chocolate stand in for the beef, colored shredded coconut takes the place of cheese, and strawberries, apples, and kiwi make up the salsa. Strawberry jam "pizza sauce", blueberry "olives", and whipped cream "sour cream" round out the pie. Your guests will be fooled, but they won't be mad!

Steps:
- Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper and top with wire racks.
- Make the cinnamon sugar tortillas: Brush both sides of each tortilla with the melted butter and sprinkle both sides liberally with the cinnamon and sugar. Arrange 2 tortillas on each of the prepared baking sheets.
- Bake the tortillas, flipping halfway, until slightly crisp, 10-15 minutes.
- Make the ground "beef": Add the walnuts, sugar, and cinnamon to a food processor. Pulse several times until the walnuts are broken down to the consistency of ground beef. Transfer to a large bowl, add the melted chocolate, and fold with a rubber spatula until the walnut mixture is fully coated in the chocolate. Set aside until ready to assemble the pizza.
- Make the shredded "cheese": In a medium bowl, mix the shredded coconut with the yellow and orange food colorings until the coconut is evenly colored. Set aside until ready to use.
- Make the fruit "salsa": Add the kiwi, strawberries, apple, and mint to a medium bowl and stir to combine. Set aside until ready to use.
- Make the blueberry "olives": Carefully slice each blueberry in half. Punch out the center of each half with a small round pastry tip to resemble a sliced olive. Set aside until ready to use.
- To assemble, place a cinnamon sugar tortilla on a work surface. Top with half of the ground "beef" mixture and spread evenly to cover the tortilla. Sprinkle with a generous handful of shredded "cheese". Top with another tortilla and spread ½ cup of strawberry jam all over the tortilla. Top with another generous sprinkle of shredded "cheese", a large spoonful of fruit "salsa", a dollop of whipped cream, a sprinkling of chopped fresh mint, and blueberry "olives". Repeat with the remaining ingredients.
