COLD FIGHTING CHICKEN NOODLE SOUP



Cold Fighting Chicken Noodle Soup image

The most soothing, comforting, cozy soup for the flu season! Quick/easy to make, you'll be feeling better in no time!

1 tablespoon olive oil
1 onion, diced
3 carrots, peeled and diced
2 celery ribs, diced
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon minced lemongrass
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh rosemary
5 cups chicken stock
2 bay leaves
1 pound boneless, skinless chicken thighs
3/4 cup uncooked ditalini pasta
Juice of 1 lemon
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh chives

Steps:

  • Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in garlic, ginger, lemongrass, thyme and rosemary until fragrant, about 1-2 minutes. Whisk in chicken stock, bay leaves and 1 cup water; bring to a boil. Add chicken; reduce heat and simmer. Cook, covered, until the chicken is cooked through, about 10-12 minutes. Remove chicken and shred, using two forks; set aside. Stir in pasta and cook until tender, about 8-10 minutes. Stir in chicken and lemon juice; season with salt and pepper, to taste. Serve immediately, garnished with chives, if desired.

Ardolino-Style Chicken Soup image

This recipe is a combination of my mother's homemade chicken soup and a chicken pot pie recipe. I prefer using chicken thighs instead of a whole chicken or chicken breasts because it creates a more flavorful broth. If you don't have fresh herbs, just use dried ones - I do all of the time - just remember to adjust your amounts (1 tbsp. fresh = 1/4 tbsp dried). Enjoy!

1 1/2 lbs chicken thighs, on the bone with skin
1 medium yellow onion, halfed and peeled in layers
3 -5 carrots, peeled and largely chopped
1 -2 celery rib, largely chopped
1 tablespoon fresh parsley, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 large bay leaf
1 sprig fresh thyme
1/4 teaspoon black pepper
1/2 cup Italian-style tomato sauce

Steps:

  • Place the chicken thighs on the bottom of a large stock pot, then add all other ingredients.
  • Add enough of cold water to cover chicken and all ingredients (about 3-4 quarts). The amount of water will vary depending on the number of pounds of chicken thighs used.
  • Bring to a boil over HIGH heat.
  • Once it begins to boil, reduce the heat to maintain a gentle simmer until the chicken is tender and thoroughly cooked, about 30-40 minutes.
  • Drain the broth through a colander into a large bowl. Pull out the celery and the carrots and add to the broth, if desired.
  • Let the broth cool, then skim the excess fat off of the top.
  • Remove the skin from the chicken and discard. Cut the chicken into bit-size pieces and add to the broth, if desired. (Save whatever chicken you do not add to the broth - it makes great chicken salad!).
  • Reheat the broth. Add your cooked pasta or noodle of choice just before serving.

  • Wash the chicken, remove and wash the giblets and neck, if included, and place everything in a large pot (I used an 8qt pot). Fill about 3/4 full of water, add two teaspoons of salt, place over medium high heat, and bring to a boil.
  • When scum starts to appear, remove it with a spoon, and discard. Lower the temperature, so that the soup is simmering gently.
  • Let the soup simmer for an hour to an hour and a half, then remove from heat. Using a flat metal strainer, lift the chicken out of the pot and place on a plate. Remove the giblets and neck, if they are also in the soup. Strain the broth into another pot, taste for salt, adding more to taste (I can guarantee that it will need more salt at this point) then place half of the broth into a container to freeze for another time. Use the chicken to make chicken pot pie (recipe coming soon), chicken salad, or any way you like. You may also add some pieces of chicken to the soup.
  • About 10 minutes before you want to serve the soup, cook the pastina in a separate pot until al dente (you can cook the pasta directly in the broth, but it will make the soup cloudy; if you don’t mind it not being clear, and you don’t want to wash another pot, just cook the pastina right in the broth.)
