ARIZONA CASSEROLE
A very easy and fast dish to make. This was passed to me from my parents, and was kind of our "family" dish when I was young.

Steps:
- Brown ground beef In a bowl mix together all the soup and the browned ground beef.
- Spread the mixture evenly in a casserole dish Grate cheese over the mixture evenly.
- Line the entire casserole dish with tator tots.
- Grate cheese over the tator tots.
- Bake at 375 until the tator tots are completely cooked.
ARIZONA SKILLET DINNER

Steps:
- In a dutch oven, cook the macaroni per the pkg; drain and set aside.
- In a large skillet, heat the oil on med-high; add the onion, green pepper, garlic, chili powder and cumin.
- Saute 5 min or until tender; then add the kidney beans, corn and tomatoes (with liquid).
- Bring this mixture to a boil, then immediately reduce heat to low and simmer, stirring often, for 15 minutes.
- Then add this mixture to the cooked and drained macaroni and toss well, to combine.
- Either serve directly from the dutch oven or from a nice serving bowl with the monterey jack cheese sprinkled over it.

AMISH COUNTRY CASSEROLE
Super cozy and creamy, a few staple ingredients combine to create a veggie-filled casserole easy enough for a busy weeknight.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.
- Meanwhile, fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain noodles and return to the pot.
- Add diced tomatoes, condensed soup, cottage cheese, sour cream, and Worcestershire sauce to the egg noodles; stir to blend. Stir in ground beef mixture until evenly combined. Taste and adjust seasonings. Sprinkle Cheddar cheese over the top.
- Bake uncovered in the preheated oven until heated through and cheese is melted and golden, 25 to 30 minutes. Serve immediately.

A high-protein, delicious one-meal dish. Made ahead of time, this casserole freezes well and is a good dish on-the-run. Omit ground meat for a vegetarian meal.

Steps:
- Ahead of time:.
- Prepare dried beans in a slow cooker.
- Cook on high until tender, (Approx. 3 hours).
- Prepare grains in rice cooker following directions for 2 cups of grain.
- (Approx 70 mins).
- When beans and grains are cooked:.
- In a very large skillet or sautee pan, heat half of the olive oil and brown the meat.
- Remove the meat to drain.
- Add the remaining oil and then cooking over medium heat, add chopped onions, peppers and garlic.
- Cook these until crisp-tender.
- Stir in corn and red chile paste (as desired).
- Add the cooked beans (including all the juice) and the cooked grains.
- Add the drained meat.
- Salt to taste and stir well.
- Simmer the mixture to slightly reduce the liquid and meld the flavors.
