1 3/4 cups all-purpose flour
1 teaspoon salt
1/3 cup butter
1/3 cup ice water
6 -8 apples
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Sift flour and salt into a mixing bowl.
  • Add butter and mix.
  • Sprinkle ice water on top of mixture and mix until you can make a ball of dough.
  • Cut the ball in half.
  • Take one half and roll it out on a piece of wax paper to form a circle 1/8 inch thick. Smooth it into a 9 inch pie pan and trim the edges.
  • Slice apples, removing seeds and centers.
  • Put the slices into the pie pan.
  • Mix brown sugar, salt, cinnamon and nutmeg. Sprinkle mixture of the apples.
  • Roll out the other half of the dough as before.
  • Smooth it over the apples.
  • Pinch down the edges and trim off the extra dough.
  • Poke a few tiny holes in the top of the dough.
  • Bake for 50 minutes at 425 degrees F.

2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
  • Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

  • Using a food processor or a pastry cutter, cut cold butter and shortening into flour, brown sugar and salt until mixture resembles a coarse meal. Small pieces of butter should still be visible.
  • Pour vanilla and vinegar into cold water then pour over the mixture and work in by tossing with a fork until dough begins to form. Use your hands as little as possible and work the dough as little as possible.
  • Divide dough into 2 balls, flatten into 2 rounds, wrap in plastic wrap and place in the refrigerator to rest for a minimum of 20 minutes.You can make your dough the previous day but make sure you take it out of the fridge for 10 minutes to warm slightly before rolling out.
  • Melt butter in a large non-stick pan over medium heat. Saute the apples for about 5 minutes until the are fully warmed throughout but not falling apart. Set aside to cool for a few minutes.
