1/2 cup extra-virgin olive oil
Two 1-pound tubes prepared polenta
2 tablespoons garlic-herb seasoning
Kosher salt
1 yellow onion, diced
3 cloves garlic, finely chopped
1 pound ground turkey
One 28-ounce can crushed tomatoes
2 tablespoons drained and rinsed capers
1 teaspoon sugar
1 1/2 cups ricotta
1/2 cup fresh basil, thinly sliced into ribbons
1 lemon, zested

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and generously brush with 1 tablespoon of the oil.
  • Remove the packaging from the polenta and cut each tube in half crosswise. Cut each half lengthwise into 8 wedges. Spread the wedges on the prepared baking sheet, brush with 2 tablespoons of the oil and generously sprinkle with 1 tablespoon of the garlic-herb seasoning and a pinch of salt. Bake the wedges, turning once, until golden brown and crispy along the edges, 45 to 50 minutes.
  • Meanwhile, place a large skillet over medium heat and add 2 tablespoons of the oil. Add the onion and cook, stirring frequently, until softened, about 8 minutes. Add the garlic and cook for 1 minute more. Add the ground turkey to the pan and cook, breaking it up with a spoon and stirring occasionally, until evenly browned, about 10 minutes. Stir in the tomatoes, capers, sugar, 1/2 cup water and the remaining 1 tablespoon garlic-herb seasoning. Bring to a simmer and reduce the heat to low. Cook the sauce until thickened, about 12 minutes more.
  • Divide the hot polenta fries among 6 plates. Spoon the hot tomato sauce over the fries. Dollop some ricotta over the sauce. Top with ribbons of fresh basil and sprinkle with lemon zest. Drizzle with the remaining 3 tablespoons oil and serve immediately.

1 pinch hot paprika

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking pan with parchment paper.
  • Spread carrots on the prepared baking sheet; toss with enough olive oil to coat. Drizzle with maple syrup and sprinkle with salt, cayenne, curry powder, and paprika. Toss everything together and spread out evenly.
  • Roast in the preheated oven, tossing a few times while they bake, until tender, about 20 minutes. Serve hot.

Steps:

  • Preheat oven to 425°F (220°C).
  • Cut carrots into fries and combine in a large bowl with olive oil, parsley, paprika, salt, and pepper.
  • Place on baking sheet lined with parchment paper in a single layer. Bake for 20-25 minutes, flipping halfway.

I came up with this to satisfy my need for spicy snack foods and side dishes! My daughter really likes this and she usually doesn't go for spicy stuff! This is going to be a regular at my house!

3 medium potatoes
1 tablespoon peanut oil
1 tablespoon fresh lime juice
1 tablespoon fish sauce
1 tablespoon peanut butter
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons minced garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon coriander powder
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
vegetable oil

Steps:

  • Cut washed, unpeeled potatoes into french-fry shaped pieces.
  • Mix together peanut oil, lime juice, fish sauce, peanut butter, salt, pepper, garlic, cayenne, coriander powder, cumin, and onion powder in a large ziplock bag or mixing bowl.
  • Add cut potatoes and mix around, making sure potatoes are evenly coated.
  • Allow to marinate in this mixture for 1 hour.
  • Preheat oven to 400 degrees F.
  • Line baking sheet with aluminum foil (this makes for easy clean-up later!); pour small amount of vegetable oil on foil and wipe around with paper towel.
  • Spread potatoes in single layer on foil, without potatoes touching, if you can.
  • Bake for 40-45 minutes, turning potatoes once or twice during cooking.
