2 jars artichokes (reserve liquid)
1/4 cup chopped onion (I like yellow)
4 eggs
3 -4 cloves garlic, chopped
1/8 teaspoon oregano
1 teaspoon Tabasco sauce (or more if you like)
1/4 cup dried breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces cheddar cheese, shredded

Steps:

  • Pre-heat oven to 325-350 f.
  • grease pan (I use a 9x9 brownie pan).
  • chop artichokes.
  • saute onion in artichoke liquid until soft,drain, set aside.
  • beat eggs.
  • add spices,artichokes,cheese and onion.
  • bake 30 minutes.
  • cool and cut into squares.

1 small onion, chopped
1 clove garlic, minced
1 teaspoon vegetable oil
2 (6 1/2 ounce) jars marinated artichoke hearts, drained and chopped
4 eggs
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dried oregano
1/8 teaspoon hot pepper sauce
2 cups shredded cheddar cheese (8 ounces)
1/3 cup crushed saltine (about 10 crackers)

Steps:

  • In a small skillet, saute onion and garlic in oil until tender.
  • Stir in artichokes.
  • Remove from heat; set aside.
  • In a large bowl, whisk the eggs, parsley, salt, pepper, oregano and hot pepper sauce.
  • Stir in cheese, cracker crumbs and artichoke mixture.
  • Pour into a greased 11x7x2-inch baking dish.
  • Bake, uncovered, at 325 degrees for 25-30 minutes or unil a knife inserted near the center comes out clean.
  • Cool for 10-15 minutes before cutting into 1-inch squares.
  • Serve warm.

2 tablespoons olive oil
1 medium onion, finely chopped
2 garlic cloves, finely chopped
12 ounces artichoke hearts, drained and chopped
4 eggs, beaten
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup breadcrumbs
1/4 teaspoon Tabasco sauce
1/2 lb sharp cheddar cheese, shredded
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh oregano, finely chopped

Steps:

  • Preheat oven to 325°. Grease a 9" square pan.
  • Heat olive oil in skillet, add onion and garlic and cook until soft, about 5 minutes.
  • In medium bowl combine onions and garlic with remaining ingredients; mix well.
  • Bake 30-35 minutes or until set in center. Cut into 36 squares. Can be frozen and reheated just before serving.

1 small onion, chopped

2 jar(s) marinated artichoke hearts, chopped
4 eggs
2 Tbsp fresh parsley, minced
1/4 tsp salt
1/8 tsp pepper
1/8 tsp dried oregano
1/8 tsp hot pepper sauce
2 c cheddar cheese, shredded
1/3 c crushed saltine crackers

Steps:

  • 1. In a small skillet, sauté onion and garlic in oil until tender. Stir in artichokes. Remove from the heat; set aside.
  • 2. In a large bowl, whisk the eggs, parsley, salt, pepper, oregano, and hot pepper sauce. Stir in the cheese, cracker crumbs, and artichoke mixture.
  • 3. Pour into a greased 11- x 7- x 2-inch baking dish. Bake, uncovered at 325º for 25-30 minutes or until a knife inserted near the center comes out clean.
  • 4. Cool for 10-15 minutes before cutting into 1-inch squares. Serve warm.

2 6oz. jar(s) marinated artichoke hearts
1 small onion diced
4 eggs beaten
1/4 cup fine breadcrumbs
1/4 tsp salt
1/4 tsp pepper
1/8 tsp oregano, dried
2 c shredded sharp cheddar
2 Tbsp parsley flakes
1 tsp garlic powder

Steps:

  • 1. Preheat oven to 325 degrees. Drain one jar of marinade artichoke hearts into medium skillet, add chopped onion and saute for 5 minutes. Discard second jar of marinade. Chop artichoke hearts into small pieces.
  • 2. In a separate bowl combine eggs, breadcrumbs,salt,pepper. Fold in cheese and parsley. Add artichokes and sauteed onions mixture, and blend well.
  • 3. Pour into 9 inch greased glass baking dish. Bake 30 minutes. Allow to cool briefly before cutting into squares. (Can be served cold).

Steps:

  • Drain second jar and discard marinade (or reserve for use in salads).
  • Chop artichokes and set aside.

  • Fold in cheese and parsley.
  • Add artichokes and sauteed onion mixture, blending well.
