APPLE PECAN ARUGULA SALAD

A healthy, hearty fall salad with peppery arugula, crisp apples, and toasted pecans. Dressed in a simple, vibrant lemon vinaigrette, it makes the perfect light-yet-satisfying plant-based meal or side.

1/2 cup raw pecans
7 ounces arugula ((organic when possible))
2 small apples ((1 tart, 1 sweet // peeled, quartered, cored and thinly sliced lengthwise))
1/4 red onion ((thinly sliced))
2 Tbsp dried cranberries ((optional))
1 large lemon, juiced ((1 lemon yields ~3 Tbsp or 45 ml))
1 Tbsp maple syrup
1 pinch each sea salt + black pepper
3 Tbsp olive oil

Steps:

  • Preheat oven to 350 degrees F (176 C) and arrange pecans on a bare baking sheet.
  • Bake pecans for 8-10 minutes or until fragrant and deep golden brown. Remove from oven and set aside.
  • While pecans are toasting, prep remaining salad ingredients and add to a large mixing bowl.
  • Prepare dressing in a mixing bowl or mason jar by adding all ingredients and whisking or shaking vigorously to combine. Taste and adjust flavor as needed.
  • Add pecans to salad and top with dressing. Toss to combine and serve immediately. Serves two as an entrée and 4 as a side (as original recipe is written // adjust if altering default number of servings).
  • Store leftovers (dressing separate from salad) covered in the refrigerator for 2-3 days (though best when fresh). Dressing should keep at room temperature for 2-3 days when well sealed.

One 5 ounce bag of Baby Arugula
1 Honeycrisp Apple (Fuji or Pink Lady would be a good substitute), thinly sliced
1/4 cup Chives, thinly sliced
Handful of Cherry or Grape Tomatoes, halved
1/4 cup Apple Cider Vinaigrette
3/4 cup Apple Cider
1/3 cup Apple Cider Vinegar
1 tablespoon Dijon Mustard
1/2 teaspoon Kosher Salt
1 cup Extra Virgin Olive Oil

Steps:

  • Bring the apple cider to a boil in a small pot on medium heat. Once boiling, reduce the heat to low and let the cider simmer until the liquid reduces by half. It won't take too long. Allow to apple cider cool.
  • Place the reduced cider, apple cider vinegar, Dijon mustard, and Kosher salt in a small mixing bowl and whisk vigorously. While continuing to whisk, slowly drizzle in the olive oil.
  • When ready to serve: Dress your salad before plating. Combine the arugula, apple, chives, and tomatoes in a large mixing bowl. Drizzle in the vinaigrette, gently tossing the salad to thoroughly incorporate the dressing.
  • *I always start with a smaller amount of the dressing, incorporate it, and then taste, adding in more if necessary. You can always add more vinaigrette, but can't undo an overdressed salad.

1 extra-large egg yolk, at room temperature
3 tablespoons fresh lemon juice
Pinch of salt
1/2 cup corn oil
1 tablespoon honey
2 to 3 tablespoons Calvados
2 Red Delicious apples
2 stalks celery
1/2 cup walnuts, coarsely chopped
1 large bunch arugula
1/2 cup crumbled Stilton or Gorgonzola cheese

Steps:

  • Combine the egg yolk, lemon juice and salt in a blender jar. Process on low speed just until blended. With the motor running on low speed, drizzle in the oil in a slow, steady stream. Fold in the honey and Calvados to taste.
  • Peel and core the apples, then cut them into small dice. Trim the ends off the celery and cut the stalks into small dice as well. Place both in a bowl with the walnuts. Spoon enough dressing over the mixture to coat all the components.
  • Trim the tough ends off the arugula. Wash the leaves well and dry in a salad spinner. Arrange them in a shallow salad bowl. Spoon the apple mixture into the center. Sprinkle the cheese around the edge.
  • Serve with the remaining dressing on the side.
