3 cups cooked chicken ((leftover shredded chicken, rotisserie chicken or 2 cans Costco canned chicken))
1/4 cup red onion
2 pieces of celery (including leafy tops) (chopped, about one cup)
2 tbsp lemon juice
2 tbsp sour cream
3/4 cup mayonnaise
1/2 tsp salt
pepper to taste

Steps:

  • Finely chop red onion and celery.
  • In a medium bowl, break up, finely chop or shred the chicken.
  • Add chopped onion and celery, lemon juice, sour cream, mayonnaise, salt and pepper and stir to combine.
  • Chill until ready to use. Enjoy!

I am not a chicken fan salad lover. But I just love this chicken salad. It is the only chicken salad I will eat ( mine.) I make it least twice a week. I hope you love it just as much as me.

1 fresh boneless skinless chicken breast
1/4 teaspoon garlic salt
2 pinches black pepper
1 1/2 tablespoons real mayo mayonnaise
1 teaspoon minced celery

Steps:

  • Boil chicken in water until chicken is throughly cooked through. This usually takes about 30 minutes.
  • Remove from pot and let cool in container or bowl.
  • Chicken cools pretty quickly, usually about 10 minutes. When you can handle it, start shedding it, or take 2 sharp knives and cut them up. It will cool off the chicken quicker if it is cut up.
  • After it cools completely, add garlic salt, and pepper.
  • Add real mayo and celery.
  • Serve between 2 slices of your favorite bread.
  • The garlic salt is the secret ingredient to this chicken salad.

1 cup mayonnaise (I use low fat)
1/2 teaspoon salt
3/4 teaspoon poultry seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 tablespoon lemon juice
3 cups chicken breasts, cook and diced
1/2 cup celery, finely chopped
1/2 cup chopped green onion
1 (8 ounce) can water chestnuts (drained and chopped)
1 1/2 cups swiss cheese, diced

Steps:

  • In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion powder, garlic powder, pepper, and lemon juice.
  • In a large bowl, toss together the chicken, celery, green onions, water chestnuts, and swiss cheese. Add the mayonnaise mixture, and stir to coat. Chill until serving.

Try this easy chicken salad recipe that's great as a hearty lunch or quick weeknight dinner. Serve it with a side of kettle chips or a crunchy pickle!

1 whole cut up fryer chicken
2 stalks (to 3 stalks) celery, chopped
3 whole green onions, chopped
2 c. (to 3 cups) grapes, halved
1/2 c. mayonnaise
1/2 c. plain yogurt or sour cream
Juice of 1 lemon
1 tbsp. (to 2 tablespoons) brown sugar
Kosher salt to taste
Fresh ground black pepper to taste
Small handful of fresh dill, minced
Cayenne pepper, to taste
1/2 c. slivered almonds

Steps:

  • Rinse chicken thoroughly and place in a large pot of water. Turn on the heat and bring to a boil.
  • Reduce heat and simmer until chicken is done (about 45 minutes to an hour). When you are ready, remove the chicken from the pot and place on a plate. With your fingers or a fork, pull all of the meat off the bones, chop into bite-sized chunks and set aside.
  • Chop all of your fruits and veggies and place them in a bowl with the chicken.
  • In another bowl mix mayonnaise, yogurt (or sour cream), lemon juice, brown sugar and salt and pepper to taste.
  • Add the dill (or oregano or cilantro...whatever makes your skirt fly up) and if you're feeling a bit brazen throw in a dash of cayenne pepper!
  • When the dressing tastes just right (you must taste test for appropriate saltiness especially), pour it over the chicken/veggie/fruit mixture and stir gently until everything is thoroughly mixed. Stir in the almonds. If you are feeling naughty, add a sprinkling of bacon bits.
  • Allow the salad to chill for several hours (or even overnight). Serve on a bed of lettuce or in a sandwich or heck, eat it straight out of the bowl with a serving spoon. Try it soon-you'll love it!

2 lb boneless skinless chicken breasts
1/2 cup sliced almonds
1 cup mayonnaise
1 tablespoon dijon mustard
1 cup red grapes (quartered)
2 stalk celery (diced)
3 green onions (green and white parts) (sliced)
2 tablespoon chopped parsley
1 tablespoon chopped tarragon
1 lemon (juiced)
salt and pepper (to taste)

Steps:

  • Place the chicken breasts in a wide pot or pan and cover by about an inch with cold water. Season the water with salt. Optionally, you can add aromatics of your choice. Read my poached chicken recipe for more details.
  • Turn the heat to medium until it reaches a gentle simmer. Then reduce the heat back to low and cover the pan. Let the chicken simmer for 8-12 minutes, or until the internal temperature reaches 160-165 degrees Fahrenheit. Remove the chicken and let it rest for a couple of minutes. Then chill in the fridge.
  • Transfer the cooled chicken to a cutting board and dice it into 1/2-inch pieces.
  • Slice and dice the celery, green onion, grapes, parsley and tarragon. Add those ingredients to a mixing bowl along with the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper.
  • Mix everything together until it's well combined. Let it chill in the fridge until you're ready to serve.

2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice

10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved

Steps:

  • Toss together the chicken, celery, scallions, dill and parsley in a large bowl.
  • In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
  • Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover.
