Beef Stir Fry with Noodles image

This Beef Stir Fry with Noodles can be made in just 20 minutes! Tender beef, fresh veggies, and noodles tossed together in a delicious savory sauce.

2/3 cup reduced-sodium soy sauce
2/3 cup beef broth
2 tablespoons brown sugar
4 cloves garlic (minced)
2 teaspoons minced ginger
1 teaspoon cornstarch
16 ounces boneless beef sirloin steak (sliced thin)
16 ounces linguini noodles
4 teaspoons canola oil (divided)
1 red bell pepper (sliced thin)
1 onion (sliced thin)
2 carrots (sliced into match-sticks)
2 cups broccoli florets
2 cups cabbage (shredded)
sesame seeds (to taste (optional))
red pepper flakes (to taste (optional))

Steps:

  • Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
  • Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.
  • Prepare linguini noodles according to package directions. While noodles are cooking, heat 2 teaspoons oil in a large skillet over medium-high heat and add steak slices, discarding excess marinade. Stir-fry until just browned, remove steak from skillet and set aside.
  • Add remaining oil to the same skillet and stir-fry peppers, onion, carrots, and broccoli until onions become clear and soft. Add cabbage and beef to the skillet and cook until cabbage becomes soft.
  • When noodles are done cooking, drain and toss with beef/vegetable mixture, adding the reserved sauce mixture. Toss until noodles are coated in sauce. Top with sesame seeds and/or red pepper flakes (optional) and serve immediately.

2 packages (3 ounces each) Oriental ramen noodles, crumbled
2-1/2 cups water
2 cups frozen broccoli stir-fry vegetable blend
1/4 teaspoon ground ginger
2 tablespoons thinly sliced green onion

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add the contents of 1 ramen noodle flavoring packet; stir until dissolved. Remove beef and set aside. , In the same skillet, combine the water, vegetables, ginger, noodles and contents of remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan and heat through. Stir in onion.

1 package (about 6 ounces) rice stick noodles
1 tablespoon vegetable oil
1 tablespoon finely chopped gingerroot
1 clove garlic, finely chopped
1 package (16 ounces) frozen broccoli, carrots, water chestnuts and red peppers, thawed
1 tablespoon vegetable oil
3/4 cup Progresso™ beef flavored broth (from 32-ounce carton)
1/3 cup rice or cider vinegar
1/3 cup honey
3 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon crushed red pepper
1/4 cup sliced green onions (3 medium)

Steps:

  • Cut beef into 2x1/4-inch strips. Toss beef, 1 tablespoon vegetable oil, the cornstarch and 1/2 teaspoon soy sauce in glass or plastic bowl. Cover and refrigerate 20 minutes. Soak noodles in cold water 5 minutes; drain.
  • Heat wok or 12-inch skillet over medium-high heat until hot. Add 1 tablespoon vegetable oil; rotate skillet to coat side. Add gingerroot and garlic; stir-fry 30 seconds. Add vegetables; stir-fry until crisp-tender. Remove vegetables from wok.
  • Add 1 tablespoon vegetable oil to wok; rotate to coat side. Add beef; stir-fry until brown. Remove beef from wok.
  • Add broth, vinegar, honey, 3 tablespoons soy sauce and the red pepper to wok. Stir in noodles; heat to boiling. Cook over medium heat about 2 minutes, stirring frequently, until noodles are tender. Stir in beef, vegetables and onions; cook and stir 1 minute.

1 jalapeno pepper, seeded and finely chopped
1 tablespoon canola oil

1 medium carrot, shredded

1/4 cup salted peanuts

Steps:

  • Set aside seasoning packet from noodles. Prepare noodles according to package directions; drain and set aside. , Cut steak into thin strips. In a large skillet, stir-fry the beef and jalapeno in oil for 1-2 minutes or until meat is no longer pink. 4 cups assorted fresh vegetables, such as sugar snap peas, broccoli florets, bell pepper and carrot strips
1 clove garlic, minced
½ cup prepared stir-fry sauce
⅛ teaspoon crushed red pepper, or to taste
2 cups hot cooked rice
2 tablespoons unsalted dry-roasted peanuts

Steps:

  • Cut beef steak lengthwise in half, then crosswise into 1/4-inch thick strips.
  • Combine vegetables and 3 tablespoons water in large nonstick skillet. Cover and cook over medium-high heat 4 minutes or until crisp-tender. Remove and drain.
  • Heat same pan over medium-high heat until hot. Add half of beef and half of garlic; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. Remove. Repeat with remaining beef and garlic.
  • Return all beef and vegetables to pan. Add stir-fry sauce and crushed red pepper; heat through. Serve over rice. Sprinkle with peanuts, if desired.
