1/4 cup Gold's Wasabi sauce
2 tablespoon soy sauce
2 tablespoon rice vinegar
2 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon ground ginger
2 cup chopped lettuce
1/4 head cabbage, chopped
2 scallions, chopped
1/4 cup cilantro
1 cup straw mushrooms
1/2 cup bean sprouts
Optional: chinese noodles

Steps:

  • In a small bowl, whisk the wasabi sauce, soy sauce, rice vinegar, sesame oil, garlic and ginger. In a large bowl or deep platter, layer the lettuce, cabbage, scallions, cilantro, straw mushrooms and bean sprouts. Drizzle on dressing, use as much as desired. Nutrition note: I try and keep my dressings light, so I actually only used half the amount listed, but I know it wouldn't be enough for many people and it is still just a little over 100 calories for the salad.

The delectable poached-chicken salad packed with Asian pear, cucumber and bean sprouts, offers a double hit of wasabi. Melissa whisks wasabi powder -- a blend of mayonnaise, rice vinegar and sesame oil -- then garnishes the salad with crunchy wasabi peas.

4 boneless skinless chicken breast halves (1 3/4 pounds)
1/2 cup mayonnaise
1/4 cup rice vinegar
2 1/2 tablespoons wasabi powder
1 1/2 teaspoons sesame oil
1 1/2 tablespoons water
kosher salt
fresh ground pepper
2 heads boston lettuce, torn into bite-size pieces
1 large Asian pear, halved cored and thinly sliced
1/2 seedless cucumber, halved lengthwise and thinly sliced on the bias
2 scallions, white parts and green parts, thinly sliced
1 cup mung bean sprouts
1/2 cup roasted wasabi peas, coarsely chopped

Steps:

  • In a large saucepan, cover the chicken breasts with water and bring to a gentle simmer; cook over moderately low heat until the chicken is white throughout, about 12 minutes.
  • Transfer the poached chicken breasts to a plate and let stand until cooled slightly, about 10 minutes.
  • Meanwhile, in a small bowl, whisk the mayonnaise with the rice vinegar, wasabi powder, Asian sesame oil and 1 1/2 tablespoons of water and season with salt and pepper.
  • In a large serving bowl, toss the lettuce with the Asian pear slices, cucumber, scallions, bean sprouts and 2/3 cup of the wasabi dressing.
  • Slice the chicken breasts crosswise 1/4 inch thick and lay the slices on top of the salad.
  • Spoon the remaining wasabi dressing over the chicken breasts, sprinkle with the chopped wasabi peas and.
  • Serve at once.

1 garlic clove
6 ounces japanese soba noodles, uncooked
1 cup frozen shelled edamame
4 ounces snow peas, trimmed and halved crosswise (about 1 1/2 cups)
4 ounces whole baby carrots, quartered lengthwise
3 tablespoons rice wine vinegar
3 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1 tablespoon prepared wasabi paste
1/2 cup radish, thinly sliced

Steps:

  • Mince garlic; let stand 10 minutes. Cook the noodles according to package directions omitting salt and fat. Drain and rinse noodles under cold water; drain well.
  • Steam edamame, peas, and carrots for 4 minutes or until crisp-tender. Drain and plunge vegetables into ice water; drain.
  • Combine garlic, rice vinegar, soy sauce, oil and wasabi in a large bowl; stir with a whisk. Add noodles, vegetable mixture and radishes; toss gently to coat. Serve immeditely.

1 large carrot, peeled
3 cups shredded napa cabbage, from 1 small cabbage
3 cups shredded romaine lettuce, from 1 small lettuce
1 small red bell pepper, seeded and deveined, thinly sliced
2 tablespoons fresh Thai basil leaves or fresh mint leaves, chopped** see Cook's Note
2 cups thinly sliced store-bought rotisserie chicken (about 2 small chicken breasts)
1/2 cup slivered almonds, toasted** see Cook's Note
1 tablespoon toasted white or black sesame seeds*
1/4 cup peanut or vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar*
1/2 teaspoon granulated sugar
Kosher salt and freshly ground black pepper, optional

Steps:

  • 1/2 cup chow mein noodles, for garnish
  • For the salad: Using a vegetable peeler, shave the carrot and add to a large salad bowl. Stir in the cabbage, lettuce, pepper, Thai basil, chicken, almonds, and sesame seeds.
  • For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste, if using.
  • Pour the dressing over the salad and toss well. Garnish with the chow mein noodles and serve.

2 chicken breasts, bone-in with skin
Salt
Freshly ground black pepper
2 tablespoons peanut oil
1 head Napa cabbage
1 head romaine lettuce
1 head radicchio
Chinese Vinaigrette, recipe follows
Fried Springroll Baskets and Strips, recipe follows
1 cup chopped roasted peanuts
Cilantro sprigs
Lime wedges
1 egg yolk
2 teaspoons dry Chinese mustard
1/4 cup rice wine vinegar
1 teaspoon soy sauce
2 tablespoons light sesame oil
3 tablespoons peanut oil
Salt
Freshly ground black pepper
1 1/2 tablespoons honey
6 large square eggroll wrappers
Peanut oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Season the chicken breast on both sides with salt and pepper. Heat a large saute pan over high heat. When the pan is hot, add the oil and heat to almost smoking. Add the chicken, skin side down and cook for 4 minutes. The skin should be golden brown. Turn the chicken over and place in the oven. Roast until the chicken is just cooked through and the juices run clear, about 15 to 20 minutes.
  • While the chicken is in the oven, prepare the greens. Fill a very large bowl halfway full with ice water. Quarter the Napa cabbage lengthwise and remove the core. Thinly slice the cabbage widthwise and place in the ice water. Repeat this same process for the radicchio. Halve the romaine lettuce lengthwise and then thinly slice. Add to the water. Mix all of the greens well in the ice water and let sit for about 5 minutes. Drain. Place in a clean kitchen towel and dry well. Be careful not to bruise the greens. Refrigerate.
  • Remove the chicken from the oven and cool enough to handle. Remove the skin and slice the chicken. Discard the skin and bones. Roughly chop the sliced chicken and place in a large bowl. The chicken should still be warm. Add some of the vinaigrette and toss well. Add the greens and a little more vinaigrette and toss until everything is well coated.
  • Place a small mound of greens on 4 plates. Top each mound with a spring roll basket and lightly press to stabilize. Fill the baskets with more of the salad. Top with some of the fried springroll strips, a sprig of cilantro, peanuts, and a lime wedge.
  • Place all of the vinaigrette ingredients in a blender and blend until smooth. Correct the seasonings. Refrigerate until ready to use.
  • Heat a deep fryer to 375 degrees F. Or fill a deep pot halfway full with oil and heat to 375 degrees F.
  • Roll up 2 of the egg roll wrappers and julienne. Set aside. Place 1 of the remaining wrappers in the hot oil for 5 seconds to soften. Then, carefully push the center of the wrapper down with a ladle. Fry just until the oil stops sizzling, about 15 to 30 seconds. The basket should be golden brown. Remove with tongs to a paper towel lined plate to drain. Repeat with the remaining 3 wrappers. Once all of the baskets are made, add the julienne strips and fry just until the oil stops sizzling and the strips are golden brown, about 30 seconds. Remove with a slotted spoon and drain on paper towels.
