1 cup plus 2 tablespoons unsalted butter, softened
1/2 cup plus 2 cups confectioners' sugar, divided
1-1/2 teaspoons almond extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted cashews
1 cup macadamia nuts
1 cup pecan halves

Steps:

  • Preheat oven to 375°. Cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in extract. In another bowl, whisk flour, salt and cinnamon; gradually beat into creamed mixture. Pulse nuts in a food processor until finely ground. Mix nuts into dough., Shape into 1-in. balls. Place 1 in. apart on parchment-lined baking sheets. Bake until golden brown, 8-10 minutes. Cool on pans 10 minutes., Place remaining confectioners' sugar in a small bowl. Roll slightly cooled cookies in sugar; return cookies to wire racks to cool completely. Roll cookies in sugar again just before serving.

3/4 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 teaspoon almond extract
1 1/2 cups Gold Medal™ all-purpose flour
1 cup butter or margarine
1 1/2 cups packed brown sugar
1/4 cup honey
1/4 cup light corn syrup
1/2 teaspoon vanilla
1 cup walnut pieces
1 cup unblanched or blanched whole almonds
1 cup pecan halves

Steps:

  • Heat oven to 350°F. In medium bowl, beat 3/4 cup butter, 1/2 cup brown sugar and the almond extract with electric mixer on medium-low speed until blended. On low speed, beat in flour until soft dough forms. Press dough in bottom of ungreased 13x9-inch pan. Bake 17 to 20 minutes or until golden brown.
  • Meanwhile, in 2-quart saucepan, cook 1 cup butter, 1 1/2 cups brown sugar, the honey, corn syrup and vanilla over medium-high heat 12 to 15 minutes, stirring frequently, until mixture comes to a full rolling boil. Boil 1 to 2 minutes, stirring frequently. Remove from heat.
  • Sprinkle walnuts, almonds and pecans over crust. Pour brown sugar mixture over nuts. Bake 13 to 15 minutes longer or until top of mixture is bubbly. Cool completely, about 1 hour. For bars, cut into 6 rows by 6 rows.

12 ounces semisweet chocolate
1 can (14 ounces) sweetened condensed milk
1 teaspoon pure vanilla extract
1/2 cup finely chopped toasted hazelnuts
1/4 teaspoon coarse salt
2/3 cup finely shredded unsweetened coconut

Steps:

  • Melt chocolate in microwave, 2 minutes. Stir until smooth, then stir in condensed milk, vanilla, nuts, and salt. Let cool. Roll mixture into 1-inch balls. Place coconut on a plate; roll balls in coconut to coat. Chill until set, about 30 minutes or up to 5 days.

1 cup butter, softened
3/4 cup confectioners' sugar
1 1/2 cups confectioners' sugar
2 teaspoons lemon peel, grated
2 teaspoons lemon extract
2 1/4 cups cake flour
1 cup macadamia nuts, chopped
1 cup crystallized ginger, chopped

Steps:

  • In a large bowl, cream butter and 3/4 c confectioners sugar until blended. Beat in lemon peel and lemon extract. Gradually beat in flour. Stir in nuts and ginger. Refrigerate for 1 hour or until easy to handle.
  • Shape dough into 1" balls; place 2" apart on a parchment lined baking sheet. Bake at 350 for 14-16 minutes or until lightly browned.
  • Roll warm cookies in remaining confectioners sugar. Cool on wire rack. When cooled roll cookies in confectioners sugar again.

I've been making homemade candy for years. Family and friends look forward to this caramel and nut sweet treat each Christmas.

1 cup walnut halves
1 cup pecan halves
1 cup Brazil nuts, halved
1 teaspoon butter
1-1/2 cups sugar
1 cup heavy whipping cream
1/2 cup light corn syrup

Steps:

  • Place the walnuts, pecans and Brazil nuts in a single layer on a baking sheet. Bake at 350° for 4-8 minutes or until toasted and golden brown, stirring once. Cool on a wire rack. Line an 8-in. square pan with foil; grease the foil with butter and set aside. , In a large heavy saucepan, combine the sugar, cream and corn syrup. Bring to a boil over medium heat, stirring constantly. Stir in the toasted nuts. Cook, without stirring, until a candy thermometer reads 238° (soft-ball stage). , Remove from the heat. Stir with a wooden spoon until creamy and thickened. Quickly spread into prepared pan; cool. Cover and refrigerate for 8 hours or overnight. , Using foil, lift candy out of pan; discard foil. Cut candy into squares. Store in an airtight container in the refrigerator.

This is another Hannah Swensen recipe direct from The Cookie Jar in Lake Eden, Minnesota. If you aren't a nut person or in the mood for something a little different, substitute the nuts with a cup of flaked coconut and form the dough balls around a smal piece of a milk chocolate bar or a couple of milk chocolate chips.

1 1/2 cups butter (1 1/2 cups melted)
3/4 cup powdered sugar (that's confectioner's sugar)
1 1/2 teaspoons vanilla
1/2 teaspoon nutmeg (freshly ground is best)
1/2 teaspoon salt
3 1/2 cups flour (no need sift)
1 cup finely chopped nuts (your choice, I have tried them with walnuts, hazelnuts and pecans...all were great)

Steps:

  • Preheat over to 350 degrees F, rack in the middle position.
  • Melt the butter. Mix in the powdered sugar, vanilla, nutmeg, and salt. Add the flour and mix throughly. Stir in the nuts. (If you work quickly, while the butter is still warm, the dough will be softer and easier to mix.).
  • Form the dough into one-inch ball (just pat them into shape with your fingers), and place them on an UNGREASED baking sheet, 12 to a standard sheet. Bake them at 350 degrees F for 10 minutes, until they are set but not brown.
  • Let the cookies cool for 2 minutes then roll them in powdered sugar. (You must do this while they're still warm.) Place them on a wire rac kand let them cool throughly.
  • When the cookies are cool, roll them in powdered sugar a second time. Let them rest for several minutes on the rack, and then store them in a cookie jar or a covered bowl.

Growing up in Newfoundland, I looked forward to Christmas each year for the huge family get-togethers, and of course the food that went along with them. This recipe is one that my Grandmother made every year. Definitely one of my favourite Christmas cookies.

1 cup 2% milk
1 cup white sugar
¼ cup butter
¼ cup unsweetened cocoa powder

Steps:

  • Combine milk, sugar, butter, and cocoa powder in a large pot; bring to a boil for 3 minutes. Stir vanilla extract into the milk mixture; boil another 2 minutes. Remove pot from heat.
  • Stir oats and 2 cups coconut into the milk mixture until thoroughly mixed; cool for 5 minutes.
  • Spread 1/2 cup coconut onto a plate. Roll the mixture into 24 balls and roll in the coconut. Set on a sheet of parchment paper until finished.

1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 1/4 cups walnuts, toasted, cooled
1 cup (2 sticks) unsalted butter, room temperature
2 1/2 cups powdered sugar
1 large egg yolk
5 teaspoons brandy
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F. Line 2 large baking sheets with parchment paper. Sift first 4 ingredients into medium bowl. Transfer 2 tablespoons flour mixture to processor; add walnuts. Process until walnuts are finely chopped.
  • Using electric mixer, beat butter in large bowl until fluffy. Add 1 cup powdered sugar and beat until well blended. Add egg yolk, brandy, and vanilla and beat to blend. Beat in flour mixture. Add walnut mixture; stir with spatula to blend. Using 1 tablespoon dough for each cookie, shape dough into balls; arrange on prepared sheets, spacing 1 inch apart.
  • Bake cookies 12 minutes. Reverse sheets. Bake cookies until brown on bottom, cracked on top and just beginning to color, about 12 minutes longer. Sift remaining 1 1/2 cups powdered sugar thickly over hot cookies and cool on sheets. (Can be made 4 days ahead. Store airtight between sheets of waxed paper at room temperature.)

1 cup finely grated unsweetened coconut (3 oz)
2/3 cup granulated sugar
1/4 teaspoon salt
2 large egg whites
2 teaspoons water
30 (1/2-inch) squares fine-quality bittersweet chocolate (not unsweetened; from a 3 1/2-oz bar)
About 1/2 cup confectioners sugar

Steps:

  • Preheat oven to 350°F.
  • Pulse sweetened and unsweetened coconuts, granulated sugar, and salt together in a food processor until flaked coconut is finely chopped. Add whites and water and pulse until mixture is moistened and holds together when squeezed.
  • Roll level tablespoons of coconut mixture into balls with wet hands (you'll need to rinse your hands every 3 or 4 balls). Make an indentation in center of each ball and insert a piece of chocolate, then pinch hole closed and reroll into a ball. Arrange balls 1 inch apart on a parchment-lined large baking sheet.
  • Bake macaroons in middle of oven until bottoms are golden and balls are puffed but still white, 13 to 15 minutes. Slide macaroons on parchment to a rack to cool completely, then peel off paper. Dust macaroons lightly with confectioners sugar just before serving.
