CHINESE FRIED RICE

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

Number Of Ingredients 12

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

2-1/2 cup Rice , cooked
1/4 cup Carrot (Gajjar) , cut in very small cubes
1/4 cup Sweet corn , steamed
1/4 cup Green Bell Pepper (Capsicum) , cut in small cubes
1/4 cup Spring Onion Greens , chopped
1/4 cup Spring Onion (Bulb & Greens) , finely chopped
1 teaspoon Garlic , finely chopped
3 tablespoon Roasted Peanuts (Moongphali) , coarsely crushed
1 tablespoon Peanut Butter
1 tablespoon Dark soy sauce
2 teaspoon Red Chilli sauce
1 tablespoon Rice Vinegar
Salt , to taste
Black pepper powder , to taste
2 tablespoon Sesame (Gingelly) Oil

Steps:

  • To begin with Asian Style Mixed Fried Rice, firstly heat oil in a wok. Add chopped garlic and fry until the raw smell of garlic vanishes.
  • Add chopped spring onion white bulbs and toss for about 30 seconds.
  • After 30 seconds, add carrots and corn, toss well for another 30 seconds.
  • Add green pepper, peanut butter, soya sauce, red chili paste, rice vinegar and mix well. Saute it for about 40-50 seconds and make sure everything is mixed properly.
  • Add spring onion greens and season with salt and pepper. Once it is done, add 2 tablespoon of crushed peanut, mix well.
  • At the end, add the cooked rice and toss it well. Garnish this delicious rice recipe with some spring onion greens and crushed peanuts.
  • Serve Asian Style Mixed Fried Rice with Vegetarian Thai Red Curry and Thai Spicy Corn & Green Papaya Salad.

2 cups basmati rice
2 medium carrots, cut into small pieces
200 g French beans, cut into small pieces
2 red capsicums, cut into small pieces (bell peppers')
3 -4 leaves spring onions, finely chopped
2 eggs, beaten
2 pinches Chinese salt (ajinomoto)
1 tablespoon black pepper, freshly powdered
2 -3 tablespoons soya sauce
10 -20 pieces very small chicken (3-4 chicken sausages cut in small pieces)
10 -15 small prawns, cooked
1/2 cup oil
salt

Steps:

  • Soak rice in 4-5 cups of water for 10-15 minutes.
  • Put 3 cups of water in a pot.
  • Bring to a boil.
  • Once it boils, drain water from the rice and transfer the rice to this pot containing the boiling water.
  • When it is half cooked, drain the excess water and allow to cool.
  • Pour half a cup of oil into a non-stick skillet.
  • Add ajinomoto.
  • Once the oil is hot, pour the beaten egg into it.
  • Stir well to make it into small pieces.
  • Add chicken pcs.
  • and cooked prawns to it.
  • Stir well.
  • Add salt.
  • Add pepper powder to taste.
  • Cook for 2 minutes.
  • Add carrots, beans and soya sauce.
  • Cook until it is half cooked.
  • Add capsicum and spring onion.
  • Mix well.
  • Add rice, a little at a time, and mix in slowly.
  • Lower flame, cover pot with a lid, and cook for 2 minutes.
  • Remove from flame.
  • Serve hot.

3 tablespoons vegetable oil, divided
2 large eggs, lightly beaten
1 garlic clove, minced
1/2 cup diced onion
1/2 cup diced bell pepper
1 cup chopped cooked meat, poultry or 1 cup shrimp
1/2 cup frozen peas
3 cups cooked rice
1/4 cup soy sauce
1 teaspoon packaged asian chili-garlic sauce (Sriracha)
sliced green onion (to garnish)

Steps:

  • Heat 1 tablespoon oil in a large skillet or wok over medium-high heat 1 to 2 minutes; add eggs and gently stir 1 minute or until softly scrambled. Remove eggs from skillet; chop.
  • Heat remaining 2 tablespoons oil in skillet; add onion, garlic and bell pepper and stir-fry 3 minutes. Add chopped cooked meat and peas; stir-fry 2 minutes. Add rice, soy sauce and chili-garlic sauce; stir-fry 5 minutes or until thoroughly heated. Stir in eggs. Garnish with green onions.

⅔ cup chopped baby carrots
½ cup frozen green peas
2 tablespoons vegetable oil
2 eggs
soy sauce to taste
2 tablespoons sesame oil, to taste

Steps:

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
  • Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.
