1 Cup Milk (- 230 milliliters)
12 Tablespoons Unsalted Butter ((softened) - 171 grams)
2 Teaspoons Vanilla Extract (- 10 milliliters)
2 Eggs
2 Cups All-Purpose Flour (- 240 grams)
1 1/2 Cups Light Brown Sugar ((packed cups) - 322 grams)
1/2 Cup Cocoa Powder Natural Unsweetened ((not hot chocolate powder) - 42 grams)
1 Teaspoon Baking Powder (- 5 milliliters)
1 Teaspoon Baking Soda (- 5 milliliters)
1 Teaspoon Salt (- 2.5 milliliters)
3/4 Cup Mini Semi-Sweet Chocolate Chips ((regular sized chocolate chips are too heavy and sink in the batter) - 100 grams)

Steps:

  • Bread Machine Settings - Light Color, 2 lbs, Cake/Quick Bread
  • Unplug your bread machine and remove the bread pan from the bread machine.
  • Soften the butter in the microwave.
  • Add milk, butter, vanilla extract & eggs into a large mixing bowl. Mix together and then add dry ingredients. Stir ingredients until fully mixed. For best results, use a whisk or electric hand mixer (but for only a couple of minutes). Then mix in the chocolate chips with a large spoon. FYI - Premixing the ingredients before adding batter to the bread pan helps to prevent small flour "clumps" in the finished cake. See tips below.
  • Pour the premixed batter into the bread pan.
  • Put the bread pan (with all of the ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
  • Enter the correct bread machine settings (Cake/Quick Bread, Light Color, 2 lb.) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the cake & sweet "quick bread" setting. The setting may be called "quick bread", "quick bread/cake", "cake", etc. This setting lasts for roughly 1:40-1:55 hours (and you will see this time in your machine's electronic display panel). However, some manufacturers use the "quick bread" setting name for rapid sandwich-type breads that use yeast (and not for cake & quick bread recipes that use baking powder/soda). This "quick bread" sandwich bread setting lasts for only 50-60 minutes (which is not long enough for a cake recipe and your cake will be undercooked!!). This setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct cake setting used by your SPECIFIC bread machine model or the cake could be under or overcooked. Do not use any settings designed for yeast-based recipes (see your manual).
  • When the bread machine has finished baking the cake, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Use oven mitts when removing the bread pan because it will be very hot!
  • After removing the bread pan from the bread machine, you should let the cake stay within the warm bread pan on a wooden cutting board for 10 minutes (as this finishes the baking process) before you remove the cake from the bread pan. Wear oven mitts.
  • After the 10 minute "cooldown", you should remove the cake from the bread pan and place the cake on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.
  • You should allow the cake to completely cool before cutting. This can take up to 1-2 hours. Otherwise, the cake will break (crumble) more easily when cut.

¼ cup warm water (100 to 110 degrees F/40 to 45 degrees C), or as needed
½ teaspoon salt
2 tablespoons softened butter
1 egg, slightly beaten
1 cup sour cream
3 ½ tablespoons white sugar
3 ½ cups all-purpose flour, or as needed
2 ½ teaspoons active dry yeast
¼ cup white sugar
1 teaspoon ground cinnamon
2 ½ tablespoons melted butter
½ cup chopped pecans
1 ½ cups confectioners' sugar
1 ½ tablespoons melted butter
⅛ teaspoon vanilla extract
2 tablespoons milk, or as needed
1 tablespoon purple colored sugar, or as needed
1 tablespoon green colored sugar, or as needed
1 tablespoon yellow colored sugar, or as needed

Steps:

  • Place the warm water, salt, softened butter, egg, sour cream, 3 1/2 tablespoons of sugar, flour, and yeast into a bread machine in the order recommended by the manufacturer, select the dough cycle, and start the machine. Check the dough after about 5 minutes of mixing, and add 1 to 2 more tablespoons of water or flour if the dough is too dry or wet.
  • Mix 1/4 cup of sugar, the cinnamon, 2 1/2 tablespoons of melted butter together in a bowl. Grease a baking sheet, and set aside.
  • When the dough cycle is finished, remove the dough and roll out to a 10x28-inch rectangle on a floured surface. Spread the cinnamon-butter mixture over the dough, and sprinkle on an even layer of pecans. Pick up one of the long edges, and roll the dough into a 28-inch long log.
  • Place the rolled dough onto the prepared baking sheet, seam side down, and form the dough into a ring. Moisten the ends of the dough with a little water; pinch the two ends together to seal. Cover the dough ring with a cloth or greased plastic wrap, and let rise in a warm place until doubled in size, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake the cake in the preheated oven until the top is golden brown, about 15 minutes.
  • Mix the confectioners' sugar, 1 1/2 tablespoons of melted butter, vanilla extract, and just enough milk to make a smooth but not thin glaze.
  • Remove the cake from the oven, and cool for about 10 minutes on a wire rack. While the cake is still warm, spoon the glaze onto the cake, allowing drips of glaze to dribble down the sides of the cake. Immediately sprinkle the cake with alternating bands of purple, green, and yellow colored sugar. Allow the cake to cool completely before serving.

1 ¾ cups white sugar
3 eggs
1 ½ teaspoons vanilla extract
1 ½ cups milk
2 ½ cups all-purpose flour
6 tablespoons unsweetened cocoa powder
1 ½ teaspoons baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, cocoa, baking soda and salt. Set aside.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

1 1/4 1 1/4 2% cup 2% or whole milk
1 1 1 stick of butter, melted
2 2 2 large eggs
1 1 1 teaspoon vanilla
1 1 1 tablespoon baking powder
1/4 1/4 1/4 teaspoon salt
1/4 1/4 1/4 cup cocoa powder
1 1 1 cup white sugar
2 2 2 cup all-purpose flour

Steps:

  • Add all of these ingredients into the bread pan, making sure that the melted butter, if hot, does not touch the raw eggs as it could scramble them. Place the pan into the bread machine & set it on Batter Bread. Press start & close the lid. The machine does all the work for you. It mixes the batter and then bakes it too. In 1 hour and 40 minutes, you will be smelling yummy cake. Remove the pan from the machine and place on a cooling rack for approximately 10 minutes. Then, turn upside down and the cake should "pop" right out. Allow the cake to cool completely, or serve warm. The kids like it served with a dollop of fresh whipped cream or powdered sugar. NOTES: This recipe can be cooked in a greased loaf pan in the oven too, on 350°F for 20 minutes. Then, if it isn't cooked through, just add additional 5 minutes until a toothpick inserted in center comes out clean. The cocoa powder is an additional ingredient that I have added. At this time, you could also add 2 tablespoons of raisins and omit the cocoa, or an additional 2 tablespoons of chocolate chips. I have made it with blueberries, dried cranberries, changed up the vanilla for banana extract and put bits of banana--the possibilities are endless.
