SEA BASS WITH SIZZLED GINGER, CHILLI & SPRING ONIONS

Steps:
- Season 6 sea bass fillets with salt and pepper, then slash the skin 3 times.
- Heat a heavy-based frying pan and add 1 tbsp sunflower oil.
- Once hot, fry the sea bass fillets, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through.
- Turn over, cook for another 30 seconds - 1 minute, then transfer to a serving plate and keep warm. You'll need to fry the sea bass fillets in 2 batches.
- Heat 2 tbsp sunflower oil, then fry the large knob of peeled ginger, cut into matchsticks, 3 thinly sliced garlic cloves and 3 thinly shredded red chillies for about 2 mins until golden.
- Take off the heat and toss in the bunch of shredded spring onions. Splash the fish with 1 tbsp soy sauce and spoon over the contents of the pan.

SEA BASS WITH ORIENTAL SAUCE

- Heat oil in heavy large nonstick skillet over high heat. Add fish and cook until cooked through, turning once, about 4 minutes per side. Transfer to plates using slotted spatula. Add ginger and garlic to same skillet and sauté over high heat 30 seconds. Remove from heat. Add soy and vinegar and stir to combine. Mix in cilantro. Mix in sesame oil if desired. Spoon over fish and serve.
SEA BASS IN BLACK BEAN SAUCE
Do not be alarmed by this list of ingredients. This dish is much simpler to prepare than it may seem.

- Gently cut 2 X's through the skin of each fillet without cutting the meat, to keep them from curling. Set aside.
- Soak noodles in warm water for 1 minute, drain and toss with 1 tablespoon soy sauce and 1 tablespoon sesame oil, or more to taste. The flavor should be noticeable but not overpowering. Set aside.
- Combine the black beans with 1 tablespoon soy sauce and 1 tablespoon sesame oil. In a wok heat 1 tablespoon of peanut oil until smoking. Add the bean sprouts, bell peppers, mushrooms, green onions and ginger. Stir-fry for 1 minute. Add the bean-sauce mixture and stir-fry 1 minute. Add 1 cup chicken broth and stir-fry 1 minute more. Mix the cornstarch or arrowroot with a bit of water until smooth and add to the sauce. Heat to boiling, stirring gently, until the sauce is clear and thickened. If too thick, thin with more chicken stock. Set aside and keep warm.
- In a nonstick 10-inch skillet heat 1 tablespoon peanut oil until almost smoking, add the noodles and flatten into a pancake. Fry gently until crisp, turn over, adding more oil if needed, and brown other side. Place on a platter and keep warm.
- Heat the remaining 1 tablespoon peanut oil in a nonstick 10-inch skillet over medium-high heat until it shimmers. Add the bass fillets, skin side down, and move the fillets gently to prevent sticking. Reduce heat to medium and cook until the skin is crisp, about 2 minutes. Turn over and cook until a sharp knife meets almost no resistance, 1 to 2 minutes, and fish is browned slightly. Do not overcook!
- To serve: Spoon the sauce over the noodles and top with the fillets.

- Preheat oven to 400 degrees. Place a 12-ounce bass fillet in center of a 16-by-20-inch piece of parchment. Whisk together 1/2 teaspoon sugar and 3 tablespoons soy sauce; drizzle over fish. SIZZLING BEEF WITH SPRING ONIONS & BLACK BEAN SAUCE

- TO PREPARE YOUR STIR-FRY:.
- Bring a pan of salted water to the boil, add the rice and cook according to the packet instructions.
- Drain the rice in a sieve, run it under a cold tap to cool, then allow to dry out in the fridge.
- Trim any excess fat from your steak and slice the meat into finger sized strips.
- Peel and finely slice the ginger and garlic.
- Finely slice the chili.
- Cut the ends off your spring onions and finely slice.
- Pick the coriander leaves and put to one side, and finely chop the coriander stalks.
- Get yourself a big bowl and put in the ginger, garlic, chilli, spring onions, coriander stalks and steak strips.
- Add the sesame oil and mix everything together.
- TO COOK YOUR STIR-FRY:.
- Preheat a wok or large frying pan on a high heat and once it's very, very hot add a good splash of groundnut oil and swirl it around.
- Add all your chopped ingredients from the bowl.
- Give the pan a really good shake to mix everything around quickly.
- Stir-fry for 2 minutes, taking care to keep everything moving so it doesn't burn.
- Add the blackbean sauce, and stir in 1 tablespoon of soy sauce and the juice of half a lime.
- Keep tossing.
- Taste and season with black pepper and a little more soy sauce, if required.
- Remove the pan from the heat, transfer everything to a bowl and cover with tin foil.
- Give the pan a quick wipe with a ball of kitchen paper and put back on the heat.
- Add some groundnut oil and swirwl it around.
- Crack in your egg and add a tb soy sauce - the egg will cook very quickly so keep sstirring.
- Once it's scrambled, stir in your chilled rice, scraping the sides and the bottom of the pan as you go.
- Keep mixing for a few minutes until the rice is steaming hot, then taste and season with a little soy sauce if required.
- TO SERVE YOUR STIR-FRY:.
- Divide the rice between two bowls or plates.
- Spoon over the meat and black bean sauce and sprinkle over with coriander leaves.
- Serve with wedges of lime.2.

- Combine first 4 ingredients in a large zip-top plastic bag; add fish to bag. Seal and marinate in refrigerator 20 minutes, turning once. Remove fish from bag, and reserve marinade.
- Heat a large nonstick skillet coated with cooking spray over medium-high heat.
- Add fish to pan; cook 4 minutes on each side or until fish flakes easily when tested with a fork.

SIZZLING CATFISH WITH BLACK BEAN-SOY SAUCE

- Preheat oven to 350°F. Using knife, make 6 diagonal slits on 1 side of each fish, spacing evenly and cutting to the bone. Insert 1 ginger slice into each slit. Turn fish over. Make 6 diagonal slits on second side of each fish; insert remaining sliced ginger. Sprinkle catfish with enough rice flour to coat on all sides.
- Heat 1 1/2 cups peanut oil in heavy large skillet over medium-high heat until thermometer registers 375°F. Gently slide 1 catfish into skillet and fry until golden and almost cooked through, about 5 minutes per side. Transfer to rimmed baking sheet. Repeat frying with second catfish.
- Bake catfish in oven until cooked through and opaque in center, about 10 minutes. Transfer to platter. Pour Black Bean-Soy Sauce over. Garnish platter with tomato, green onions and lime wedges. Serve immediately.
