ASIAN-INSPIRED SHEPHERD'S PIE
In the English tradition, a cook uses leftover beef or lamb from last night's roast to make this hearty casserole. For the most basic shepherd's pie, you sauté some fresh vegetables, add in meat taken off the bone, and then add any jus or gravy to thicken up the filling and make it a little saucy. You put this filling into an oven-safe casserole dish, top it off with mashed potatoes, dot with butter, and bake until the topping gets a nice roasted brown hue. What you don't know about shepherd's pie is that it is the perfect dish in which to use those Thanksgiving leftovers because there is no set recipe. Your shepherd's pie is based on what's available in the fridge the morning after Turkey Day. Personally, I like to go with very traditional flavors on Thanksgiving, and then go a little cross-cultural with the leftovers. So here is an Asian-inspired take on Shepherd's pie.

- Preheat the oven to 450 degrees.
- Lightly sauté the vegetables together in a medium-sized pot. When they are gently cooked, add the wine to deglaze and cook them until the alcohol smell wears off. Now, fold in the turkey meat and add the gravy, soy sauce, and sesame oil. Taste the mixture for proper seasoning.
- Spoon the filling into a 12-by-8-inch casserole dish. Top it off with the mashed potatoes (or sweet potatoes) and use a spatula to even it out on top. If you would like to increase the amount of crispiness, drag a fork across the topping to create more grooves. Dot with butter if you like.
- Bake for 30 minutes. If you have a convection oven, turn on the fan. If the top is not as brown as you would like at the end of 30 minutes, use the broiler option to get a good crust. However, keep an eye on it to make sure it does not burn.
- Once you get the casserole to a desired look, let it sit for at least 15 minutes before serving.
ASIAN 5 SPICE SHEPHERD'S PIE

Steps:
- Spray a large cooking saucepan with PAM® Original Cooking Spray. Add oil; heat over medium heat. Add onions and celery; cook, stirring, for 5 minutes. Add beef and pork; cook, stirring for 20 minutes or until meat is cooked through and lightly browned.
- Add flour, stir until well mixed. Add VH® Soya Sauce, VH® Asian 5 Spice Stir-Fry Sauce, HUNT'S® Tomato Sauce and 1 cup (250 mL) water. Bring to a boil, reduce heat and simmer for 10 minutes, partially covered, until slightly thickened. Stir in peas.
- Meanwhile, place potatoes in large pot of boiling water for 20 minutes. Drain. Add butter, milk and potatoes back into pot and mash. Season with salt and pepper. Add more milk if necessary to acheive desired consistency.
- Spray a 9″x 9″ baking dish with PAM® Original Cooking Spray; spread meat mixture in dish and top evenly with mashed potatoes.
- Bake in 350°F (175°C) oven until heated through and bubbling around edges, about 25 minutes.
- Tip: The shepherd's pie can be made entirely with beef if desired, substitute pork portion with beef.
HUNGARIAN-STYLE SHEPHERD'S PIE

- Char the bell pepper over an open burner flame or under the broiler with the oven door slightly cracked for the steam to escape until black, turning frequently. Place the charred pepper in a bowl until cool enough to handle, then peel the pepper, chop, and reserve.
- Meanwhile, pat the meat dry and season liberally with salt and pepper, dredge in flour. Heat 2 tablespoons extra-virgin olive oil in a large Dutch oven over medium-high heat, add the meat and brown on both sides. Remove the browned meat to a plate and add the remaining olive oil, 2 turns of the pan. Add the onions, carrots, garlic, paprika, caraway, marjoram and cook to soften 5 to 6 minutes. Add in the tomato paste and stir 1 minute. Stir in the beef stock and Worcestershire and bring to a boil, reduce the heat to a simmer and slide the meat and peppers into the pot. Cook 30 minutes, until beef is just tender.
- Meanwhile, boil the potatoes and parsnips until tender, about 20 minutes. Drain and return to the hot pot and mash with salt, pepper, butter, sour cream, egg, and herb of choice.
- Place the goulash into a casserole dish and top with potatoes. Cool the dish completely and store for make-ahead meal.
- Preheat the oven to 375 degrees F.
- Reheat and bake until heated through and potatoes are brown on top, 45 to 60 minutes. If you do not make this dish as a make ahead meal then brown potatoes under hot broiler on the middle rack of the oven 5 to 7 minutes until golden at edges.
ASIAN VERSION OF SHEPHERD'S PIE
Adapted a shepherd's pie recipe so that it has a bit of a Asian taste to it. Something to try if you want something a little different.

Steps:
- To make the topping: Mash the potatoes and mix in sour cream, soft boiled egg and butter.
- Combine well.
- Put mixture into a piping bag fitted with a star-shaped nozzle.
- To make the filling: Heat about 2 tbsp oil in a wok and stir-fry (A) till onions turn limp and soft.
- Add chicken meat and stir-fry well.
- Add curry powder and mix well to blend.
- Stir in (B), mix in pureed tomatoes and allow to simmer till vegetables are tender and the gravy is thick.
- Add seasoning.
- Dish out and leave aside to cool.
- To make the pie: Spoon the cooled filling into an oven-proof 2.5 litre pie dish.
- Pipe out the potato topping over the filling and bake the pie in an oven preheated at 200 to 210 ºC for about 25 to 30 minutes or until pie turns golden brown.

'SHEPHERD'S PIE' WITH ASIAN BRAISED DUCK
Steps:
- Season the duck legs with salt and pepper. Heat a small stock pot to high. Sear the duck legs (no added oil) on both sides until brown. Remove legs and leave the rendered fat. Add the black beans, garlic and ginger and saute until soft, about 2 minutes. Add the onions and caramelize, about 4 to 5 minutes. Add the carrots, celery, shiitakes and season. Deglaze with shaoxing and reduce by 20 percent. Add the soy, sugar, thyme and duck legs and cover with water. Check for seasoning. Bring to a simmer and cook for 1 1/2 hours until soft. Strain duck legs and liquid and set aside. Bring liquid back to a boil and reduce by 50 percent. Skim if necessary. When legs are cool enough to touch, remove the meat and fat. Roughly chop up this mixture and mix in the strained vegetables/aromatics. In 4 individual oval flameproof baking dishes, place duck mixture in each. Ladle a little of the reduced liquid on top and top that with the mashers. All this can be done in advance. Bake in a preheated 400 degree oven for 30 minutes until bubbling. Change over to broiler and toast the top until brown. May serve with side salad.
- PLATING: Place baking dish on a plate with a side salad (optional). Otherwise, you can make 8 small dishes and serve as an appetizer.
SHEPHERD'S PIE (PATE CHINOIS)
This is the my family's French Canadian version of Shepherds pie, which we call Pate Chinois. It's easy to make, cheap and very delicious. Serve with a nice loaf of crusty bread.

Steps:
- Boil potatoes.
- Mash potatoes, add a little butter and milk, (a little lumpy and not too creamy) salt and pepper.
- Brown ground beef (drain if necessary), add mushrooms and onion and cook till a bit tender.
- Sprinkle a little soya sauce on ground beef mixture (about 1-2 tblsp), and pepper.
- Put ground beef in bottom of roasting pan.
- Then the cream corn.
- Next the can of kernel corn.
- Finally the mashed potatoes.
- Brush the top with a little melted butter Bake at 375 for about an hour, or until the potatoes are golden brown.
- Remove from oven and sprinkle with parsley.
- I like to put a little soya on my serving.
