CHICKEN ASPARAGUS ROLL-UPS



Chicken Asparagus Roll-Ups image

Very flavorful chicken and asparagus dish with almost a hollandaise-inspired flavor with a little crunch from the Panko breadcrumbs. Quick and easy to prepare, the presentation is simple yet elegant. Great served with artichokes!

½ cup mayonnaise
3 tablespoons Dijon mustard
1 lemon, juiced and zested
2 teaspoons dried tarragon
1 teaspoon ground black pepper
½ teaspoon salt
16 spears fresh asparagus, trimmed
4 skinless, boneless chicken breast halves
4 slices provolone cheese
1 cup panko bread crumbs

Steps:

  • Preheat oven to 475 degrees F (245 degrees C). Grease a baking dish. In a bowl, mix together the mayonnaise, Dijon mustard, lemon juice, lemon zest, tarragon, salt, and pepper until the mixture is well combined. Set aside.
  • Cook asparagus in the microwave on High until bright green and just tender, 1 to 1 1/2 minutes. Set the asparagus spears aside. Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of about 1/4 inch. Repeat with the rest of the chicken breasts.
  • Place 1 slice of provolone on each chicken breast, and top the cheese with 4 asparagus spears per breast. Roll the chicken breasts around the asparagus and cheese, making a tidy package, and place, seam sides down, in the prepared baking dish. With a pastry brush, apply a coating of the mayonnaise mixture to each chicken breast, and sprinkle each with panko crumbs, pressing the crumbs into the chicken to make a coating.
  • Bake in the preheated oven until the crumbs are browned and the chicken juices run clear, about 25 minutes.

6 boneless chicken breasts, thinly sliced
1 lb fresh asparagus
1 teaspoon salt
1 teaspoon black pepper
1/4 cup fresh lemon juice
2 tablespoons olive oil

Steps:

  • Wash and snap the woody ends from the asparagus. Blanch in salted boiling water for 1 minute (or more depending on your preference for the doneness of the veg). Shock in ice water to stop cooking process. Drain on a dish cloth. Divide into 6 equal portions.
  • Lay one chicken piece flat and sprinkle with salt and pepper. Lay bundle of asparagus on one short side of the chicken and roll up tightly, securing with a tooth pick. Repeat.
  • Heat oil in non stick pan over medium heat. Place rolls pick side down. Sprinkle a little more salt and pepper over the rolls and brown on all sides. Pour lemon juice over the rolls and finish in a 350 degree oven until the chicken is done and the asparagus is warmed through.
  • Serve. I served them with mushroom risotto and fresh steamed carrots. Great.

We love fresh asparagus. Combined with chicken, this is a terrific main dish that can be made the day before and popped into the oven after work.

8 boneless skinless chicken breast halves, pounded thin
1 lb fresh asparagus, trimmed and washed
1/8 cup flour
2 garlic cloves, minced
1 teaspoon salt, divided
1 teaspoon leaves thyme, divided
1 teaspoon paprika
2 cups white onions, sliced 1/4 thick
1 (15 ounce) can diced tomatoes, drained
1 large tomatoes, sliced 1/2 thick
1/2 cup chicken broth

Steps:

  • Season pounded chicken breasts lightly with salt and freshly ground pepper.
  • Place 2-3 asparagus spears on each chicken breast half.
  • Roll up tightly; secure with toothpicks, if necessary.
  • Set aside.
  • Combine flour, garlic, 1/2 tsp salt, 1/2 tsp thyme and paprika.
  • Roll chicken in flour mixture.
  • Place onions and diced tomatoes on bottom of 13x9" pan, reserving 8 slices of onion for top.
  • Place chicken breasts over vegetables; top with reserved onion and tomato slices.
  • Combine broth with remaining salt and thyme; pour around chicken.
  • Cover pan loosely with foil and bake at 350 degrees for 30 minutes.
  • Uncover and bake until tender, about 10-15 minutes.

15 asparagus spears
1/2 lb imported prosciutto, sliced thick enough so it holds together when laid out
1/2 cup boursin cheese (available in dairy section or see below)

Steps:

  • Snap bottoms off of asparagus, use a vegetable peeler to peel spears and steam them to a point where they are not totally wilted. Refrigerate until needed.
  • Lay out pieces of prosciutto and spread about one tablespoon of Boursin cheese onto each slice. Mean Chef has a recipe if you find it hard to locate in your local market -- Boursin Cheese - Make your own Recipe #65204.
  • Put chilled asparagus spears on kitchen towels to absorb any moisture. Place one or two asparagus spears in each slice of prosciutto and roll. Refrigerate if not serving immediately.

1/4 cup dry white wine
2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
4 medium boneless skinless chicken breast halves
4 slices thin prosciutto, trimmed of fat (about 1 oz total)
2 ounces Fontina cheese, thinly sliced
3 1/2 ounces jars roasted red sweet peppers, cut into strips (about 1/2 cup)
fresh thyme (optional)

Steps:

  • For sauce, in a small bowl combine wine and the 2 tsp fresh or 1/2 tsp dried thyme.
  • Set aside.
  • Rinse chicken; pat dry.
  • Place chicken piece between 2 pieces of plastic wrap.
  • Using the flat side of a meat mallet, pound the chicken lightly into a rectangle about 1/8 inch thick.
  • Remove plastic wrap.
  • Repeat with remaining chicken.
  • Place a slice of prosciutto and one-fourth of the cheese on each chicken piece.
  • Arrange one-fourth of the roasted peppers on cheese near bottom edge of chicken.
  • Starting from the bottom edge, roll up jelly roll style; secure with toothpicks.
  • Grill chicken directly over medium heat for 15 to 17 minutes or until chicken is tender and no longer pink.
  • Turn to cook evenly and brush with sauce.
  • If desired, garnish with fresh thyme.

  • Slice chicken breasts horizontally into 2 thin pieces. If necessary, layer between sheet of plastic wrap and pound to ¼-inch thick.
  • Lay breasts, smooth side down, on work surface; season with salt and pepper. Spread each with ½ tsp Dijon. Layer with prosciutto, goat cheese and asparagus. Roll up, starting at the wide end of each breast; place on the baking sheet, seam side down.
  • Coat lightly with cooking spray or olive oil and sprinkle with pepper. Broil until chicken is cooked through and tops are golden, 8 to 10 min, rotating baking sheet halfway through. You may need to cover the chicken half-way through cooking with foil if they become golden quickly. Alternately follow the instructions in the notes section. Serve hot.
