Whisk eggs, half-and-half, 1/2 teaspoon salt, and 1/4 teaspoon pepper in medium bowl until well combined, about 30 seconds. Set eggs aside. 2. Heat oil in 12-inch nonstick ovensafe skillet over medium heat until shimmering; add asparagus and cook, stirring occasionally, until lightly browned and almost tender, about 3 minutes. Add shallot and ham and cook until shallot softens slightly, about 2 minutes. Stir Gruyère into eggs; add egg mixture to skillet and cook, using spatula to stir and scrape bottom of skillet, until large curds form and spatula begins to leave wake but eggs are still very wet, about 2 minutes. Shake skillet to distribute eggs evenly; cook without stirring for 30 seconds to let bottom set. 3. Slide skillet under broiler and broil until frittata has risen and surface is puffed and spotty brown, 3 to 4 minutes; when cut into with paring knife, eggs should be slightly wet and runny. Remove skillet from oven and let stand 5 minutes to finish cooking; using spatula, loosen frittata from skillet and slide onto platter or cutting board. Cut into wedges and serve.

- In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Heat 12-inch non-stick, oven safe saute pan over medium high heat. Add butter to pan and melt. - Preheat the oven to 375° F.
- Cut the tough ends of the asparagus spears and discard. Chop the remaining spears into ¼" pieces, reserving six of the tips. You should have about ¾ cup chopped asparagus.
- In a small skillet, heat two tablespoons of the olive oil and add the asparagus and the green onion. Season with a little salt and cook for just a few minutes to soften the asparagus. Remove from the heat and allow them to cool.
- Whisk the eggs, milk or cream, and the salt and pepper in a large measuring cup until well blended (this will make the pouring easier).
- Brush all six cups of a regular muffin tin generously with the remaining olive oil. If you have a non-stick one muffin tin, all the better.
- Divide the asparagus and onion mixture evenly among the 6 muffin cups. Add the Asiago cheese on top of the vegetables. Next, pour the egg and milk mixture over the filling in each cup as evenly as possible, about two-thirds of the way from the top. Add the asparagus tips to top each muffin.
- Bake until the egg mixture puffs up and is soft but set in the center, about 15 minutes or so. Do not overcook them (the color of the egg custard should not be brown.)
- Sprinkle the top with some Parmesan cheese and allow them to sit for a few minutes. Using a rubber spatula, loosen the frittate from the muffin cups and slide them onto a serving platter. Sprinkle with some fresh parsley and serve immediately.
CHEESY HAM AND ASPARAGUS BAKE
Even if you think you don't like asparagus you have to try this. It is a wonderfully easy quiche-like casserole to throw together for breakfast. This can be prepared the night before, covered, and put in the refrigerator overnight. Just be sure to allow extra cook time.

- Steam the asparagus until tender, about 5 minutes. Refresh with cold water, drain and pat dry. Cut into 1/2-inch slices and set aside.
- Beat the eggs in a large bowl. Beat in the milk, salt, pepper, and herbs. Stir in the asparagus and the Parmesan if using.
- Heat the olive oil over medium-high heat in a 10-inch heavy nonstick skillet. Hold your hand above it; it should feel hot. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Do not allow the eggs to brown too much or they'll taste bitter. Remove from the heat, allow to sit in the pan for 5 minutes or longer, then carefully slide out onto a platter, or cut in wedges in the pan. Serve warm, room temperature, or cold.
