Asparagus Wrapped in Crisp Prosciutto image

Extremely easy and elegant appetizer. Asparagus spears are wrapped in a sheath of prosciutto, then baked until crispy. A great dish to make ahead, and bake just before serving.

1 tablespoon olive oil
16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

1 1/4 pounds thin asparagus spears, washed and dried
1 lemon, juiced
Extra-virgin olive oil, for drizzling
1/4 pound thinly sliced prosciutto di Parma

Steps:

  • For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
  • Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.
  • Remove bundles of several spears at a time from the pan and wrap with sliced prosciutto. Pile assembled bundles on a serving plate.

1 pound asparagus, preferably thick spears
3 to 3 1/2 ounces sliced prosciutto
1 to 2 tablespoons olive oil
Ground black pepper
Lemon zest, optional
Freshly grated Parmesan cheese, optional

Steps:

  • Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
  • Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
  • Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. Tug the prosciutto a little as you wrap it around the asparagus to give it tension. This helps to ensure that the prosciutto wraps around the asparagus tightly. Lay the wrapped asparagus spears on the lined sheet pan.
  • Drizzle the asparagus with 1 to 2 tablespoons of olive oil: Sprinkle a pinch of black pepper on top.
  • Bake the asparagus for 8 to 10 minutes: When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

1/3 pound thinly sliced prosciutto or deli ham
16 fresh asparagus spears, trimmed
1/2 cup seedless raspberry jam
2 tablespoons balsamic vinegar

Steps:

  • Cut prosciutto slices in half. Wrap a prosciutto piece around each asparagus spear; secure ends with toothpicks., Grill asparagus, covered, on an oiled rack over medium heat for 6-8 minutes or until prosciutto is crisp, turning once. Discard toothpicks., In a small microwave-safe bowl, microwave jam and vinegar on high for 15-20 seconds or until jam is melted. Serve with asparagus.

2 cups fresh cranberries
10 to 12 fresh small bay leaves
2 1/2 yards (1/8-inch-wide) gold ribbon or gold wire
Large yarn needle
2 bunches asparagus (about 2 1/2 pounds)
1/2 pound thinly sliced prosciutto, cut into 6x1-inch strips
1/2 cup spreadable cheese
Food-safe flowerpot (4 to 5 inches in diameter)
Caesar dressing

Steps:

  • Thread cranberries and bay leaves onto ribbon or wire, using needle, to make a garland.
  • Blanch asparagus and pat dry; chill about 1 hour. Brush prosciutto strips with thin layer of cheese. Tightly wrap prosciutto strip, cheese side in, around each asparagus stalk. Arrange in flowerpot.
  • Wrap garland around asparagus and pot. Serve with dressing.

  • Steam asparagus until just bendable, 3-5 minutes depending on your spear size. Cool quickly in an ice bath. Once cool, set on paper towels to drain and dry.
  • Open prosciutto package, and cut through the 6 slices lengthwise. Before separating one slice from the others, smear the first prosciutto slice with a couple of teaspoons of Boursin.
  • Peel from plastic slice separators and wrap prosciutto around an asparagus spear. Continue until all the prosciutto is used.
