1.5 Atkins Soy-Free Flour Mix
3 Baking Powder (Straight Phosphate, Double Acting)
0.33 Sucralose Based Sweetener (Sugar Substitute)
2 Unsalted Butter Stick
1 Sour Cream (Cultured)
2 Egg (Whole)

Steps:

  • Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe, you will need 1 1/2 cups.Preheat oven to 350°F.In a large bowl, combine flour mix, sucralose, and baking powder. Add sour cream, eggs and melted butter, and mix thoroughly with a spoon or spatula.Lightly coat mini muffin tins with non-stick vegetable oil spray (or use paper mini muffin cups).Spoon 1 rounded tablespoon batter into each mini muffin well and bake for 18-22 minutes or until done. Recipe makes 24 mini muffins. *Add berries if desired but remember to account for additional Net Carbs.

1/4 c flaxseed meal
1/2 tsp baking powder
1 tsp splenda (1/2 packet)
1 tsp cinnamon
1 large egg, slightly beaten
1 tsp butter, melted

Steps:

  • 1. Mix flaxseed meal, (I use milled flaxseed) baking powder, splenda, and cinnamon in a coffee mug or a single serving soufflé dish.
  • 2. add egg and melted butter
  • 3. microwave 1 minute or more until firm. (1 minute worked perfect for my microwave!)
  • 4. turn out and serve with butter, cream cheese or any other topping you like!! enjoy!
