2/3 cup panko breadcrumbs
1/2 cup milk
1/4 cup chopped fresh cilantro
1/4 cup ketchup
2 tablespoons barbecue sauce
2 tablespoons Dijon mustard
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
4 cloves garlic, minced
4 green onions, thinly sliced
2 large eggs
1 small Spanish onion, diced
1 small red bell pepper, diced
2 pounds ground beef

Steps:

  • Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.

2 eggs
½ cup chopped onion
½ cup Italian bread crumbs
½ cup salsa
¼ cup ketchup
¼ cup barbeque sauce
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon celery salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.
  • Bake in the preheated oven until golden brown on top, about 1 hour.

1 (10.75 ounce) can condensed cream of mushroom soup
1 (7 ounce) can diced green chile peppers, drained
1 cup sour cream
16 (6 inch) corn tortillas, cut into strips
10 ounces cooked turkey, diced
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.
  • Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.

1/4 cup chopped onion
1 Tbsp vegetable oil
1 cup uncooked long grain rice
1 Tbsp minced garlic
1 can (14.5-oz.) chicken broth
1 can (15-oz.) black beans, rinsed and drained
2 lb uncooked ground turkey
1 cup frozen whole kernel corn, thawed
1/2 cup salsa
cup 1/4 to 1/2 crushed tortilla chips
2 tsp taco seasoning
Cooking spray
Garnish with:
KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
Chopped tomato
Fresh cilantro
Sliced jalapeño
Lime wedges

Steps:

  • 1. In a saucepan cook onion in hot oil over medium heat 5 minutes or until tender. Stir in rice and garlic. Cook and stir 5 minutes, until rice is brown.
  • 2. Add broth. Bring to boiling; reduce heat. Simmer, covered for 10 to 15 minutes or until rice is tender. Stir in beans; cool slightly, about 20 minutes.
  • 3. Preheat oven to 350°F. Spray baking pan with cooking spray. In a bowl combine turkey, corn, salsa, chips, and seasoning. Stir in rice mixture. Lightly pat turkey mixture into a 10x5-inch loaf.
  • 4. Bake 1 1/4 to 1 1/2 hours, until cooked through. Let stand 10 minutes. Sprinkle with garnishes as desired.

3 tablespoons parsley, chopped
1 tablespoon butter, softened
1/2 medium onion, chopped
1 teaspoon lemon juice
1 teaspoon salt
1 teaspoon black pepper, freshly ground
1 cup chicken broth

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine all ingredients except the broth.
  • Form meat into a loaf and place in a lightly greased loaf pan.
  • Pour the broth over the top of the loaf and bake for 1 hour, basting periodically.
  • When finished, cut into slices and spoon the juices from the bottom of the pan over the meat.

2 slices bacon, diced
1 medium cooking onion, diced
1 green pepper, diced
1 stalk celery, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon salt
2 tablespoons hot sauce (i.e.: Tabasco, chipotles hot sauce recommended)
1/3 cup hot salsa
1 1/2 lbs ground chicken or 1 1/2 lbs ground turkey
1/2 cup breadcrumbs
1 egg, slightly beaten
1 cup grated monterey jack cheese or 1 cup cheddar cheese

Steps:

  • Cook the bacon in a medium skillet over medium-high heat, until golden.
  • Add onion, celery, green pepper, and garlic.
  • Cook until the onion is soft.
  • Stir in chili powder, oregano, salt and hot sauce.
  • In a medium bowl, combine contents of skillet with the salsa, ground meat, breadcrumbs and egg.
  • Spoon mixture in large loaf pan.
  • Place in preheated 350 F oven for 1 hour and 15 minutes.
  • Sprinkle cheese on top and return to oven until the cheese is melted.
  • Remove from oven let stand for at least 10 minutes.
  • Serve with Salsa and sour cream on the side.

  • In a large sauté pan, heat the olive oil over med-high heat and add the onions. Saute the onions until they begin to soften, add the bell pepper and continue cooking until the onions are translucent. Stir in the corn and continue cooking for approximately 3-4 minutes or until the vegetables begin to carmelize. Stir in the garlic, jalapeno and black beans and cook for 2 additional minutes. Add the chili powder and remove from the heat. Allow the mixture to cool to room temperature.
  • In a large bowl, gently mix together the ground turkey, cilantro, salt, pepper, egg, panko and vegetable mixture using your hands or a pastry blender. Be careful not to compact the mixture too much or the meat will be tough. Form the meat mixture into a loaf in a large baking pan and top with half the enchilada sauce coating the entire surface. Sprinkle the top with the cheese and bake for 45-50 minutes or until the meatloaf is cooked through.
  • Allow the meatloaf to rest for 10 minutes before serving. Slice into 1/2 inch pieces and serve. Serve with the remaining enchilada sauce and top with sour cream or greek yogurt if desired.
