7 egg whites
1 1/2 cups sugar
1 1/2 cups graham cracker crumbs
1 1/2 cups flaked coconut
1 1/2 cups chopped pecans
1 unbaked 9-inch pie shell (frozen is fine)
whipped cream
banana, sliced

Steps:

  • Preheat oven to 350 F degrees.
  • In a mixing bowl, combine egg whites (unbeaten) and sugar by hand; stir in graham cracker crumbs, coconut and pecans until well-blended.
  • Pour mixture into pie shell.
  • Bake 25 to 35 minutes, until glossy and set.
  • Do not overbake.
  • Let cool to room temperature before serving.
  • When serving, top with whipped cream and banana slices.

1 9-inch pie shell
1 1/2 cup flaked coconut
1 1/2 cup graham cracker crumbs
1 1/2 cup pecans, chopped
1 1/2 cup sugar
1 cup egg whites

Steps:

  • Cover pie shell with two layers of foil and bake in 450 degree F oven for 8 minutes. Remove foil and bake 4 to 5 minutes until golden brown. Cool on a wire rack.
  • Combine coconut, graham cracker crumbs, pecans and sugar in a large bowl. In another bowl, beat egg whites just until foamy; add to the coconut mixture. Mix well. Pour into prepared pie shell. Bake uncovered in 350 degree F oven for 35 minutes or until set.

Today, the Angus Barn is in the midst of the action between the RDU Airport, Raleigh and Durham. It is consistently ranked as one of the top 100 restaurants in the U.S.. When you pay your bill, this recipe is given to you on a beautifully decorated card. It is a most requested recipe from their restaurant. I have had the pleasure in indulging in this sinfully delicious dessert on several occasions, OK I'll be honest, EVERY TIME I go to Angus Barn LOL... It is incredibly delicious with the richness only chocolate can bring and let me tell you, your chocolate craving will be gone with the indulgence of this pie! 7 egg whites
1 ½ cups white sugar
1 ½ cups graham cracker crumbs
1 ½ cups chopped pecans
1 ½ cups flaked coconut
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Mix together the egg whites (unbeaten) and sugar. Stir in the graham cracker crumbs, pecans and coconut. Stir together by hand until well blended.
  • Pour into an unbaked pie shell. Bake in preheated 325 degree F (165 degrees C) oven until glossy and set (about 25-30 minutes). DO NOT OVERBAKE! Center should be gooey. Serve with sliced bananas and whipped cream.
