MIDWEST HAM CHOWDER

Steps:
- In a large saucepan or pot, combine water, potatoes, carrots, celery, and onion. Bring to boiling; reduce heat. Cover and simmer for 10 minutes.
- In a medium saucepan, melt butter or margarine. Stir in flour and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly.
- Add cheese to sauce and cook and stir until melted. Add cheese sauce to vegetable mixture. Stir in corn and ham. Heat through, but don't boil. Ladle into soup bowls and top with additional pepper, if you like. Makes 6 main-dish servings.

- Bring vegetables and water to boil in saucepan on high heat. Cover; simmer on low heat 10 min., stirring occasionally. Remove from heat. (Do not drain.) Set aside.
- Melt butter in separate large saucepan on low heat. Stir in flour; cook and stir 2 min. or until bubbly. Gradually stir in milk until blended. Bring to boil on medium heat, stirring frequently; cook 1 to 2 min. or until thickened, stirring constantly. Simmer on low heat 5 min.
- Add cheese; cook and stir 2 min. or until melted. Add corn and undrained cooked vegetables; cook 5 min. or until heated through, stirring occasionally. (Do not boil.)

AUNT DOT'S SHORTBREAD COOKIES
This is my Aunt Dorothy's recipe. She would always serve these melt-in-your-mouth,unbelieveable tasting cookies. Aunt Dot, also my Godmother, always made hers with peach preserves, as do I. They are easy to do and prep time includes chilling. My original copy is in pretty bad shape, so I wanted to post here for safe keeping, and even though she is gone now, I know she would be thrilled I posted her recipe for all to enjoy.

- Mix together, and chill several hours, or overnight.
- Roll into balls, and place on cookie sheet.
- Press thumb in center of each cookie and,.
- Fill with peach preserves.
- Bake 350 degrees.
- For 10 to 12 minutes.
- When cool can sprinkle powered sugar over tops if you like.

My Aunt Dot's Cornbread Dressing recipe is one of the best I have ever had. Last year at Thanksgiving, my family raved over this recipe and said make it just like this for Christmas! To save time, I assemble this the day before. Just remember, to cover well and take it out of the refrigerator about 30 minutes before cooking.

Steps:
- Boil chicken thighs until tender and shred into pieces when cool enough to handle.
- Melt butter and saute chopped onions and chopped celery until softened. Crumble corn bread (sometimes I use cornbread muffins from the bakery section of my local supermarket) and seasoned bread crumbs.
- Add the onions, celery, milk, soup, salt, pepper, and seasonings.
- Add chicken and chicken broth one cup at a time or until mixture has a smooth consistency.
- Beat eggs slightly and add to mixture.
- I usually do a taste test at this point and add more seasonings if needed. Bake in a large greased pan at 375 degrees for 30 to 40 minutes or until top is golden brown.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat oil in a medium saucepan over medium heat, and saute onion until tender and lightly browned.
- In a medium baking dish, mix onion, zucchini, garbanzo beans with liquid, tomatoes with liquid, wine, butter, garlic, basil, and bay leaf.
