3 pounds sweet potatoes (about 3 large), peeled and cubed
TOPPING:
3/4 cup all-purpose flour
3/4 cup packed brown sugar
3/4 cup old-fashioned oats
1/8 teaspoon salt
1/3 cup cold butter, cubed
FILLING:
1/2 cup sugar
1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. Sprinkle topping over potato mixture. , Bake, uncovered, until topping is golden brown, 40-45 minutes; let stand 10 minutes. Sprinkle with marshmallows. If desired, broil 4-5 inches from heat until marshmallows are puffed and golden, 30-45 seconds.

3 pounds red potatoes, peeled and sliced 1/4-inch thick
Salt
Vegetable oil, to coat pan
1 pound lean ground beef
1/2 onion, chopped
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
Black pepper
2 cups milk
2 cups grated sharp Cheddar
1/2 cup unseasoned dry breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
  • In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

This recipe belongs to my ex-husband's aunt (Aunt Marion). It was my favorite dish she prepared for every Christmas and Easter dinner. It wasn't right if this dish was missing from the meal! The Jack Daniel's Whiskey gives the casserole a nice taste but the alcohol cooks out it. I don't even like sweet potatoes but I love this dish! I've met a lot of people who said the same thing! I'm sure it will be your favorite way to eat sweet potatoes too!

4-6 - raw sweet potatoes
1 stick(s) butter or margarine
1 cup(s) milk
1 teaspoon(s) ground cinnamon
1/2 cup(s) brown sugar, firmly packed
1 tablespoon(s) jack daniels whiskey
TOPPING
1 cup(s) pecans, in pieces
1/2 stick(s) butter or margarine, softened
1/2 cup(s) brown sugar (firmly packed)
2 cup(s) corn flakes (crushed)

Steps:

  • Pre-heat oven to 350 degrees. Trim ends off sweet potatoes and cut in half and boil in a pan of lightly salted water until tender. Allow to cool and slide off skins and mash until smooth and creamy.
  • Add butter, milk, cinnamon, and brown sugar into mashed sweet potatoes and Jack Daniels whiskey. Stir until well blended.
  • Pour mixture into a well-greased 13"x9" baking dish. Place into a pre-heated oven for 30 minutes or until bubbly.
  • Chop up pecans and place in a bowl. Mix in crushed cornflakes, brown sugar and softened butter. Mix until crumbly and sprinkle over the top of the potatoes. Put back into oven for 15 min. Cool and serve.

This recipe is from Trisha Yearwood's cookbook and she has made it on her show. It is her mom's recipe. The casserole has mild flavor since it is from long ago so if you require a lot of seasoning kick it up a notch in your own way. It is a rich casserole with potatoes and ground beef. Perfect to whip up for a meat and potatoes guy, a cold night's dinner or anytime you want a throwback to an easier time. Kids and adults enjoy it. The hardest part is peeling all the potatoes but other than that it is easy. Serve with a vegetable or salad. Enjoy! ChefDLH

1/2 cup flour

Steps:

  • Mix first seven ingredients and spread in a 13" x 9" baking dish.

  • Bake 25 minutes in 350 degree oven.

1 egg, separated
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sweet potatoes, milk, butter, cinnamon, salt, and pepper together in a bowl.
  • Beat egg yolk in a bowl until smooth; mix into sweet potato mixture. Beat egg white in a separate bowl until frothy; fold into sweet potato mixture. Transfer sweet potato mixture to a 9-inch square baking dish; top with marshmallows.
  • Bake in the preheated oven until heated through and marshmallows are golden brown, 20 to 30 minutes.
