2 cups milk
1 cup water
1/2 tablespoon butter
1/3 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/3 cup raisins

Steps:

  • Mix all ingredients except raisins in greased casserole dish.
  • Bake 300°F for ONE hour.
  • Reduce heat to 250°F for ONE and ONE HALF hours.
  • Add raisins half hour before done.

This recipe is very easy and it a recipe passed down 3 generations. It tastes great when it's warm, It's easy to change for people who want to use splenda.Must use Long Grain Only!!

1 cup long grain rice
250 ml evaporated milk
1 -2 tablespoon butter
1 cup sugar
1 cup water

Steps:

  • Boil rice until done.
  • Place cooked rice in a baking dish.
  • Add milk, water, butter, (add as much as you like I do 2 tbsp ) sugar.
  • Stir all of it together and bake until done about 1 hr at 350 degrees.
  • The water measurement is done with the can from the milk so 1 cup is a guess.

2 large eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
2 cups scalded milk
1 1/4 cups cooked and cooled long grain rice (leftover is perfect, but do not use instant rice, If using short grain rice, use only 1 cup)
1/2 cup raisins
1 teaspoon vanilla
1 dash cinnamon

Steps:

  • In a large bowl, combine eggs, sugar and salt.
  • Gradually whisk hot scalded milk into egg mixture.
  • Stir in rice, raisins and vanilla.
  • Pour into a greased quart casserole dish.
  • Set casserole into a larger ovenproof dish.
  • Fill larger dish with hot water until water reaches halfway up the casserole dish (Bain Marie Technique).
  • Bake@ 325 for 90 minutes, or until knife pulls out clean.

1 1/2 cups cooked rice
2 1/2 cups milk
3 large eggs, lightly beaten
3/4 cup sugar
3/4 cup raisins
1 teaspoon vanilla extract
1/4 teaspoon salt
3/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F. Spray bottom and sides of a 2 quart baking dish with cooking spray to prevent sticking.
  • In a large bowl, stir together all ingredients.
  • Spoon into prepared 2 quart baking dish.
  • Place baking dish in a large pan; pour water into the pan to a depth of 1-inch or until water reaches bottom of baking dish.
  • Bake for 1 1/2 hours, or until lightly browned and set.
  • Cool slightly and spoon into serving dishes.

1-1/2 cups cooked rice
1/4 cup raisins
2 large eggs
1-1/2 cups whole milk
1/2 cup sugar
1/2 teaspoon ground nutmeg
Additional milk, optional

Steps:

  • Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

2 cups whole milk
1/2 cup long grain rice (Uncle Ben's)
1/2 cup raisins, plump (soaked in hot water for 5 minutes)
1/4 cup butter or 1/4 cup margarine
3 eggs, beaten
1/2 cup granulated sugar
2 cups whole milk
1 teaspoon vanilla
1/2 teaspoon salt
ground nutmeg
ground cinnamon
light cream or heavy milk

Steps:

  • In a heavy medium sized saucepan, bring 2 cups milk, uncooked rice, and raisins to a boil; reduce heat. Cover and cook over very low heat, about 15 minutes or until rice is tender. Remove from heat; stir in butter or margarine till melted.
  • In a mixing bowl stir together the eggs, 2 cups milk, sugar, vanilla and salt. Gradually, stir in the rice mixture into egg mixture. Pour into a 10x6x2' pan or baking dish. Bake in a 325*- for 30 minutes. Stir well; sprinkle with nutmeg and cinnamon. Bake for 15-20 minutes more or until knife in center comes out clean.
  • Serve warm or chilled with cream.

One of my favorite comfort foods when I was growing up, was my Aunt's baked rice pudding! Here is her recipe. Cook time does not include the 30 minutes for cooking the rice, or the standing time.

4 eggs, separated
3/4-1 cup granulated sugar
4 cups whole milk (or 2 cups whole milk and 2 cups evaporated milk)
2 cups cooked and drained white rice
2 tablespoons butter, melted
1 cup raisins
1/4 teaspoon ground nutmeg
1/2-1 teaspoon ground cinnamon
3 -4 tablespoons confectioners' sugar (10x powdered sugar)

Steps:

  • In a small bowl, combine sugar, nutmeg and cinnamon, mix until well blended, and set aside.
  • In a large (2 quart) bowl, beat egg yolks until light colored.
  • Add sugar and spice mixture and beat well.
  • Add milk and beat well.
  • Add cooked rice and mix well.
  • Stir in melted butter and raisins.
  • Pour mixture in to a buttered 3-quart ovenproof casserole dish or baking pan.
  • In a small bowl, beat egg whites until rounded peaks form.
  • Beat Confectioner's sugar into egg whites until whites are glossy and stiff.
  • Fold beaten egg whites in to rice mixture.
  • Bake at 325°F for 50-60 minutes.
  • Remove from oven and let stand until warm (20-45 minutes).
  • Stir pudding until smooth and well mixed.
  • Chill (or serve warm).
