This comes from a rich German heritage. Grandma always made the best "apfel" kuchen. Her recipes were always simple, but tasted great!

4 -5 cups baking apples, Granny Smith (or other)
1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg
2 tablespoons milk
2 tablespoons unsalted butter
3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

½ cup milk
¼ cup shortening
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
5 apples - peeled, cored, and sliced, or more to taste
1 cup white sugar
¼ cup butter, melted
¼ cup all-purpose flour
4 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
  • Spread apples over the dough on the baking sheet.
  • Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.
  • Bake in the preheated oven until apples are tender and topping is golden, about 40 minutes.

2 cups all-purpose flour
1/2 cup sugar
1/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
1/2 pound (2 sticks) unsalted butter, cold and cut into pieces
1 pound cream cheese, at room temperature
3/4 cup sugar
1 teaspoon vanilla extract
1 egg, at room temperature
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
3 Granny Smith apples, peeled, if desired, cored, and thinly sliced

Steps:

  • Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
  • Lower the oven temperature to 400 degrees.
  • To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
  • Place the sugar and cinnamon in a small bowl and mix to combine.
  • Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.

6 large tart apples, peeled and sliced
1 cup sugar, divided
2 teaspoons ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup milk
1 tablespoon butter
VANILLA SAUCE:
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups cold water
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Sprinkle remaining cinnamon-sugar over apples. , In a small bowl, combine the flour, baking powder and remaining sugar; beat in the milk and butter until blended. Drop by tablespoonfuls over apples; sprinkle with reserved cinnamon-sugar. Bake at 350° for 35-40 minutes or until golden brown. Remove to a wire rack., Meanwhile, in a saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; add butter and vanilla. Serve with warm kuchen.

2 -3 apples (pink lady, braeburn, or honeycrisp)
2 sheets puff pastry, thawed
6 tablespoons apricot preserves
4 tablespoons water
2 tablespoons lemon juice (juice of half a lemon)
2 tablespoons brown sugar
2 tablespoons unsalted butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Remove puffed pastries from freezer and thaw according to package.
  • Preheat the oven to 375°F. Grease a standard muffin tin.
  • Slice the apples in half from top to bottom. Remove the core ends and then scoop out the core in the center. Using a very sharp knife or mandolin on the second setting, slice paper thin 1/8-inch slices and immediately sprinkle and toss in lemon juice prevent browning. Toss in the butter, sugar, cinnamon, and nutmeg.
  • Microwave the slices for 45 seconds, or until soft and pliable enough to mold.
  • When pastries are thawed, place them flat on a floured surface. Roll the pastries out with a rolling pin the flatten just a little more in to a 9"x12" rectangle. Cut each pastry into six 2-inch wide slices.
  • In a small bowl, combine the preserves with 2 tablespoons of water. Microwave for 30 seconds if it was refrigerated.
  • Spread preserves evenly over each strip of dough. Arrange about 10 apple slices lengthwise in a straight line, overlapping slightly, on a strip of dough. Fold up the bottom part of the dough and begin tightly rolling the dough to form the rose shape. Press the edge to seal and place in the muffin tin. Repeat for all the pieces of pastry until have 12 apple roses.
  • Make ahead: at this point the unbaked assembled roses can be covered and stored in the fridge for up to 1 day before baking as directed. Pastries are best served the day they are baked but can be stored in an airtight container and rewarmed in a 300°F oven for 5 to 10 minutes, or until warmed through and flaky again.
  • Place a pan of water on the bottom rack of oven so the bottom of pastries do not burn.
  • Bake for 40 minutes, or until golden and cooked through. Sprinkle with powdered sugar, if desired.

Dough:
Gala apples (about 9 medium sized)
2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 cup sugar
3 T melted Crisco
1 egg beaten in 1/2 cup milk
Custard:
7 eggs & can evaporated milk mixed together
1/2 cup sugar
Cinnamon

Steps:

  • Preheat oven to 400 degrees. Peel and thinly slice apples. Place slices in a bowl of water with fresh fruit or whatever you use so the apples won't turn brown. Precook apples in the microwave. About 2 cups of slices in a bowl with 1 cup of water. Cover and heat for about 6-8 minutes. They will be done when you can put a fork in and they are soft but not mushy. Like a cooked potato. Repeat this process until all apples are precooked. Put in strainer and run cold water over so they stop cooking and set aside. Dough: 2 cups flour 1/2 tsp salt 2 tsp baking powder 1/2 cup sugar Mix all these ingredients together. Add 3 T melted Crisco. Beat 1 egg in 1/2 cup milk. Add each to dry mixture. Place on a floured board and knead dough until all thoroughly mixed together. It will be a little lumpy. Roll out dough and place in a jelly roll sized greased pan. Bring it up the sides and trim at the top. You can either flute it or just trim at top. Custard: Beat 7 eggs and a can of evaporated milk together. Add 1/2 cup sugar and beat in with eggs an milk mixture. Place all the apple slices in a single layer side by side in dough lined pan. Pour the custard mixture over top. Sprinkle generous amount of cinnamon on top. Pan will be filled to the top. Place in a preheated oven 400 degrees for 35-40 minutes or until toothpick comes out clean. You can eat this warm or cold. Keep refrigerated.
