- Cut ribs into serving-size pieces; place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes., Meanwhile, in a large saucepan, combine the remaining ingredients. Simmer, uncovered, for 20 minutes, stirring occasionally. Drain ribs; pour sauce over all. , Cover and bake for 30-40 minutes or until tender. Uncover; bake 30 minutes longer, basting several times with sauce.

FOOLPROOF RIBS WITH BARBECUE SAUCE
Ina Garten's secret to perfect grilled ribs: Cook them in the oven first! "There are two great benefits of this method. First, instead of fussing with the heat of the coals, all I have to do is put the ribs in the oven, set a timer and forget about them. Second (and even better): I can make them ahead! Early in the day, I'll roast the ribs, and just before serving, I'll fire up the grill and barbecue them. All the fun of cooking outdoors and I never need to call 911!"

- Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
- Place the ribs on the sheet pan meat-side up and sprinkle them with 2 teaspoons salt and 1 teaspoon pepper. Pour the barbecue sauce generously on each rack and cover the ribs loosely with aluminum foil. Bake for 1 1/2 hours for baby backs and 1 3/4 hours for St. Louis ribs, until the meat is very tender when tested with a fork. As soon as the ribs are out of the oven, spread them generously with additional barbecue sauce. Grill right away or refrigerate to grill later.
- About 40 minutes before you want to serve, heat a charcoal grill with a layer of hot coals or heat a gas grill to medium-high heat. After the charcoal turns gray, brush the cooking grate with oil to keep the ribs from sticking. Place the ribs on the grill ribs-side down, put the lid on top (be sure both vents are open!) and grill for 5 minutes. Turn the ribs meat-side down, put the lid back on and grill for another 4 to 5 minutes, until nicely browned. Place on a cutting board and cover tightly with aluminum foil and allow the ribs to rest for 10 minutes. Cut into ribs and serve hot with extra barbecue sauce on the side.
- Heat the oil in a large saucepan over low heat, add the onions and cook for 10 to 15 minutes, until the onions are translucent but not browned. Add the garlic and cook for one more minute. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin and pepper flakes.
- Bring to a boil, then lower the heat and simmer uncovered for 30 minutes. Use immediately or pour into a container and refrigerate for several weeks.

- Line 2 rimmed baking sheets with foil, and place a wire rack on top of each. Transfer 2 racks of ribs to each wire rack, meat side up.
- Using a sieve, sift sugar, paprika, salt, cocoa, cayenne, and cumin together into a small bowl. (Use the back of a spoon to break up any lumps and to press ingredients through a sieve.) Stir to combine.
- Sprinkle spice mixture evenly over both sides of each rack of ribs. Lightly rub mixture into the ribs to coat completely. Cover with plastic wrap. Refrigerate on racks on sheets at least 20 minutes (or up to 2 hours for maximum flavor).
- Preheat oven to 350 degrees, with racks in upper and lower thirds. Cook ribs on racks on sheets, switching positions of baking sheets about halfway through, until meat pulls away easily from the bones, 1 1/2 to 2 hours. Let cool completely. Refrigerate, covered, until ready to finish cooking, up to 2 days. (If finishing cooking immediately, raise oven temperature to 425 degrees and continue with step 6.)
- Preheat oven to 425 degrees. Let ribs stand at room temperature 20 minutes.
- Using 2 cups reserved barbecue sauce, brush both sides of ribs. Cook ribs on wire racks set over rimmed baking sheets lined with foil until sauce is slightly caramelized and ribs are heated through, about 15 minutes. Let stand 5 minutes; serve with more barbecue sauce.
AUNT ROSIE'S OVEN-BARBECUED SPARERIBS

- Preheat oven to 400 degrees.
- Sprinkle spareribs with salt and pepper. Arrange slabs in each of two large baking dishes. Bake one hour in oven. Turn ribs and bake 10 minutes longer. Pour off fat.
- Meanwhile, heat the butter in a large saucepan and add the garlic and onions. Cook, stirring, until onions are wilted. Add the ketchup, soy sauce, chili powder, Tabasco sauce, vinegar and sugar. There should be about three cups of sauce. Bring to a boil and let simmer about five minutes.
- Brush each slab of ribs on the underside with sauce and return to oven, brushed side up. Bake 30 minutes, brushing every 10 minutes on the same side with the sauce.
- Turn the ribs. Brush generously with all the remaining sauce. Return to the oven and bake 30 minutes.
- Cut the spareribs into individual rib servings. Serve hot or cold.
OVEN BAKED SPARE RIBS
This is an award-winning recipe for St. Louis Spare Ribs from Historic BBQ. I'm going to walk you through every step of the process. It takes a while - but deliciousness takes time!

- 1. Start by finding the tallest bone, normally the 4th one in and cut straight across to remove any extra cartilage
- 2. Remove the flap of meat on the backside of the ribs - it will prevent the ribs from cooking evenly.
- 3. Trim off the first bone of the thick end and any ribs on the thin end that are too thin. This should leave you with 10 bones.
- 4. Remove the membrane from the underside of the ribs. The easiest way to do this is to bend the rack of ribs over one hand and use a paper towel to pull the membrane off with the other hand. The ribs should be COLD at this point - if they're warmed up at all - please put back in the fridge. This helps make it easier to pull off.
- 5. If there is any excess fat between the bones use a spoon to gently remove it, being careful not to scrape the bones.
- 6. On the front side of the ribs remove any large deposits of fat and silverskin with a boning knife.
- 7. Season both sides generously with Historic Red
- 8. Line a rimmed cookie sheet with foil and place an oven-safe cooling rack on the cookie sheet. Lay the ribs, meat side up on the rack. Put the ribs in the oven at 300.
- 9. Check the ribs every 30 minutes, spritz with apple juice if they look dry.
- 10. After 2.5 hours - it's time to wrap the ribs! On a sheet of foil, put down 1/2 stick of butter (sliced), a line of honey and 1/2 the brown sugar. Lay the ribs meat down on the foil, then repeat the process on the back side. Tightly wrap the ribs in foil and add apple juice before sealing.
- 11. Remove the cooling rack from the cookie sheet and place the wrapped ribs on the sheet.
- 12. Bake in the oven at 300 for an additional 2-2.5 hours.
- 13. The ribs are done with a toothpick or thermometer goes into the meat with no resistance.
- 14. Unwrap the ribs and sauce with History Sweet Zing.
- 15. Return to the oven on Low Broil for 3-5 minutes - watch closesly!
STU'S BAKED BBQ RIBS

- Preheat the oven to 250 degrees F. Line a sheet pan with foil.
- In a small bowl, mix together the brown sugar, paprika, black pepper, garlic powder, onion powder and 1 teaspoon salt.
- Lay the ribs onto the prepared sheet pan and season on both sides with salt. With the meat side of the ribs face down, brush with half of the mustard and sprinkle over half of the seasoning mix. Turn the ribs over, so the meat side now faces up, and use the remaining mustard and seasoning mix on the other side. Bake the ribs meat-side up until they are very tender, 2 to 2 1/2 hours.
- Remove from the oven and spread the ribs with half of the BBQ sauce. Return the sheet pan to the oven for another 30 minutes, allowing the sauce on top to become sticky and delicious.
- Transfer the ribs to a cutting board and allow them to rest for a few minutes before slicing into individual ribs. Serve with the remaining BBQ sauce on the side.

- Adjust oven rack to upper-middle position, and preheat oven to 250.
- Mix sugar, paprika, pepper, garlic powder and salt in a small bowl.
- If using liquid smoke, mix mustard and liquid smoke in a small bowl.
- Brush both sides of each slab with mustard, then sprinkle both sides with the dry rub.
