FRIED PIES

Steps:
- To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
- To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
- Spoon a tablespoon or so of filling into the top half of one of the rectangles.
- Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
- Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
- Sprinkle with powdered sugar and serve.
RUTH'S GRANDMA'S PIE CRUST

- In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together with a pastry cutter until crumbly.
- In a small bowl, mix egg with water. Blend into flour mixture. Chill in refrigerator until ready to use.

- Stir the cracker crumbs and water together in a mixing bowl. Let stand 1 minute to soften the crackers. Add the crabmeat, egg, mustard, and mayonnaise. Season with Worcestershire sauce, seafood seasoning, salt, and black pepper; stir until evenly mixed.
- Heat the vegetable oil in a large skillet over medium heat. Form the crab mixture into patties 3/4-inch thick. Cook in the hot oil until golden brown on each side and hot in the center, about 2 minutes per side. Drain on a paper towel-lined plate before serving.

- In a 6-quart Dutch oven, bring 3 quarts water to a rolling boil. Peel sweet potatoes, then cut into small pieces. Place potatoes into boiling water; return to a boil and cook until fork tender, about 10 to 15 minutes. Drain and set aside. Preheat oven to 350 degrees F. Using a potato masher or electric hand mixer, cream butter into sweet potatoes. Add eggs and milk. Combine sugar with cornstarch; add to potato mixture along with vanilla and lemon flavoring. Pour into pie shells. Bake until center is set and top is golden brown, about 45 to 50 minutes. Yield: 2 deep dish pies
AUNT RUTH'S SOUR CREAM POUND CAKE WITH LEMON GLAZE
This pound cake with lemon glaze came from my great aunt's collection. Her secret was doubling the amount of sour cream. I have used this cake as a basis for creating other pound cakes.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 12-cup fluted tube pan (such as Bundt®); sprinkle with 2 teaspoons sugar.
- Cream 3 cups sugar and butter together in a large bowl until fluffy; add vanilla extract and 1/2 teaspoon lemon extract. Add eggs one at a time, beating well after each addition.
- Sift flour and baking soda together in a medium bowl; add to butter mixture alternately with sour cream. Spoon into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 1 hour and 45 minutes to 2 hours. Let cool in the pan for 15 minutes. Remove from the pan to a wire rack; cool completely, 30 minutes to 1 hour.
- Combine confectioners' sugar, lemon juice, 1/2 teaspoon lemon extract, and food coloring in a small bowl. Drizzle glaze over the cooled cake.

AUNT HELEN'S FRIED PEACH PIES
If you grew up watching your mom make fried pies, then these fried peach pies will bring back memories. Aunt Helen's are delicious! The sweet, warm, peach center is the perfect match for the soft and crunchy biscuit crust. We sprinkled ours with a little bit of powdered sugar to make it special. We can't wait to try other fillings.

Steps:
- Combine the first four ingredients in 2 qt heavy sauce pan. Bring to boil. Stirring occasionally.
- Boil for about 30 minutes on med/high heat then reduce heat to medium. Stirring occasionally.
- Continue to boil on medium heat, stirring occasionally, for about 30 more minutes. As peaches become tender and syrup begins to thicken, mash and cut peaches with a spoon until they become like pie filling.
- Roll out biscuits on a floured surface to about a 5 inch oval shape (I use parchment because it won't stick).
- Fill the dough with about 1 1/2 tablespoon of cooled filling. Fold over and crimp and seal edges.
- Fry in skillet with about 1/2 inch deep (hot) Crisco. Fry on med/low heat 2-3 minutes on each side until golden brown. Fry 2-3 pies at a time.
- Remove to absorbent paper towels.
- *Note: May use 1/4 cup less sugar if you don't like them as sweet.
AUNT RUTH'S PECAN SAND TARTS
Once I was in Aunt Ruth's kitchen and she was trying to get me to eat something. I wasn't hungry, but she kept offering - can I make a sandwich? want some soup? etc. She couldn't help herself. So I teased her and she laughed. And then, without even realizing it, she asked, "Do you want a cookie?" Aunt Ruth's cookies are legendary. I said yes. Beware - this recipe makes a lot of cookies (number depends on how big you form them). You will eat a lot of them.

- Cook& stir over medium heat until thickened.

COUSIN RUTH'S PIE

Steps:
- Cut butter into pieces. Add flour and vanilla. Work with fingers until dough resembles coarse cornmeal. Handle as little as possible. Add water. Push dough into a ball. Flour lightly. Wrap in wax paper. Refrigerate at least an hour, but preferably overnight.
- Remove dough from refrigerator. Peel, core, quarter apples, then slice into eighths. Divide dough in half. Roll one half between lightly floured pieces of waxed paper. (You may have to flour dough so it doesn't stick.) Roll into circular shape. Repeat with second half.
- Grease 9-inch pie plate.. Set dough round on plate. Let it drape over edge.
- Add sugar, cinnamon and lemon juice to taste to the apples. Mound apples in center of pie plate. Dot with butter. Place second piece of pastry on top. Roll edges of dough together and crimp with knife handle.
- Cut hole in center to vent steam. Prick top with fork. Bake at 450 degrees for 15 minutes. Reduce heat to 350, bake from 20 to 35 minutes longer.

- Mix and sift flour, salt and baking powder, and set aside.
- Beat eggs until creamy.
