4 uncooked bratwurst links, casings removed
1 medium green pepper, chopped
1 package (20 ounces) refrigerated diced potatoes with onion
1 cup fresh or frozen corn, thawed
1/4 cup chopped roasted sweet red pepper
1/4 teaspoon salt or 1/2 teaspoon seasoned salt
3/4 cup shredded Colby-Monterey Jack cheese

Steps:

  • In a large nonstick skillet, cook bratwurst and green pepper over medium heat just until sausage is no longer pink, breaking up sausage into large crumbles, 4-6 minutes., Stir in potatoes, corn, red pepper and salt; spread evenly onto bottom of skillet. Cook 10 minutes without stirring. Turn mixture over; cook until potatoes are tender, 7-8 minutes longer. Sprinkle with cheese.

Homemade Bratwurst image

The following recipe will make about 5 pounds of great bratwurst at a fraction of the cost of buying it at the grocery store-give it a try! Try serving bratwurst burgers the next time you grill. Condiments range from the traditional-Kraut and a good German Mustard, to my favorite way which is mayo, German mustard, ketchup, thick slices of tomato and leaf lettuce on a crusty, grilled bun. Delish! Cooking time is the amount of time mixture sits in the fridge.

Number Of Ingredients 14

3 lbs pork (I use butt as the fat ratio is perfect)
2 lbs lean beef
2 eggs
1 cup beer
1 1/2 teaspoons black pepper, ground
1 teaspoon cayenne pepper
1 teaspoon paprika (I use smoked)
1/2 teaspoon nutmeg
1 tablespoon dry mustard (I use Colemans)
1 tablespoon coriander
1 teaspoon sage, ground
5 teaspoons salt
2 teaspoons sugar, white
2 teaspoons onion powder

Steps:

  • Cut the pork and beef into 2 inch cubes.
  • Grind through a 1/4 inch grinding plate.
  • If you do not have a meat grinder you can pulse it in your food processor in SMALL batches.
  • In a small mixing bowl beat eggs and beer together until well blended.
  • Add dry ingredients.
  • In a large mixing bow combine the ground meat and wet mixture until well incorporated.
  • Cover with plastic wrap and refrigerate 2 hours, up to 24.
  • The longer the better.
  • At this point you can either stuff into casings or wrap in 1 pound packages which is what I do, then freeze.

This is a vastly cut down version of the recipe my Grandmother and Great Grandmother used. The oil of lemon is my addition. it replaces very finely grated lemon zest. I sometimes omit the casings and use this as a very mild breafast sausage.

1 cup fresh breadcrumb
2 teaspoons salt
2 eggs, beaten
1/4 teaspoon ground marjoram
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
1 teaspoon parsley flakes
1 teaspoon white pepper
3 lbs ground pork, 35% fat
1 drop lemon oil
3/4 cup milk
1 medium sausage casing, prepared

Steps:

  • Combine spices and bread crimbs.
  • Mix thoroughly.
  • Mix milk, beaten eggs and oil of lemon together.
  • Thououghly mix bread crumb mix with the ground pork being careful not to have any"hot spots" This can be done by hand but a heavy duty stand mixer makes it a lot easier.
  • Pour liquid over the meat mix and let sit about 10 minutes.
  • Then mix.
  • Loosely stuff medium saussage casings and tie off in 5 inch legnths.
  • Store in freezer.
  • Steam, simmer, bake, pan fry or grill.

Number Of Ingredients 7

1 ½ tbsp corn, sunflower or vegetable oil
400g smoked bacon lardon (or use cooked ham)
1 onion , cut into chunks
500g cooked potato (preferably waxy ones), cold and cut into small chunks
1 tsp caraway seed
1 ½ tsp hot, sweet paprika (if you can't find this use sweet paprika mixed with a pinch of chilli powder)
small handful parsley , roughly chopped

Steps:

  • Heat the oil in a large frying pan, then fry the bacon and onion together for 10 mins until the bacon is golden. Lift out of the pan onto a plate, then add the potatoes and fry for 10 mins more until golden.
  • Tip in the caraway and paprika, season well, then fry for another min, stirring to release their fragrance.
  • Return the bacon and onion, taste for seasoning, then add the parsley. Serve hot.
