- Preheat oven to 190 deg C (375 deg F).
- Cream butter and sugar until light, beat in eggs gradually and fold in flour and salt with metal spoon, turn into greased ring mould cake tin (bundt) and bake 25 minutes.
- Cool cake and after it is cool return to mould ready for pouring in coffee - sweeten coffee and flavour with rum and slowly pour over cake whilst in tin.
- Turn onto plate and cover with whipped cream flavoured with vanilla and decorate with toasted slivered almonds.

BREAD MACHINE YEAST COFFEE CAKE (ABM)
This starts in the bread machine and bakes in the oven. All cake ingredients should be at room temperature, except for the milk.

- Add all cake ingredients to bread pan.
- Select "Dough" setting on your machine and press start.
- Grease a 9 inch round pan or an 8 x 8 inch square pan.
- After cycle is through (about 90 minutes), remove dough and pat dough into prepared pan.
- Topping: Drizzle melted butter over dough.
- Mix together sugar, cinnamon and nuts; sprinkle over butter.
- Cover and let rise in a warm place for 30 minutes.
- Preheat oven to 375* and bake cake for 20-25 minutes, until golden.
- Cool 10 minutes in pan on wire rack.
- Drizzle with optional glaze, if desired.
- Combine all glaze ingredients in a small bowl and whisk until smooth.
- Spread or drizzle glaze over slightly warm cake.
EASY CAKE BREAD(ABM)
This bread reminds me of Hawaiian Bread when I use a yellow cake mix and vanilla or almond extract. The possibilities are endless.......try chocolate, lemon, caramel, etc.

AUSTRIAN COFFEE CAKE (ABM)
This delicious yeast coffee cake can be made with either cherries, plums or apricots. The almond paste is quite difficult to grate, as is suggested in the original recipe, so I cut it up into little chunks and interspersed it between the pieces of fruit. Rising time is included in the preparation time.

Steps:
- To make the dough, put the ingredients into the bowl of your bread machine in the order listed and set on the dough setting.
- When the dough is ready, roll it out on a lightly floured surface to a 16" square.
- Arrange the cherries and almond paste on top and sprinkle with the cinnamon.
- Carefully roll up the dough, as if you were making a jelly roll, gently stretching it until it is around 22" long.
- Twist the roll into a loose coil and place in a 9" non-stick springform cake pan.
- Cover the pan with lightly oiled plastic wrap and leave in a warm place for about 30 to 45 minutes, to allow the dough to rise.
- Meanwhile, preheat the oven to 375 degrees F.
- Brush the top of the risen dough with the egg white and sprinkle with the demerara sugar and almonds.
- Bake for 30 to 35 minutes or until the cake is golden and risen.
- Let it cool for a few minutes in the pan, then transfer the cake to a wire rack to cool.
- Serve warm or cold, cut into wedges.

- Preheat the oven to 170°C/fan oven 150°C/325°F/Gas mark 3. Line two 20cm round sandwich tins with baking paper. Beat together all of the ingredients except for the coffee and walnuts. Ensuring that your butter is soft will make this task easier. Add the coffee and walnuts and beat further until the mixture is well combined.
- The mixture should drop from the spoon when tapped on the bowl. If it doesn?t add a little more hot water. Divide the mixture evenly between the two prepared tins and bake for approximately 30 minutes or until a skewer comes out clean. Mine took 40 minutes.
- While the cakes are cooking, make the syrup: place the coffee and sugar in a heatproof bowl and then add the boiling water. Stir until both the coffee and sugar have dissolved. You will need to stir briskly to ensure this.
- When the cakes are cooked, leave in the tins, on a wire rack. Prick them all over while they are still hot ,and spoon the syrup over both sponges, trying to distribute it as evenly as possible.
