AVOCADO OIL VINAIGRETTE
Steps:
- In a small mixing bowl, whisk together the mustard and vinegar. Pouring slowly, add a thin stream of avocado oil to the bowl, whisking with the other hand. Continue to whisk until all of the oil has been poured into the bowl and the ingredients have come together homogeneously. Season with salt and pepper.
- Serve over your favorite green salad.

This is a delicious salad dressing for an uncomplicated salad - too many tastes in the salad will spoil the dressing. The ingredients are quite expensive but worth it, and you don't use too much. For a low carb version, use sweetener instead of sugar; it works just as well.

BERRY AVOCADO SALAD WITH CREAMY RASPBERRY POPPYSEED DRESSING
Steps:
- In a large salad bowl, combine spinach, berries, avocados, pine nuts and feta cheese.
- In a food processor, combine mayonnaise, milk, sugar, cider vinegar, poppyseeds and raspberries. Pulse until blended and smooth.
- Pour half over the salad and toss to coat. Add more dressing if needed.
- Serve immediately and garnish with with more feta cheese and pine nuts if desired and enjoy!

- Whisk raspberries, rice vinegar, garlic, sugar, sea salt, and white pepper together in a bowl. Slowly drizzle avocado oil into raspberry mixture, whisking rapidly, until dressing is thick and creamy. Let sit until flavors develop, about 10 minutes.
