Avocado toast is creamy, crisp and so satisfying. It's a delicious and simple breakfast, snack or light meal! It's best consumed immediately, since the avocado browns over time. Recipe as written yields 1 slice of basic avocado toast; multiply as necessary.

1 slice of bread (I like thick-sliced whole-grain bread best)
1/2 ripe avocado
Pinch of salt
Optional: Any of the extra toppings suggested in this post

Steps:

  • Toast your slice of bread until golden and firm.
  • Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it's as smooth as you like it. Mix in a pinch of salt (about 1/8 teaspoon) and add more to taste, if desired.
  • Spread avocado on top of your toast. Enjoy as-is or top with any extras offered in this post (I highly recommend a light sprinkle of flaky sea salt, if you have it).

There are two secrets to these simple avocado toasts: rubbing the bread with garlic for just a hint of flavor and adding a pop of crunchy sea salt on top.

One 8-ounce ripe avocado, halved, pitted and peeled
Fine salt and freshly ground black pepper
4 slices whole grain or whole wheat bread
1 clove garlic, peeled and halved
2 tablespoons extra-virgin olive oil or unsalted butter, softened
Flaky sea salt, for serving
Crushed red pepper flakes, optional

Steps:

  • Mash the avocado with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.
  • Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

Number Of Ingredients 16

1.5 cups cake flour
1 cup sugar
2 teaspoons baking powder
heaping 1/4 teaspoon flaky sea salt
7 tablespoons butter
1 tablespoon oil (coconut, olive or canola all work)
1/2 cup + 2 tablespoons buttermilk (divided (I use almond milk with a splash of apple cider vinegar))
3 eggs (room temperature)
1 teaspoon vanilla
1.5 teaspoons Aiya matcha powder
3 tablespoons butter (room temperature)
3/4 cup powdered sugar
pinch of salt
1/2 teaspoon vanilla extract
1 tablespoon milk
Aiya matcha powder (as needed)

Steps:

  • Preheat oven to 350 degrees and grease an 8x8 baking pan.
  • Sift together the flour, sugar, baking powder and salt. Using an electric beater, add in the butter in small pieces, about 10 seconds apart. Beat until the butter is incorporated in small crumbs, then add the oil and continue to beat until there are no clumps and you have a fine, crumbly, cornmeal-like texture (this will take a few minutes).
  • Add ½ cup of the milk to the mixture and beat for 4 minutes until pale, thick and smooth (beating for this long will help create a more even consistency that will bake into a more even cake). Beat the eggs and vanilla into the remaining milk mixture and gradually add the egg mixture to the rest of the ingredients. Increase speed to medium and beat for one minute, then scrape down the sides and fold batter a few times to make sure everything is incorporated.
  • Divide the batter in half. Beat the matcha into half the batter until evenly incorporated.
  • Pour batter into prepared pan, marbling as desired, and bake for 35-40 minutes, or until edges are golden and an inserted toothpick comes out clean. Let cool before cutting into a toast shape.
  • Beat the butter and sugar together. Beat in the salt, vanilla, and milk until smooth.
  • If going for an ombre look, divide the frosting into 2-3 bowls. Keep one bowl of frosting plain. Add matcha 1/4 teaspoon at a time to the other bowl(s) of frosting until you achieve your desired color and flavor (taste as needed). Use a large offset spatula to frost the cake in sweeping waves of frosting! Add gold flakes/milk crumbs/other cake bling as desired.

It may seem silly to give a recipe for avocado toast, but there is an art to it, as with most things that are both simple and perfect. Here, you want to make sure of a few things: that the bread you use is sturdy and has some taste; that there's enough salt and citrus to bring out the avocado's flavor; and that you use a good olive oil to bring it all together. These garnishes, from the Australian café Two Hands in Manhattan, are tasty but unnecessary.

2 large slices crusty, chewy sourdough bread, preferably whole wheat
1 ripe avocado, halved, pit removed
Extra-virgin olive oil
Flaky salt and coarsely ground black pepper
Half a lemon or lime
Poached or fried eggs
Thinly sliced pickled or fresh red chiles, such as Fresno or cherry
Thinly sliced pickled red onions
Pepitas (pumpkin seeds) or sesame seeds, or both
Herbs, such as basil, cilantro, mint or baby arugula

Steps:

  • Toast the bread to your liking. Meanwhile, use a wide spoon to remove the avocado halves from the peel, keeping them in large pieces.
  • Drizzle the hot toast lightly with olive oil and sprinkle with salt. Let cool slightly, then place one avocado half on each slice of toast. Use the back of a fork to roughly mash the avocado into the bread, keeping it as chunky as possible.
  • Sprinkle with a little more salt, and pepper if desired. Squeeze the citrus over the top and add any garnishes. Cut each piece of toast in half if they're large and serve immediately.
