My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

1 lb ground beef or 1 lb ground turkey
2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese
green onion

Steps:

  • In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
  • Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
  • Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
  • Serve with desired toppings.

If you like a thick white chili with a bit of "afterburn", then try this. I started out with a few other recipes, and have tweaked this to our family's taste. I submitted this recipe for a chili cookoff at work and came in 3rd place! (the other 2 winners were traditional red chili with beef).

2 (6 ounce) packages Tyson Fajita Chicken Strips, diced
1 medium onion, diced
1 tablespoon olive oil
1 (1 1/4 ounce) package Mccormick white chicken chili seasoning mix
3 teaspoons chicken bouillon powder (I use Caldo de Pollo-mexican chicken bouillon)
1 1/2 teaspoons garlic powder
1 teaspoon oregano
1/2 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper (or to desired likeness)
1/4 teaspoon cumin
2 (15 1/2 ounce) cans northern white beans, rinsed and drained
2 cups water
1/2 cup light cream (I use 1/2 and 1/2)
1 cup sour cream
1 (10 ounce) can rotel Mexican-style tomatoes (or regular kind if you can find mexican style)
1 (4 ounce) can diced green chilies
8 ounces white cheese dip (I use Gordo's brand (in the refrigerator section by the other cheese at Publix. It comes in a 16 oz )
lime juice (optional, but a fresh squeezed lime is really good!)

Steps:

  • In a stock pot, add diced onion and olive oil. Saute until clear.
  • Add seasoning packet and all other "dry" ingredients.
  • Continue to saute dry ingredients for a few minutes, stirring often.
  • Whisk in the water and lime juice (if using)and heat to boiling.
  • Add Chicken, beans, rotel, diced chili's, cheese dip, 1/2 and 1/2 and the sour cream.
  • Stir thoroughly and reduce heat to a simmer.
  • Let simmer for ~30 minutes and enjoy
  • It's even better the next day.

1 (6 ounce) can tomato paste
1 carrot, sliced
1 onion, chopped
2 stalks celery, chopped
¼ cup white wine
1 pinch crushed red pepper flakes

¼ cup chopped red bell pepper
⅓ cup bottled steak sauce
5 slices bacon
1 ½ pounds ground beef
1 (1.25 ounce) package chili seasoning mix
1 teaspoon ground cumin

1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley

Steps:

  • In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.
  • While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.
  • Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
  • Stir in beans, cilantro and parsley. Heat through and serve.

2 (15 ounce) cans great Northern beans

3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
12 ounces of bacon, cut crosswise into 1/4-inch strips and sautéed until almost crisp. Reserve 3 tablespoons of bacon fat.
3 tablespoons bacon fat (rendered from the bacon)
2 tablespoons vegetable oil (canola, grape seed or your favorite)
2 red bell peppers, seeds and ribs removed, diced
2 jalapeño peppers, seeds and ribs removed, minced
2 yellow onions, peeled and diced
1 head garlic, peeled and minced (10-12 garlic cloves, 6 tablespoons minced garlic)
1 pound boneless beef chuck, trimmed of fat and gristle, cut into 1/2-inch cubes
2 pounds ground beef
1 pound sweet Italian sausage, casings removed
3 tablespoons chili powder (Try using 3 different chili powders for great depth of flavor - I use ancho, chipotle and Mexican)
2 teaspoons cayenne pepper (Half this amount for less heat)
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons hot paprika (not smoked)
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce (passata, not ketchup for those in the UK)
8 ounces tomato paste
12 ounces of your favorite beer (I use an IPA because I like the hoppy flavor)
1 cup chicken stock
2 15-ounce cans kidney beans, with juice
2 15-ounce cans pinto beans, with juice
Optional Garnishes:
1 bunch green onions, thinly sliced or 1 red onion, finely chopped
Shredded cheddar cheese or Monterey Jack

Steps:

  • Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread the chiles out on a low-sided oven tray and roast for 15-20 minutes, turning peppers with tongs every five minutes, until their skins are about 60-70% blackened on all sides. Put the hot peppers directly into a paper bag. Roll down the top of the bag so they're tightly contained. Let them sit and steam for 15-20 minutes until the skins are loosened and easy to peel off. Peel off skins, remove seeds and membranes, and chop.
  • Add the bacon grease and oil to a large heavy pot or Dutch oven (6-quart), over medium-high heat. Add the chopped chiles, red bell peppers, jalapeño peppers and onions. Cook for 5 minutes or until the vegetables just start to become translucent. Add garlic and cook 1 minute longer. Transfer all the sautéed vegetables to a bowl and set aside. No need to wash the pot, you'll use it to brown the meat.
  • Add the cubed beef chuck to the pot and cook, stirring often, until lightly browned on all sides, about 4 minutes. Add the ground beef and sausage and cook for 7-10 minutes, stirring to break up the sausage and ground beef, until the meat is no longer pink. Return the cooked vegetables to the pot along with the reserved bacon.
  • chili powders, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper. Cook, stirring, for 1 minute, until fragrant.
  • Add the tomato sauce and paste. Cook, stirring, for 2 minutes, to combine. Add beer, chicken stock, kidney beans with their liquid and pinto beans with their liquid. Bring to a boil, lower to a simmer, and cook for 2 hours, uncovered.
  • Ladle chili into bowls. Top with garnishes or put garnishes into small bowls for self serve.

3 lbs boneless skinless chicken breast halves
3 tablespoons olive oil, divided
2 tablespoons chili powder plus 2 tsp chili powder
3 tablespoons cumin, divided plus more to taste
1 teaspoon salt, divided, plus more to taste
1/2 teaspoon cayenne pepper (to taste)
3 cups chopped onions (2 medium)
3 tablespoons minced garlic (or more)
45 ounces white beans (if canned, rinsed and drained)
8 ounces chopped green chilies (mild or hot depending on preference)
2 teaspoons oregano
4 -6 cups low sodium chicken broth
3 cups monterey jack cheese (divided)
3 cups cheddar cheese (divided)
2 cups sour cream, divided
chopped scallion
chopped cilantro leaf
your favorite hot sauce
sour cream
shredded cheddar cheese
shredded monterey jack cheese

Steps:

  • Preheat oven to 350. Spread chicken out in a roasting pan,.
  • Drizzle with tablespoon olive oil and season with 2 teaspoons chili powder, a tablespoon cumin, 1/2 teaspoon salt, and a pinch or two of cayenne. Roast for 30 minutes. Shred or cut into bite sized pieces. Set aside.
  • In a large pot heat remaining 2 tablespoons olive oil. Saute onion and garlic over medium heat for 5 minutes or so, until tender.
  • Add beans, shredded chicken, chilies, oregano,2 tablespoons chili powder (the author says her secret is to use a couple different kinds of chili powder), 2 tablespoons cumin, 1/2 teaspoon salt, and 1/4 teaspoon cayenne (or more).
  • Add 4 cups chicken broth, reserving the rest for thinning the chili to your desired consistency. Stir to combine and simmer gently on low for 20 minutes. To keep the chicken tender, do not let the pot boil.
  • Remove from the heat and let cool for 5 minutes or so before proceeding. With the pot still off the heat, stir 3 cups of cheese into the pot a cup at a time. Then stir in a cup of sour cream (for Dean's richer creamier version add all the cups of cheese and 2 cups of sour cream).
  • Bring the pot back to a gentle simmer over low heat to keep the dairy products from separating (don't boil). Simmer the chili for 15 to 20 minutes, adjusting with additional chicken broth, if you like. For added texture, use a potato masher in the pot to mash half the chicken and beans. Then stir to combine with the rest.
  • Serve chili in bowls with garnished on top or on the side.

1 lb ground turkey thighs
1 lb ground turkey breast
2 cans (14 oz each can) diced tomatoes
1 can (14 oz) kidney beans
1 can (14 oz) white breans
6 oz tomato paste
32 oz chicken broth
1 large onion (finely minced)
1 jalapeño pepper (chopped)
1 green bell pepper (chopped)
8 cloves garlic (finely minced)
4 tbsp chili powder
1 1/2 tsp cayenne pepper
2 tsp smoked paprika
1 tsp ground cumin
2 tsp dried oregano
2 tsp brown sugar
2 tsp cocoa powder
1/2 tsp salt
4 tbsp olive oil
2 cups Sharp Cheddar (shredded, for serving)
8 tbsp sour cream (for serving)

Steps:

  • In a large Dutch Oven heat 2 tablespoon of olive oil. Add onion, garlic and both types of peppers and cook over medium heat stirring occasionally for 10 minutes.
  • In a medium sauté pan heat the remaining 2 tablespoons of olive oil and add ground turkey thighs and breast. Cook, stirring constantly and breaking up the big chunks with a fork until the liquid evaporates and meat is thoroughly cooked and slightly brown, about 7-10 minutes.
  • Add cooked meat into a pot with an onion and pepper mixture.
  • Pour in diced tomatoes and beans.
  • Dilute tomato paste with 1 cup of chicken broth and add into a pot.
  • Add chili powder, cayenne pepper, smoked paprika, oregano, cumin, brown sugar, cocoa powder, the remaining chicken broth and ½ teaspoon of salt.
  • Give everything a good stir, cover with a lid and reduce the heat to low. If the soup becomes too thick, add ½ cup of chicken broth.
  • Simmer for 1 hour.
  • Adjust the seasoning and serve immediately with shredded Cheddar cheese and a dollop of sour cream.

This is some of the best chili in the world! I developed this chili recipe while cooking on the CASI chili circuit and won numerous awards with it! If you can not find the Sazon Goya just omit it. I do not add any "Floaters" (Beans, Onions, Peppers,...) but you may if you would like to. The recipe is cooked by using dumps...this is important not to overpower one spice over the other. I usually premix each dump during preparation and put in bowls or plastic storage bags and label accordingly. Enjoy!

1 (14 ounce) can beef broth
0.5 (14 ounce) can chicken broth
1 (8 ounce) can Hunts tomato sauce
2 teaspoons granulated onion
3/4 teaspoon cayenne
2 teaspoons beef bouillon granules
1/4 teaspoon salt
2 teaspoons chicken bouillon granules
2 tablespoons Gebhardt® Chili powder
5 tablespoons dark chili powder
3 teaspoons ground cumin

1/4 teaspoon brown sugar

Steps:

  • Brown ground sirloin and drain.
  • Add beef and chicken broth and tomato sauce to meat and bring to a boil.
  • Add first spices 2 tsp granulated onion,1/2 tsp cayenne, 2 tsp Wylers beef granules, 1/4 tsp salt, 2 tsp Wylers chicken granules, 1 tbsp light chili powder, 2 tbsp dark chili powder.
  • Cover and cook 1 hour.
  • After 1 hour add:2 tsp ground cumin, 2 tsp granulated garlic, 2 tbsp dark chili powder, 1 tbsp light chili powder, 1 packet sazon goya (found on Mexican food aisle).
  • Adjust liquid with remainder of chicken broth, if necessary.
  • Cover and cook 30 minutes
  • After 2nd spice dump and 30 minutes add:1 tbsp dark chili powder, 1 tsp ground cumin, 1/4 tsp granulated garlic, 1/4 tsp cayenne, 1/4 tsp brown sugar.
  • Reduce heat to a slow boil.
  • Cook 10 minutes.
  • Adjust salt, cayenne, and light chili powder to taste.

6 cups water, or as needed to cover

  • Cover chicken with water in a large pot and bring to a boil; reduce heat to low and simmer until chicken is no longer pink in the center, 45 minutes to 1 hour. Remove chicken and set aside to cool. Reserve cooking liquid. Shred chicken when cool enough to handle.
  • Combine chicken, cooking liquid, white beans, hominy, onion, green chiles, garlic, cumin, oregano, and chicken bouillon in a slow cooker. Cover and refrigerate overnight.
  • Cook chicken and bean mixture on Low in slow cooker for 4 to 4 1/2 hours. Top individual servings with Monterey Jack cheese.

1.5 pounds chicken, boneless and skinless breasts
1 medium sweet onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
1 can (14 oz) of chicken broth
1 can of condensed cream of chicken soup, optional (leave out for gluten and dairy-free)
1 package of white chicken chili seasoning OR for gluten-free seasoning: 1.5 tsp salt, 1 tsp dried oregano, 1/2 tsp chili powder, 2 tsp cumin, 1 tsp red pepper flakes, 1 tsp garlic powder, 1 tsp onion powder
1 can (4 oz) diced green chilies with juice
1 can (11 oz) shoepeg corn, drained well
2 cans of Cannellini beans or other white beans, rinsed and drained
3 Tbsp lime juice (1-2 limes, depending on size)
1 Tbsp chopped cilantro and additional for garnish (optional)
Salt, pepper, red pepper flakes to taste

Steps:

  • 1. Chop a medium yellow onion, one green bell pepper and mince two garlic cloves.
  • 2. Heat olive oil over medium in a medium Dutch oven or stock pot and sauté the vegetables until soft.
  • 3. Add the can of green chilis, can of corn, chili seasoning and stir.
  • 4. Add the can of chicken broth, cream of chicken soup (optional, leave out for gluten and/or dairy-free) and stir to combine.
  • 5. Stir in the beans and add the chicken, submerging the chicken in the broth.
  • 6. Cover and simmer gently for 20 minutes (until chicken reaches 165 degrees F), flipping the chicken halfway through.
  • 7. Remove the chicken and set aside on a cutting board.
  • 8. This step is optional and depends on the consistency you would like your chili to have. If you would like a creamier chili, use an immersion blender, blend a small portion of the broth. If you don't have an immersion blender, you can also do this by removing a cup of the broth and using a blender then returning it to the pot.
  • 9. Chop or shred the chicken and return it back to the pot.
  • 10. Simmer for another 5-10 minutes to reheat the chicken.
  • 11. Taste the broth and adjust the seasonings adding salt and pepper or red pepper flakes to taste. Turn off the heat and stir in the lime juice and cilantro (optional). I recommend adding 1 Tbsp of lime juice at a time and tasting as you go.
  • 12. Serve with crackers or tortilla chips. Optional garnishes: sour cream, shredded cheese, pickled jalapenos, cilantro, red pepper flakes.

  • In a large pot heat remaining 2 tablespoons olive oil. Sauté onion and garlic over medium heat for 5 minutes or so, until tender. Add beans, shredded chicken, chilies, oregano, 2 tablespoons chile powder, 2 tablespoons cumin, 1/2 teaspoon salt, and 1/4 teaspoon cayenne (or more, to taste). Add 4 cups of chicken broth, reserving the rest for thinning the chili to your desired consistency. Stir to combine and simmer gently on low for 20 minutes. (to keep the chicken tender, do not let the pot boil)
  • Remove the pot from the heat and let it cool for 5 minutes or so before proceeding. With the pot still off the heat, stir 3 cups of cheese into the pot, 1 cup at a time. Then stir in 1 cup of sour cream. (Or for Dean’s richer, creamier version, add all 6 cups of cheese to the pot and 2 cups of sour cream) Bring the pot back to a gentle simmer over low heat (to keep the dairy products from separating, don’t boil). Simmer the chili for 15-20 minutes, adjusting with additional chicken broth, if you like. A method I like to use for great added texture is to use a potato-masher in the pot to mash half the chicken and beans. Then stir to combine with the rest.

  • Open both cans of beans and dump the entire can into the pot. No need to drain. Add spices, chicken stock and green chilis and bring to a low boil. Dot not add cream or yogurt yet. Reduce heat and simmer for twenty minutes to let the flavors meld together. Taste to see how much salt to add. I leave this up to the individual. We do not add much salt to our dishes with tons of spices. We just love the flavor.
  • Take the pot off the heat and let cool for about 2 minutes and stir in plain yogurt and cream. If you don't allow to cool for a bit, it will curdle the milk and yogurt. It is not pretty, but you can still eat it. Top with shredded cheese and a dollop of plain yogurt.
