HEALTHY BLUEBERRY BLENDER BABY MUFFINS
These blueberry blender baby muffins are sweetened with fruits only and loaded with nutrition! They're soft and moist, making them perfect for babies

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In the blender or food processor, add the oats first and then the rest of the ingredients except the blueberries. Blend until smooth. Stir in half the blueberries.
- Pour batter evenly into a greased or lined 12-cup muffin pan (see note). Top with remaining blueberries.
- Bake for 25-30 minutes, until inserted toothpick comes out clean.
- Cool completely (wait at least 10 minutes) before taking them out of the pan.

MINI BANANA BLUEBERRY MUFFINS
A Soft Baby Muffin with Banana and Blueberry, perfect as a first muffin or for toddlers and kids!

Steps:
- In a large bowl, mash the bananas with a fork
- Add eggs, vanilla, and butter/oil
- Beat these wet ingredients together with a hand held beater (I use an electric one), the batter should become smooth, yellow and a little frothy
- Add the flour and baking powder
- Beat for a further 30-60 seconds to make a well-mixed batter
- Portion into an oiled muffin tin (I use a non-stick silicon tray sprayed with oil) Mix makes 12 standard sized muffins or 30 mini muffins
- Top the muffins with a blueberry or two
- Bake at 180 degrees Celsius for 15 mins (360 Fahrenheit), 15 min cook time is based on making mini muffins, the mix makes approx 30 mini muffins. If you are using a standard muffin tray and making approx 12 muffins the cook time will be longer, approx 25-30 mins
- Cool
- Serve

- Make the oat flour - add your oats to blender or coffee grinder and blend until a fine powder is achieved. Melt the butter and set aside.
- Transfer the dough immediately to the muffin tin, using 1 to 1.5 tsp at a time, fill them about 3/4 of the way full. You don't need to grease the pan or use muffin cups if you're using a ceramic coated muffin pan. They will not stick and will release easily.
- Bake for 15-17 minutes at 350 F until golden brown. Let them cool for 5-10 minutes then they will easily detach. Enjoy warm or freeze for later.
