Shortcut Vegan General Tso's

We embraced a "semi-homemade" spirit in this Vegan General Tso's Chicken recipe, made with vegan chicken nuggets and our signature General Tso's Sauce!

1/3 cup Asian vegetable stock ((or low-sodium store-bought vegetable stock))
1 teaspoon dark soy sauce
1 tablespoon soy sauce ((or seasoned soy sauce))
2 teaspoons rice vinegar
1 teaspoon Shaoxing wine ((or cooking sherry))
3 1/2 tablespoons brown sugar
1/4 teaspoon white pepper
1 pound vegan chicken nuggets or tenders
2 cups broccoli florets ((about 1 broccoli crown))
1 tablespoon vegetable oil
4-5 dried red chili peppers ((broken in half if you like extra spice))
3 cloves garlic ((minced))
1 tablespoon cornstarch ((mixed with 2 tablespoons water))

Steps:

  • Make the sauce mixture by combining the vegetable stock, soy sauces, rice wine vinegar, Shaoxing wine, brown sugar, and white pepper. Set aside. Bake/cook the vegan chicken nuggets according to package instructions.
  • Bring a pot or wok of water to a boil, and blanch the broccoli for 30 seconds to 1 minute, depending on how crunchy/tender you like your broccoli. Drain and set aside. To keep it super green, you can also transfer the broccoli to an ice bath before draining.
  • Heat a clean wok or skillet over medium heat. Add 1 tablespoon of oil along with the dried chilies. Cook for a few seconds, and add the minced garlic.
  • Next, add the prepared General Tso's sauce. Bring to a simmer. Stir the cornstarch into the water to make sure it's fully combined, and slowly stir the cornstarch slurry into the sauce. Simmer for another 30 seconds to allow the sauce to thicken.
  • Add the nuggets and broccoli, and toss until everything is evenly coated in sauce. Plate and serve immediately with steamed rice!

8 cups vegetable oil, for frying
1 cup rice wine
¼ cup soy sauce
1 lb boneless, skinless chicken thighs, cubed
1 cup flour
1 tablespoon salt
1 tablespoon vegetable oil
2 cloves fresh garlic, minced
1 teaspoon fresh ginger, grated
½ cup dried chili pod
¼ cup rice wine
¼ cup soy sauce
¼ cup rice wine vinegar, may substitute with white wine vinegar
¼ cup sugar
½ tablespoon cornstarch
½ tablespoon water
¼ cup green onion, chopped
white rice

Steps:

  • In a large bowl, combine 1 cup rice wine (240 ml), ¼ cup (60 ml) of soy sauce, and cubed chicken thighs. Stir and cover with plastic wrap. Refrigerate for at least 30 minutes or up to an hour.
  • In a separate large bowl, combine 1 cup of flour (125 g) and 1 tablespoon of salt.
  • Remove chicken from wine/soy marinade and place in flour mixture. Mix thoroughly, until all the chicken pieces are coated.
  • Fill a dutch oven or large pot at least 2 inches (5 cm) deep with vegetable oil. Heat oil to 365˚F (185˚C). Place chicken pieces in frying oil, stirring occasionally. Fry until they are golden brown, roughly 4-5 minutes. Remove chicken from oil and set aside to drain on paper towels or a wire rack.
  • In a large skillet, bring one tablespoon of vegetable oil to medium-high heat. Add garlic and ginger, stirring frequently for one minute.
  • Add dried chili pods. Continue stirring for 30 seconds before adding rice wine, soy sauce, rice wine vinegar, and sugar. Stir occasionally until mixture is bubbling.
  • Add cornstarch slurry, stirring frequently. The sauce should begin to thicken in a minute or less.
  • Add cooked chicken pieces, stirring them to coat with the sauce.
  • Remove from heat and garnish with green onions and rice.

  • Liberally season the cubed tofu with salt and pepper. I typically use 1 tbsp of salt and 2 tsps of black pepper, but feel free to adjust to your taste. Set aside.
  • In a medium-size mixing bowl, combine 1 cup of cornstarch, the orange juice and vegetable stock. Mix with your fingers to ensure you have the right consistency. It should cover your fingers with a slightly-opaque coating. If the batter feels like sand in the middle, or is too stiff, add more broth; but don't add more than 1/4 cup of orange juice or the tofu will taste too sweet. Set aside.
  • In a large frying pan or wok (I ain't gotta a wok), heat the canola oil over medium high heat. Add a drop of the cornstarch batter to test the oil's temp. It should begin to sizzle and rise to the top within 3 seconds.
  • Place a handful of tofu cubes into the cornstarch batter and coat each piece evenly. It will feel funny because the cornstarch tends to lump up, however, when you remove the tofu, the excess should run off freely. Carefully place the tofu pieces into the hot oil. This may get messy, but don't crowd your pan; you want to make sure the temperature of the oil doesn't drop so low that it causes the tofu's coating to turn soggy (yuck).
