SOFT & FLUFFY CAKE MADE WITH BABY FOOD
Here's a great way to use up leftover baby food! A simple yet delicious cake made with baby fruits & veggies. Soft, fluffy, moist and loaded with flavor.

Steps:
- Preheat oven to 325°. Grease & flour a bundt or tube pan.
- In a large mixing bowl cream sugar and butter.
- Beat in eggs.
- Beat in baby food, vanilla, cinnamon and salt until mixed.
- Mix in baking powder and flour, 1/2 cup at a time, until combined.
- Batter will be fluffy :)
- Spoon/scrape into prepared pan.
- Bake for 40 - 45 minutes or until toothpick inserted near center comes out clean.
- Cool on wire rack. After 20 minutes, turn cake onto rack and finish cooling.
- Serve plain, with a sprinkle of powdered sugar, or a dollop of jam or fruit butter.

BABY FOOD CAKE II
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a medium bowl, stir together the eggs, sugar, and oil. Combine the flour baking soda and salt, stir into the egg mixture. Finally, stir in the baby food. Pour the batter into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool and frost with your favorite cream cheese frosting.

- In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. Add the eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and nuts. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, beat cream cheese and butter in a small bowl until fluffy. Add the confectioners' sugar and vanilla; beat until smooth. Frost cake. Sprinkle with additional nuts. Store in the refrigerator.

A co-worker always brought this cake for birthdays. It is very simple, quick to make and VERY moist. Use any flavor cake mix with pudding in the mix.

Steps:
- Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.
- Combine the cake mix, sugar, vegetable oil, eggs, apricot baby food and plum baby food. Mix for 2 minutes. Stir in walnuts and pour batter into the prepared pan.
- Bake at 375 degrees F (190 degrees C) for 1 hour. Wonderful with a light dusting of confectioner's sugar or with an almond frosting.
