BREAKFAST HASH

6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

This is so easy and inexpensive and quick to put together. I use a glass 8x8 or a small rectangle baking dish. The layers show through the glass and look very inviting. If you want to use a 9x13 baking dish, just double everything.

1 cup chopped onion, divided
3 large potatoes, grated
salt and ground black pepper to taste
4 carrots, peeled and grated
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can green beans, drained
8 slices bacon

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat, and cook and stir the ground beef until the meat is crumbly and evenly browned. Drain and discard any excess grease. Transfer the beef to an 8x8-inch baking dish.
  • Layer about 1/4 of the onion on top of the beef, then spread the grated potatoes over the onion. Season with salt and pepper. Spread another 1/4 of the onion over, then layer the carrots on top. Season with salt and pepper again. Add another layer of onion, then cover with the corn. Season with salt and pepper, then top with the remaining onion. Spread the green beans over the onion, then arrange the bacon slices on top. Cover with aluminum foil.
  • Bake in the preheated oven for 40 minutes, then remove the foil and continue baking until the bacon is crisp and the potatoes are tender, about 20 minutes more.
