BACON-CHEESE BISCUITS

Steps:
- Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
- Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
- Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
- Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble or chop into small pieces.
- Separate 6 biscuits into 2 rounds each. Press rounds into 12 cups of a muffin tin, pressing up sides to form biscuit dough cups.
- Mix eggs, bacon pieces, and 1/2 cup shredded cheese together in a bowl.
- Fill muffin pan biscuits with egg mixture about 3/4 full. Sprinkle remaining 3 tablespoons cheese on top.
- Bake in preheated oven until egg mixture is set, 18 to 22 minutes. Let cool 5 minutes before serving.

- Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan.
- In large bowl, stir together all ingredients except ketchup and mustard, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
- Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with ketchup and mustard for dipping.
- Make-Ahead Directions: Make as directed through step 2. Cover and refrigerate up to 12 hours. Uncover, and bake as directed in step 3.

This is from my cookbook entitled "Recipes from the Old South" I used to make these to take to cookouts as an appetizer. It says to serve with any highly seasoned dip, but I never did. I have guessed at the number it makes. Hope you enjoy!

- Preheat oven to 425 degrees.
- Fry bacon until crisp.
- Save the drippings.
- Crumble the bacon into small pieces.
- Combine bacon, green pepper and mushrooms.
- Sift together the flour, dry mustard and baking powder.
- Mix bacon and vegetables with the flour mixture.
- Combine the egg, milk and bacon drippings.
- Add this to the flour and vegetable mixture.
- Stir mixture with fork until blended well.
- Drop by teaspoonfuls onto a greased cookie sheet.
- Bake for about 8 minutes.
- Serve on wooden toothpicks with any highly seasoned dip.
BACON CHEESEBURGER BALLS
You might be fooled into thinking you are eating plain meatballs until you cut them and see a creamy cheese and bacon filling. Make these for everyday and company meals as well as potlucks. Use them to top off spaghetti and fettuccine and sometimes even shape them into patties. Good with garden fresh chives and parsley sprinkled into the beef. Mozzarella and Swiss cheese are good substitutes for the cheddar. Try ground turkey instead of beef.

- FOR THE MEATBALLS: In a bowl, combine egg and soup mix.
- Crumble beef over mixture and mix well.
- Divide into 36 portions; set aside.
- In a bowl, combine the flour and milk until smooth.
- Add cheese and bacon; mix well.
- Shape cheese mixture into 36 balls.
- Shape one beef portion around each cheese ball.
- FOR THE COATING: In a shallow bowl, beat the eggs.
- Place cracker crumbs in another bowl.
- Dip meatballs into egg, then coat with crumbs.
- In a large skillet over medium heat, cook meatballs in oil for 10-12 minutes or until the meat is no longer pink and coating is golden brown.
- Yield: 3 dozen.

- Heat oven to 375ºF.
- Line cookie sheet with parchment paper or spray with nonstick cooking spray.
- Separate dough into 5 biscuits.
- Split each biscuit to make 10 rounds.
- Press out each biscuit half to form 3-inch round.
- Sprinkle each biscuit round with cheese to within 1/2 inch of edge.
- Top each with meatball.
- Bring sides of dough over meatball; pinch edges to seal.
- Brush rounded tops and sides of dough with butter; coat with croutons.
- Place seam side down on paper-lined cookie sheet.
- Bake at 375ºF for 10 to 15 minutes or until golden brown.
- Place appetizer pick in each biscuit-wrapped meatball to form biscuit ball.
