2 tbsp. butter
2 tbsp. all-purpose flour
2 c. milk
kosher salt
Freshly ground black pepper
2 c. shredded Cheddar
1 lb. macaroni elbows, cooked
6 slices bacon, cooked and crumbled, plus more for garnish
4 cooked hot dogs
4 hot dog buns
Chopped fresh chives, for garnish

Steps:

  • Make mac and cheese: In a large skillet over medium heat, melt butter. Add flour and whisk until combined. Let cook until golden, 1 minute, then pour in milk and season with salt and pepper. Let thicken, 3 minutes, and add cheddar. Stir until melty and creamy then add cooked macaroni and stir until coated. Stir in cooked bacon.
  • Top mac and cheese on hot dogs and garnish with more bacon and chives.

28 grams Butter (2 tbsp)
2 tbsp Flour
300 ml Milk (1 ¼ cups )
1 tsp Mustard Powder
100 grams Grated Cheddar Cheese (1 cup)
200 grams Macaroni Pasta (2 cups )
6 Slices of Streaky Bacon (Cooked till crispy - see notes for my method)
6 Frankfurter style sausages, cooked to packet instructions (You can use beef, chicken, pork or veggie!)
6 Hot Dog or Sub Rolls
Chopped spring onion to garnish

Steps:

  • Bring a large pot of salted water to the boil and cook the macaroni pasta according to packet instructions.
  • While it's cooking, make the roux - melt the butter in a medium saucepan (big enough to hold the cooked macaroni) over low heat. When the butter begins to foam, add the flour.
  • Mix the butter and flour well with a small whisk or spatula to form a paste. Keep stirring over a low heat for 1 minute.
  • Add the milk bit by bit and mix well. Make sure its completely incorporated with the roux each time before you add more milk. I prefer to use a whisk for this but a spatula or wooden spoon also work.
  • Keep stirring over a low heat until the mixture is thick enough to coat the back of a spoon.
  • Take off the heat and stir in the mustard powder and some salt and pepper. Mix in the grated cheese.
  • When the macaroni is done cooking, drain it and add to the cheese sauce. Reserve a cup of the water you cooked the pasta in - you can add a little to loosen your cheese sauce if you find it is too thick.
  • Slice open your rolls and add the cooked Frankfurters. Top with a generous spoonful of macaroni.
  • Dice the crispy cooked bacon really finely then sprinkle on top of the mac and cheese. I also like to garnish with some diced spring onion or chives.

6 strips of Bar-S bacon
Box of mac 'n cheese
6 hoagie rolls

Steps:

  • Preheat oven to 400 *F.
  • Boil hot dogs 6-9 minutes or until plumps.
  • Line a baking sheet with parchment paper.
  • Lay the bacon strips flat, (do not overlap.)
  • Bake until crisp and browned, 15 to 18 minutes.
  • Chop into bits, set aside.
  • Layer jumbo dog and mac 'n cheese on top of hoagie roll.
  • Top with bacon bits.

1 cup macaroni noodles, uncooked
1 cup 10% cream
1/2 cup water
1 tbsp cornstarch
1 tbsp minced garlic
1 tsp onion powder
1/2 tsp pepper
1/2 tsp salt
1 cup marble cheese, grated
2 tbsp margarine or butter
1/3 cup real bacon bits
8 wieners
8 hot dog buns, top-sliced

Steps:

  • Bring a pot of water to a boil for the macaroni.
  • Heat a frying pan on medium for the wieners.
  • Boil the macaroni until slightly tender, about 8 minutes, and drain.
  • While the macaroni is cooking, slice the wieners about half way through lengthwise and fry with a tbsp of margarine.
  • Bring the cream to a boil in a medium saucepan.
  • Add the cornstarch to the cold water and stir until dissolved.
  • Pour the cornstarch and water into the boiling cream and whisk until well combined.
  • Reduce heat to simmer and add garlic, onion powder, pepper and salt.
  • Heat a nonstick fry pan on med-low for toasting the buns.
  • Add cheese, bacon bits and margarine to the sauce mixture.
  • Stir until cheese is melted and reduce heat to low.
  • Add macaroni noodles to the sauce and stir.
  • Toast buns in heated pan.
  • Place a wiener in each of the toasted buns and top with some macaroni and cheese.
  • Enjoy!

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
