- 1. While the ribs are braising, prepare the sauce. In a medium sauce pan, take the diced bacon (cut up before cooking) and cook it until it is half done. Drain off all of the fat, leaving 3 tbsp. in the saucepan. Add the onion to the cooking bacon. Fry until the onions are tender and beginning to brown. 2. Add the ketchup, applesauce, maple syrup, vinegar, soy sauce, mustard powder, brown sugar, salt and pepper. Bring the contents to a boil, reduce the heat to low and simmer for about 15 minutes, and stirring every so often.
MAPLE BACON DIP

- In a medium skillet over medium heat, fry the bacon until slightly crisp, 10 to 12 minutes. Drain on a paper towel and set aside.
- Place the yogurt, maple syrup, brown sugar, vanilla and maple flavoring in a medium bowl. Mix together until smooth and fully combined.
- Chop the bacon into pieces. Fold two-thirds of the bacon into the yogurt mix and transfer to a serving dish. Garnish with the remaining bacon.
- Cut the apples into slices and toss in the lemon juice. Serve with the dip.

- Preheat oven to 400 degrees. On a parchment-lined rimmed baking sheet, arrange bacon in a single layer. Bake until fat is rendered and bacon is beginning to brown, 15 to 18 minutes. Carefully remove from oven and brush with pure maple syrup. Bake until bacon is browned and sticky, 3 to 5 minutes. With tongs, transfer to a wire rack, then set rack on baking sheet and let bacon drain. Serve warm.

- Line a rimmed baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack next to each other, not overlapping.
- In a small bowl, whisk the maple syrup and mustard. Generously spoon over the top of the bacon, and bake 12 to 15 minutes. Turn the bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes, or until the bacon has reached desired crispiness.
- Carefully remove the pan from the oven. Sprinkle hot bacon with a scant pinch of finely ground black pepper. Let the bacon rest on the rack for 5 minutes.

- In a sauté pan cook the 3 bacon slices until crispy. Set aside and drain the fat.
- In the same pan add the garlic cook until golden brown (should take less than a min).
- deglaze the pan with the apple juice then add the maple syrup.
- Basically you are going to reduce the liquid in half. If you think the sauce to be thicker, continue cooking it down until it reaches your desired consistency. Remember it will thicken as it sits.
- Remove from heat and add the crumbled bacon to the sauce and drizzle over the fish, Chicken, Pork...etc
