BACON MUSHROOM SWISS MEATLOAF
This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onions, mushrooms, and Swiss cheese are added to ground beef and baked to perfection.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
- In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
- Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes.

BACON-MUSHROOM-SWISS BURGER
Basic gets a boost when you pair burgers with crisp, smoky bacon, earthy mushrooms and melty Swiss cheese. The herbed mayonnaise adds instant sophistication, and toasting the buns gives an extra layer of texture. Sweet potato fries or chips go great with this burger.

- To prepare herbed mayo: In a medium bowl, combine mayonnaise, dried herbs, Worcestershire sauce and lemon juice, mixing well. Cover and refrigerate.
- Cut each strip of bacon in half and cook in a skillet over medium heat until crisp.
- Remove and drain on paper towels. Pour off all but 1 tablespoon bacon drippings from the pan.
- Add mushroom slices and soy sauce to the pan.
- Over medium heat, saute mushrooms until browned and soft, about 5 to 10 minutes. Drain on paper towels.
- Preheat grill for medium heat and lightly oil the grate.
- To prepare burgers, mix ground beef, garlic granules, and salt and pepper together in a bowl. Form into patties. Place on prepared grill and grill 3 to 5 minutes per each side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
- During last 2 minutes of cooking, top with cheese and cover to melt cheese.
- Meanwhile, heat oven to 400 degrees, arrange hamburger buns on a foil-lined cookie sheet and lightly toast hamburger buns in the oven on each side.
- When toasted, remove buns to serving plates and spread some of the herbed mayonnaise on each bun.
- To serve, put cheese-topped patties on each bun, add desired hamburger trimmings, finish with the top bun and enjoy.

- Heat oven to 425ºF.
- Mix cream cheese and egg with mixer until blended. Gradually beat in milk. Add 2 Tbsp. parsley; mix well. Pour into shallow dish.
- Dip bread slices, 1 at a time, in cream cheese mixture, turning to evenly coat both sides of each slice. Place on parchment-covered rimmed baking sheet. Bake 15 to 20 min. or until golden brown, turning after 8 min.
- Meanwhile, cook and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add onions to reserved drippings; cook and stir 2 to 3 min. or until crisp-tender. Add mushrooms; cook 5 min. or until tender, stirring occasionally. Stir in bacon and remaining parsley.
- Top bread slices with mushroom mixture and Swiss cheese; bake 3 to 4 min. or until cheese is melted.

SWISS, BACON, MUSHROOM MEATLOAF
Swiss cheese with mushrooms & bacon is my favorite burger topping. So I thought why not make it a meat loaf. I had a lot of fresh herbs on hand so I used them but you could sub dry ones. I put a lot of vegetables in it and that keeps it moist. You can double it if you want very easily.

Steps:
- Cut the cheese in to 2 inch long and 1/4 inch wide strips.
- Set aside.
- Saute the mushrooms with 1 tbsp of the finely diced onion.
- Lightly Salt.
- When golden add 1/4 wine and 1 tsp finely chopped thyme. Let most of the wine cook away.
- Set aside.
- Saute the rest of the onion, celery & red pepper together until soft but not browned.
- In a large bowl mix all the herbs, seasoning salt, garlic powder, onion powder, pepper, Worcestershire sauce, ketchup, mustard, egg, milk with the bread crumbs.
- Add the sauteed vegetables and mix well.
- Using your hands mix in meat.
- Spray a foil lined baking pan with cooking spray.
- Put 2 strips strips of raw bacon down the center ( they will hang off the end of the pan).
- Put two strip of bacon across twice at about 2 inches from the center of the other bacon on either side ( they will hang off the side of the pan).
- Put about half the meat in the centre of the bacon strips and pat into an oval loaf shape.
- Arrange cheese on top of meat.
- Reserve 1/2 cup of mushrooms for sauce.
- Put the rest on top of cheese.
- Pat the rest of the meat over the top of mushrooms taking care to seal seams so that cheese does not leak out.
- Bring ends of bacon up and over the loaf.
- Bake at 350F for 1 hours till bacon is crisped and meat is done.
- Sauce:.
- Stir flour into reserved mushrooms in a small sauce pan. add wine & stock and cook & stir until thickened & smooth.
BACON AND MUSHROOM CROISSANTS

- Turn on oven, to around 150 deg C. Halve the croissants, but don't place in oven yet. Clean mushrooms with damp cloth. Slice mushrooms. Heat olive oil in wide pan to the point where a mushroom slice when dropped in will immediately start to sizzle.
- Add all mushrooms, and stir around with wooden spatula. Add about 12 to 18 twists of pepper from the pepper mill. Turn on grill. Keep stirring the mushrooms. They will soon start to give up their moisture, and the pan / oil temperature will drop to the boiling point of water. Keep on stirring till all the moisture is driven off, and all that is left is the oil and mushrooms. Keep cooking until the sliced mushrooms just start to brown - but don't go too far - this develops a superb flavour. Turn down the pan heat to low.
- Place bacon and tomatoes under the grill. Grill bacon to taste (I like it nice and crispy) and the tomato skins are just blackening on top. Half way through this, place the croissants in the oven.
- After about 3 minutes, remove the pre-sliced croissants from oven. With a fork, mash two cherry tomatoes onto one half of each of the two croissants. Layer two rashers of bacon over the tomatoes. Spoon the mushrooms over the bacon. Place the top half of the croissants over the mushrooms. Serve on a warmed plate with folded napkin/kitchen paper towel and a cafetiere of fresh coffee.

- Preheat broiler with rack set 3-5 inches from heat.
- In a large nonstick skillet, melt butter over medium heat.
- Saute eggs and mushrooms for 3 minutes or until eggs are scrambled.
- Place croissants on a work surface.
- Top each croissant half equally with egg mixture, Swiss cheese, and bacon.
- Place open-faced croissant halves on a broiler pan and broil for 2 minutes or until croissant is slightly toasted and cheese is melted.
