Bacon and mushrooms. What's not to love?! These would be cute served in shot glasses. From Food & Wine. WINE: The mild mushroom and salty bacon here will flatter a creamy but not too oaky Chardonnay. Try a New World one, like the 2002 Trefethen Estate from Napa. Easier to find ripe, creamy-textured chardonnay

12 slices bacon, halved crosswise
2 (4 ounce) packages enoki mushrooms, trimmed and split into 24 bundles
3 scallions, quartered lengthwise and cut into 3-inch lengths
fresh ground pepper

Steps:

  • Preheat the oven to 425°. Line a large rimmed baking sheet with parchment paper and arrange the bacon on it 3 inches apart.
  • Set the mushrooms on the bacon slices. Top with the scallions and season with pepper. Roll up into tight cylinders and secure with toothpicks.
  • Roast the enoki bundles for 18 minutes, or until the bacon is browned and crisp.
  • Drain the bundles on paper towels, remove the toothpicks and serve.

This is one of my family's favorite way to eat beef and mushroom. Its quick and easy and also very delicious!

Number Of Ingredients 4

10 ounces enoki mushrooms, roots removed
20 slices thinly sliced deli roast beef
½ tablespoon butter
1 pinch salt and ground black pepper to taste

Steps:

  • Spread roast beef slices out onto a work surface. Divide enoki mushrooms between the roast beef slices and arrange into the middle of each. Wrap the roast beef around the mushrooms.
  • Melt butter in a skillet over medium-low heat. Arrange beef-wrapped mushrooms into the skillet, season with salt and pepper, and cook until heated through and browned, about 10 minutes per side.
