This is great! The bacon makes the hamburgers so tender!

½ cup shredded Cheddar cheese
1 tablespoon grated Parmesan cheese
1 small onion, chopped
1 egg
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
½ teaspoon salt
⅛ teaspoon pepper
1 pound ground beef
6 slices bacon
6 roll (blank)s hamburger buns, split

Steps:

  • Preheat a grill for high heat.
  • In a large bowl, mix together the Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. Crumble in the ground beef, and mix together by hand. Form into 6 patties, and wrap a slice of bacon around each one. Secure bacon with toothpicks.
  • Place patties on the grill, and cook for 5 minutes per side, or until well done. Remove toothpicks before serving on hamburger buns.

2 lb ground beef
2 eggs
1 cup breadcrumb
2 teaspoons salt
1 teaspoon pepper
2 teaspoons garlic powder
4 slices ham
8 slices cheddar cheese
2 cups spinach
10 slices bacon

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large bowl, mix the ground beef, eggs, bread crumbs, salt, pepper, and garlic powder. Mix until well combined.
  • Put the mixture in a medium baking tray lined with aluminum foil and distribute the meat mixture evenly.
  • Add the ham, cheese, and spinach on top of the meat.
  • Carefully lift the meat and form a roll.
  • In another aluminum-lined baking tray, place the slices of bacon side by side, one next to the other. Place the meat roll on top of the bacon.
  • Roll up the meat with the bacon, then wrap with foil.
  • Bake the aluminum-wrapped roll for 25 minutes.
  • Increase the temperature to 500˚F (260˚C). Remove the foil and bake for 20 more minutes until the bacon is golden brown and crispy.
  • Cool for 5 minutes, then slice and serve.

You can pretty much wrap anything in bacon, including pickles! These are perfect for game day or any time of year. Thick-cut bacon doesn't work as well for these, so use the thinner slices. Serve with ranch or blue cheese dressing. These are also tasty dipped in Buffalo sauce.

2 ounces cream cheese, chilled
8 slices bacon
¼ cup ranch dressing

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Pat pickles dry with a paper towel. Cut cream cheese into 8 strips. Place 1 strip onto each pickle, and wrap with a strip of bacon, securing ends with toothpicks if necessary. Place pickles on the baking sheet.
  • Bake in the preheated oven until bacon is browned, 12 to 15 minutes. Let cool slightly, then serve with ranch dressing.

2 slices bacon
2 shallots, sliced thinly
2 tablespoons olive oil
salt, to taste

Steps:

  • Add olive oil and bacon to large skillet; turn heat to medium; cook until crisp; remove bacon and crumble.
  • Add shallots to bacon grease, keeping heat on medium; cook, stirring, until caramelized.
  • Increase heat to medium-high, add coleslaw mix and stir fry for 5 to 6 minutes.

2 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced

Steps:

  • Toss together the broccoli slaw, cabbage, kale, parsley and raisins in a large bowl.
  • Put the bacon in a large nonstick skillet; set over medium-high heat. Cook, stirring frequently, until well browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate. Pour off all but 2 tablespoons bacon fat from the skillet and add the olive oil. Add the shallot and cook over medium heat until softened, 2 to 4 minutes. Add the vinegar, mustard and honey and whisk to combine. Bring to a simmer, then remove from the heat.
  • Immediately pour the dressing over the slaw mixture and toss to coat. Add the bacon and toss; season with salt. Cover and let sit at room temperature for 1 hour to soften.

Burger Patties:
1 1/2 pounds ground chuck or sirloin
8 ounces ground lamb
8 ounces ground pork
Salt and ground black pepper
4 slices Cheddar
1 1/2 quarts canola oil
2 cups flour
1 tablespoon kosher salt
1 tablespoon chili powder
1 teaspoon baking powder
1 teaspoon smoked paprika
1/4 teaspoon black pepper
25 sweet pickle chips
1 cup buttermilk
4 sesame seed buns, halved and steamed
4 tablespoons mayonnaise
4 small bowls filled with ketchup
4 small bowls filled with mustard
1 large onion, sliced in rings
1 large tomato, sliced
4 Bibb lettuce leaves
4 dill pickles

Steps:

  • For the burger patties: In a medium bowl, mix ground the beef, lamb, pork, 1/4 teaspoon salt and 1/4 teaspoon pepper. Use your hands to form 4 equal-size patties. Lightly sprinkle the outside of the patties with salt and pepper.
  • Preheat the oven to 375 degrees F. Heat a grill or grill pan over high heat. Cook the patties until there is a good sear, about 2 minutes, and then turn 90-degrees for 2 more minutes. Flip the patties and repeat.
  • Place 1 slice cheese atop each patty and transfer to a sheet tray. Cook in the hot oven until the cheese is melted, about 1 more minute. Remove the patties from the sheet tray and place on wire rack. Allow to rest for a minute while preparing pickles, buns, and toppings for plate.
  • For the fried sweet pickles: In a medium saucepan, heat the oil to 350 degrees F. Mix the flour with the salt, chili powder, baking powder, paprika and pepper. Dip all of the pickles in the buttermilk, and then dredge in the seasoned flour and fry in the hot oil. When the pickles float to the surface a nice golden brown, remove from the oil. Immediately place on paper towels and then sprinkle with salt and pepper.
  • To assemble the sandwiches: On the bottom half of each bun, spread a tablespoon of mayonnaise, place 1 burger and top with fried pickles. Cover with the top of the bun. Serve with side of ketchup, mustard, onions, tomatoes, lettuce, and dill pickles.

4 teaspoons ground coffee
1 teaspoon garlic powder
1 1/2 lbs ground beef (80 percent lean)
salt and pepper, to taste
3 tablespoons rice vinegar
2 tablespoons mayonnaise or 2 tablespoons salad dressing
2 teaspoons sugar
1/2-1 teaspoon Asian chili sauce (Sriracha sauce)
1/2 teaspoon kosher salt
2 1/2 cups shredded green cabbage
1/2 cup shredded carrots or 1 medium carrot
1/2 cup thinly sliced red onion
1/4 cup snipped fresh parsley
kosher salt
ground black pepper
6 hamburger buns with sesame seeds, split and toasted
fried pickled vegetables

Steps:

  • BACON:.
  • Line a microwave-safe plate with paper towels. Arrange six of the bacon slices in a single layer; cover with paper towels. Microwave on 100 percent power (high) for 1 to 2 minutes or until partially cooked. Drain on paper towels; cool. Transfer to a large resealable plastic bag. In a small bowl stir together brown sugar, coffee, and garlic powder. Add mixture to the bag. Seal bag; shake to coat bacon. Set aside. Repeat with remaining bacon and remaining brown sugar mixture.
  • PATTIES:.
  • Season beef with salt and pepper to taste, Shape beef into six 3/4-inch-thick patties. Wrap two slices of coated bacon around the each patty; secure bacon ends together with wooden toothpicks. Cover and chill for 30 minutes or up to 24 hours.
  • COLE SLAW:.
  • in a medium bowl whisk together vinegar, mayonnaise, sugar, Sriracha sauce, and the 1/2 teaspoon salt. Add cabbage, carrot, onion, and parsley, stirring to coat. Season to taste with additional salt and pepper. Cover and chill until ready to serve.
  • TO GRILL:.
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place patties on grill rack over drip pan. Cover and grill for 16 to 18 minutes or until done (160 degrees F to 165 degrees F)* and bacon is crisp. (For a gas grill, preheat grill. Reduce heat to medium. Adjust heat for indirect cooking.
