AVOCADO EGG-IN-A-HOLE
All of the breakfast essentials in one sandwich! Perfect for a weekend brunch, or as a portable weekday breakfast.

Steps:
- Cut a larger opening into the center of each bagel half using a cookie cutter or small glass.
- Add 2 tbsp butter to a skillet, heat over medium-high. Once melted, place the bagel halves in the pan, cut side down. Cook till browned, about 2-3 minutes.Flip bagel halves and arrange sliced avocado on each, but not overtop of the hole. Pour one egg into each opening, season with salt and pepper, and cover 2 of the 4 bagel halves with a cheese slice (you can break up the cheese slice to avoid covering the egg completely). Cover pan and cook until whites and yolks are cooked to your liking, approximately 4 to 6 minutes.
- Put the top and bottom halves together, transfer to a plate and enjoy! Or, wrap it in foil or parchment paper and take it on the go!

BAGEL EGG IN A HOLE WITH SMASHED AVOCADO

- In a small bowl, mash avocado; stir in salt, pepper and, if desired, pepper flakes. , Using a paring knife or round cutter, enlarge center hole to at least 1-1/2-in. in width. Spread butter on cut side of bagel. Place bagel, butter sides down, in a skillet over medium heat. Cook until golden brown, 1-2 minutes; remove to plate. Spread avocado mixture over browned sides, building up outside edge slightly., Return bagel to skillet, avocado sides up. Crack egg into center hole. Cook, covered, over medium heat until egg is cooked to desired degree of doneness. Transfer to serving plate; garnish as desired.

BAKED BAGEL EGG-IN-THE-HOLE

- For the baked bagel egg-in-the-hole: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Brush the parchment with 2 tablespoons of the melted butter.
- Using a 2-inch round cutter, make the center of each bagel half larger. Save the cutout pieces. Brush the cut side of the bagels and bagel cutouts with 2 tablespoons of the melted butter.
- Place the bagels cut-side down on the prepared baking sheet. Line up the cutout pieces down the center of the baking sheet cut-side down as well. Using the palm of your hand, press the bagels into the baking sheet. This will help make sure they are touching the baking sheet so the eggs won't seep out before they're cooked.
- Brush the tops of the bagels and cutouts with the remaining 2 tablespoons butter. Crack an egg into each bagel hole. Season the eggs with salt and pepper. Bake for 11 to 14 minutes, depending on how you like your eggs; 11 minutes will give you a runny yolk, while 14 minutes will give you a fully cooked yolk.
- For the hollandaise: In a small saucepan, melt the butter until sizzling.
- Put the egg yolks in a blender and turn on a low speed to allow them to combine. While the machine is running, slowly begin pouring the hot butter into the blender in a thin, steady stream. Once all the butter is in, immediately begin adding the lemon juice.
- Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir and then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning if necessary. Transfer to a serving pitcher and cover with foil until serving.
- For the garnish: Transfer the bagels and cutouts to a serving platter. Arrange the salmon around the bagels and garnish with the red onions, chives and capers. Serve with the warm hollandaise on the side.
AVOCADO AND EGG BREAKFAST SANDWICH
A variation on avocado toast, this is a quick, easy, and wholesome start to your day! I like to use bagels for this sandwich, but any bread will work!

- Toast sliced bagel in a toaster until golden brown.
- While the bagel is toasting, heat oil in a frying pan over medium heat and add egg. Pan-fry until set, 3 to 4 minutes.
- Mash avocado (a fork will do the job nicely!) in a medium bowl; sprinkle with salt and black pepper.
- Spread 1 tablespoon cream cheese on each toasted bagel half. Top with mashed avocado and egg, and add more salt and pepper if desired.

- Heat a non-stick frying pan, very lightly brush the cut surface of the tomatoes with a little oil, then cook them, cut-side down, in the pan until they have softened and slightly caramelised. Meanwhile, heat a pan of water, carefully break in the eggs and leave to poach for 1-2 mins until the whites are firm but the yolks are still runny.
- Halve and stone the avocado, then scoop out the flesh and smash onto the bread. Add the eggs, grind over black pepper and add a handful of rocket to each portion. Serve the tomatoes on the side.

AVOCADO EGG-IN-A-HOLE

- Cut the avocado in half and remove the pit. Place the halves face up on a muffin tin so they won't tip over.
- Pour the beaten egg into each hole (one egg fills two halves). Sprinkle with grated cheese, garlic powder, salt, and pepper.

- Slice bagel in half. If the hole is very small, tear out some of the center to make it larger or use a round cookie cutter, small juice glass, or biscuit cutter to cut a larger hole. Lightly spread the cut sides of the bagel with butter. In a small bowl, mash the avocado with the salt, black pepper, and red pepper flakes (if using). Taste and add additional seasoning if desired.
- For each bagel half: Heat a non-stick skillet over medium. Place the bagel in the skillet butter-side down. Let toast a few minutes until golden, then flip and place on a plate, toasted side up. Spread the cut side with mashed avocado. Return the bagel to the skillet, avocado-side up. Crack an egg in the center of the hole (for easier transfer, you can also crack the egg in a small bowl, then gently pour it into the hole), then cover the skillet and let cook until the egg is set, about 3 minutes for a medium-soft yolks (if your skillet does not have a lid, you can also place a sheet pan over the top—the idea is to trap heat to cook the egg more quickly). Transfer to a serving plate, sprinkle with any desired toppings. Enjoy immediately.
