BAHAMAS ISLAND COOKIE BARS
These bars bring back memories; for one of my grandkid honeymoon and her's 2 secone love, in the Bahamas. Naturally, I too love every bite as will! This was a HUGE crowd-pleaser. Jam-packed with peanut-y flavor, they were a unanimous hit with everyone on the house. We had success making these with regular pastry flour in place of the whole wheat pastry which can be a little harder to find.

Steps:
- In a medium-sized bowl, whisk together flour, baking soda and salt. Set aside.
- In a large mixing bowl, cream together sugars, peanut butter, pineapple, buttery spread and vanilla. Beat in the egg. Gradually stir in the flour mixture until completely combined. Fold in 1 Cup of the white chocolate chips, saving remaining 1/4 Cup.
- With dampened hands, press the dough into a greased 9 x 13" baking pan. Sprinkle with remaining white chocolate chips and press them down lightly.
- Bake bars in a 350*F. oven for 22-25 minutes, until a wooden skewer inserted in the middle comes out clean.
- Put baking rack on the middle level. Turn oven to broil. Sprinkle coconut on top of the bars. Broil for 30-60 seconds, until coconut begins to brown. Be careful not to burn coconut!
- Allow pan to cool completely on a wire rack. Cut into 32 bars.

TREASURE ISLAND COOKIES
A nice twist of a chocolate chip cookie with macadamia nuts and shredded coconut. Found in a Toll House cookie booklet published in 1990 (one I've been using for years and finally adding to this site.)

Steps:
- Preheat oven to 375°F.
- In a small bowl, whisk together flour, baking powder, baking soda and salt; set aside.
- In a large mixing bowl, beat butter, brown sugar, sugar, and vanilla until creamy; then beat in egg.
- Gradually beat in flour mixture.
- By hand, stir in chocolate chunk morsels, coconut and macadamia nuts.
- Drop by tablespoonfuls onto ungreased cooking sheets.
- Bake 10-12 minutes until edges are just lightly browned.
- Let stand for 2 minutes before removing cookies to wire rack to cool completely.

ALOHA PARADISE BARS
Prize-Winning Recipe 2006! Layer tropical pineapple, coconut and macadamia nuts to create a delightfully easy bar.

Steps:
- Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan.
- Bake 15 minutes. Sprinkle with baking chips, pineapple, coconut and nuts. Drizzle evenly with sweetened condensed milk.
- Bake 30 to 35 minutes longer or until light golden brown. Cool completely. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

SCANDINAVIAN ALMOND BARS
These cookies are my family's favorite cookie. They are simple to make, unique and pretty. A wonderful recipe to make for a cookie exchange. Take your recipe along, everyone will want a copy!

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, cream butter and sugar. Add egg and almond extract; mix until fluffy. Stir in flour, baking powder and salt; mix well.
- Divide dough into 4 pieces, and roll each one into a log about 12 inches long. Place 2 logs per cookie sheet 4 to 5 inches apart. Flatten each roll by hand until it is about 3 inches wide. Brush flattened roll with milk and sprinkle with sliced almonds.
- Bake in preheated oven 12 to 15 minutes or until edges are slightly browned. While the cookies are still warm, cut them crosswise at a diagonal, into slices about 1 inch wide. When cool, drizzle with almond icing.
- Almond icing: In a small bowl, stir together powdered sugar, almond extract, and milk until smooth. Drizzle over the cookies.
